What's Cooking...Before Vacation Week



Yuck-I have been a food waste pig the last few weeks. Cleaning out the refrigerator was a major chore and some stupid items wound up in the trash. Still, my efforts this week is to keep us out of the stores, though I'm sending DH for milk, eggs, bred, and bananas this morning. We have a 3 pound bag of boneless chicken and a pork loin in the freezer, so with what's in the fridge, a lot of cheese and condiments and a few odd vegetables, here are the meals I came up with. DD2 is gone tomorrow through Saturday, but DD1 is actually going to be here Wednesday night as she has a meeting on Thursday locally, but my guess is she will have plans in the evenings. Just in case, I'm throwing a few meatless meals in the mix. I have some Idaho spuds that need cooking and one sweet potato, so I'll save that for her. I also will get some fresh tomatoes, sweet corn and cucumbers, and if lucky, zucchini for additional vegetables, freezing any sweet corn or zucchini not eaten. Lunches will be portions of the previous nights dinner-no eating out this week for me. 

BBQ Chicken, steamed carrots, roasted potato's
Chicken fettuccine with shredded carrots
Egg and veggie fried rice, fresh 
Chicken strips or nuggets, fresh vegetables
Pork loin, sweet potato and regular potato wedges, corn on the cob (Saturday night when DD2 s back)
Grilled cheese and tomato and cucumber salad or on side
Leftovers

We've had many extra purchases, not just for the trip, but instigated by the trip, so a tight fisted money week is in order. We have a family dinner tonight at a supper club that has hug portions, so I'll order something that DD2 likes, so she will have my other half when she gets off work tonight-probably pork chops as they give two large ones per order, or maybe chicken and ribs. It might sound weird, but we often do this in my family as over eating takes away from the enjoyment of going out and if a nice meal can be made with the take home portion, why not? I'll be pleased not returning to a messy refrigerator and freezer, and give the budget a bit of a rest this week.

  1. We definitely save leftovers from meals out. Last night we did delivery (which, happens about once a year, as I had a coupon) & have enough at least for lunches today. I'm with you - I don't like overeating & wasting the experience of the meal out.

    1. I don't remember the last time we had delivery-not big in our house either. My meal was delicious, and a quick reheat in a frying pan, and DD2 had a pork chop, hash browns, and I even brought her hoe a dinner roll.

  3. I like to order BECAUSE of leftovers - one less meal I have to make :) Won't be having l/o's from eating out this week though - dh & I are trying a no spend week so all l/o's will be from our freezer.

    1. this place is a one time year treat for us, but good no nonsense Midwest cooking. The restaurant hasn't changed since I was a child.
