Cheater-For Today

We have a lunch time event in which I was to make a pot of soup. Not a big deal as I can make soup with my eyes closed-most days. This weekend really got away from me, and the hour I planned prepping soup, drizzled away. Last night, I decided to cheat. I ran very early over to the grocery store this morning and bought two packages of soup mix, a bag of frozen carrots, and two cans of chicken. Voila! Chicken and wild rice soup for 15-20 people. Of course everyone will be the wiser-homemade to a premixed soup from dry ingredients are hardly comparable. But, it will be tasty. It will be hot and I will have honored my commitment. For my efforts, I had a bonus gift as the soup mix and canned chicken were on sale. For $11.00, a have a massively full crockpot of soup. I even bought the little oyster crackers, bringing my lunch contribution up to a whopping $13.73. We all cheat like this, don't we?  Please comment and share your's so I feel vindicated. 

Wow! I just saw this is my 400th post. I think I maybe cheated getting to that number with this one.  I'm happy to have reached another milestone. Thanks for stopping by and give me a visit for post 401 if you're inclined. 
Good to know it is "made from scratch quality."

  1. Sometimes you have to cheat even if you can cook. Life happens. Don't fret over it.

    1. Despite the over the top sodium content, even made with three extra cups (for two pouches) of waters were quite happy for a nice lunch. In a pinch, I would do it again. Do you think you are at 1,000+?

  2. Happy 400th, you don't look a day over 199.
    I think that is really a good price for that much food. Too bad more people didn't take turns and bring lunch in for everyone. It would be a frugal and easy way to save money if enough people were on-board.

    1. It went really far. There was a second crock, about 1/3 less of chicken tortilla soup that was just about gone. I had enough for DH and DD's dinner tonight, so double duty. It does get me thinking there should be more potlucks in the world, or have groups of two take on lunch periodica for a whole department-save the work. I think we ended up serving 15. I have almost all the crackers left-very few were eaten. There were also some cookies, and tangerines and grapes supplied by a third person, but even so, I bet we ate for less than $3 a person.

  3. I think anything that has been cooked for me tastes good, whether it is a cheat or not. Tbh, John has to cheat with a lot of things if he cooks, but I appreciate and enjoy it anyway. I'm sure that those who ate your soup felt the same way.
    PS - Health is up and down. I now need to have an MRI scan :(

    1. Thinking good thoughts your way! I am like that as well-what a nice treat to have someone share food they made. A late arriver who missed lunch was pretty happy to grab a bowl.

    1. This was time, energy, and what I could pull together without breaking the bank. DD just declared the leftovers delicious as well, so happy campers all around.

    1. Throw a salad together for the side, and it might be a bit healthier! I am glad to have gone the simple route.

  6. Of course we all have cheat meals. It is the only way to survive. My go-to cheat meal is chicken and dumplings. I always have a package of 1/12-2 cups of cooked chicken in the freezer, so I grab one of those, a cardboard carton of chicken broth and 4 or 5 large flour tortillas. Thaw the chicken in the microwave. Put it in a pot and pour the chicken broth over it, adding an additional cup of water. While waiting for the liquid to boil cut the tortillas into large squarish pieces. Drop one at a time into the liquid, stirring after each addition. Cook about 4 minutes after the last bit is added. Serve piping hot in a bowl with a side salad or dish of slaw

    1. I never would have thought to use tortillas as dumplings-genius! Ooh, throw a bag of mixed veg in and you wouldn't even need the salad. I will try this.
