While not really Minnesota, it is the first green veg we get each spring and with all the salt, fat, and sodium, something a little green will taste pretty good. The only thing I really hate is tripe. I can remember my grandad buying tripe from the tripe shop in newspaper like fish and chips ugh horrid. I'm sure your Minnesota dinner will be fab though.
