Meal Recap and Sort of Planning the Month

     



     We enjoyed the Marching Band event very much. It was only 30 minutes and included a few demonstrations of their process and then a 5 1/2 minute show as if they were performing their competition or half time show. It was all very safe-people spread far and wide and all masked. We went home afterwards, even though it turned into a perfect night. I thought downtown would be too many people and judging from the number of cars at our local just up the road from us, I think we were right.  On the thinking about meals.

      I will say it is much easier to plan meals with just the two of us. DH, while he has things he likes more than others, and I generally do not make things he doesn't like, he is happy to just have a meal ready for him without any thought. With my daughter home, there was a fair amount of, "I'm not feeling that," or"I don't know, just not that" when asking for suggestions. With a bulging freezer, refrigerator, and pantry and a non-picky spouse, I have no excuses to not produce relatively  fine meals out of my kitchen and not resort to take out. So with coffee cup in hand and more of the strawberry banana quick bread in the oven, I gave the week some thought. 

Here was what we ate last week:

  • Sunday: Burgers and salad for lunch, leftover sloppy Joe's and pork loin sandwich for a late supper
  • Monday: Aldi supreme Take and Bake pizza, (Leftover eaten on Thursday lunch when DH and I were both home)
  • Tuesday: Aldi red bag chicken on brioche buns, with green beans and au gratin potatoes
  • Wednesday: Meatballs in mushroom gravy over rice, and corn
  • Thursday: Corn chowder soup and chicken salad sandwiches on brioche buns
  • Friday: Gyro Sandwiches, with onion, tomato, and cucumbers, air fryer homemade fries
  • Saturday: Leftover Gyro (there is still a bit more), Meatballs and rice, and soup

     I did very little cooking last week-and some weeks will be like that.I tried to add more salad and extra portions of vegetables to make up for convenience like the pizza, red bag chicken, pre-made meatballs and Gyros. Did I cook at all? I don't do well following a tight meal planning schedule, but here's a list of potential actors for the week ahead. There's a lot of pasta ideas, but likely we would not have more than one to two times. Even with me eating leftovers for lunch, the goal would be to have a leftover night as well. I added five huge red bell peppers and some little red potatoes from the farmers market to incorporate into the week as well.

  • Pork Roast, bought pre-seasoned for Carnitas ( and likely will freeze 1/2 as it is quite large), with tortillas, rice, black beans, and tomatoes
  • Homemade chicken tenders and air fryer fries with steamed vegetables
  • Crispy chicken and country gravy over biscuits with steamed carrots and roasted red potatoes
  • Crock pot pasta with zucchini and mushrooms
  • Chicken Alfredo over some kind of pasta (we have spaghetti, penne, farfalle, and rotini)
  • Goulash with mixed vegetables (Oh, and a 2 # box of elbow macaroni)
  • Chicken, rice,broccoli and cheese hotdish, with drop biscuits
  • Fried rice with pork or chicken, mixed veg and egg and egg rolls
  • Apple Cheddar sausage meatballs, scalloped potatoes and steamed carrots
  • Lasagna and garden salad
  • Chicken Cordon Bleu over wild rice with broccoli
  • Burritos or bowls with beef, refried beans, rice cheese, corn,and tomatoes
  • Chili and corn bread
  • Brats and buns with pork and beans and potato wedges
  • Stuffed peppers with rice, veg, and cheese
  • Turkey meatloaf, cheesy mashed potatoes and green beans
  • Sweet and sour meatballs, rice pilaf and mixed vegetable
  • Pork loin with apple sauce, brown gravy and rice and some sort of vegetable
     This gets us well  through the week, month actually with leftover nights. I'll start a new possible list with what I didn't make, next Sunday, likely switching up mains and sides. I plan to get a few freezer meals for myself out of this bunch as well as back up for when there are not leftovers, or I'm saving them for a  reheat and eat supper. I'll need to cook vegetables as they need to be used, so likely things with zucchini, tomatoes and mushrooms will be earlier in the week, though I can freeze roasted veg for later, particularly if they will go in a past, hotdish, or soup. Would this meal plan of sorts work in your house? What are you eating more or less of right now based on what is available?

  1. I like planning around what's available (both seasonally, and in our fridge/pantry/freezer). For the week after next, I have a free meal delivery box coming. I'm interested to check it out to see if I get any ideas. I won't continue (too $$$), but curious to check it out. I've never done one before.

      ll be interested in your take. I've only seen YouTube view of them, and they seem to be sponsored so not sure if they are as great as they rave. They are pricey per serving.

  2. We have a lot of beef on hand: Ground beef, New York strips, and sirloin steaks. The ground been is going to be figuring prominently in meals the next several week. We also have a lot of pre-breaded chicken breasts--they are similar to the Panko breaded chicken breasts at Costco, but the ones we have don't have soy. They are easy to pop in the oven with sweet potato wedges (thank you), and a salad, and everybody tends to enjoy them as long as they don't show up too often. We also have lots of boneless, skinless breasts in the freezer. Again, always good for a pinch, but none of us really cares to see chicken served too often. However, I have several jars of home canned applesauce which makes any meal a treat for DH. Finally, I have to plant more Romaine lettuce now that the weather has cooled, so we will have that on hand later in the season.

    1. I bet it is nice to plant more than one time a season and getting more romaine would be a nice meal addition. I find I need to rotate meats as well. I think tonight will be brats *really Italian sausages), since we haven't had in a while and I can use one as part of stuffed peppers for later in the week.

  3. I'm glad to hear you all enjoyed the marching band event. It's great that people were wearing masks and sitting apart.

    It's great that your dh is not picky. It's so easy to cook for someone like that. If I ask my daughter she usually doesn't know, so I make whatever I think needs using up and she always eats it.

    I've been feeling under the weather this weekend, so she has stepped up to the plate to cook. She made me veggie burgers today, which were delicious. Last night she made chicken sandwiches, mac and cheese, and mixed vegetables. It was all delicious and I made sure to tell her so.

    Your menu sounds delicious and sounds just like dinners we would have here. It's always a good feeling to use up the things we have stored too. :)

    1. I couldn't believe when I looked at my list how many options I listed and not including leftover nights. I am grateful for the bounty we have access to. I roasted a big batch of veggies yesterday so am excited to have the variety ready to go for sides.

  4. I'm so glad you enjoyed your time out last night. Everything sounds great! A plan like that would work for me, but I'm really into planning ours out in detail. It's just something I really enjoy doing and researching since I love finding new ideas and new ways to make things. Have a Happy Sunday :)

    1. If I planned in detail, it would be time wasted-already this weekend was so different than I might have actually planned. I have variety and I think that is key to not getting bored with home cooking.

  5. OK that does it. I constantly read about Aldi/I have never been there. I will go have a look-see at one this month I hope we have one.

    1. I love Aldi but if you're used to a 'fancy' store like Publix, you probably won't care for it. I love your meals, Sam- I made a zuchinni/corn bake yesterday and peeled and sliced a dozen apples. I just hate prepping apples ugh. Anyhow I soaked in lemon water and froze for some day I have company for apple pie. I'm actually doing my monthly grocer shop to Aldi tomorrow- I might buy that red bag everyone says is so good. I made homemade chic fila sandwiches last week from chicken breast and homemade panko- delicious. One breast made 4 sandwiches! I love Aldi dairy- the half and half and cream lasts a good 3 weeks and the cheese is very tasty.

    2. The red bag really are not anymore special than any other, but they sell out fast. Value wise, probably a lot more than our home made, but I get tow meals out of a bag, and for $5.99 and no work, I call it a win!Ur-spo, my favorite things other than the fact that their store shelf staples are 30-40% less (and often more)are the Take and Bake pizza, the hummus, the Gyro Kit, the veggie burgers, and Tika masala sauce. Other people have their favorites. We are not picky eaters or brand loyal for the most part. I've found very few misses, but again, we're not picky consumers. When I literally will spend 1/3 less for the equivalent grocery haul, t is hard not to do at least one big shop there a month. I also like the size-not too big because there is linted selection, but then I don't waste time comparing and get in and out quickly.

    3. I love Aldi__now! But it took me a while to make the change from Publix as my primary store to Aldi. The whole concept is different, plus in the beginning I was unfamiliar with their products. Like Sam, I can breeze through the store and find just about everything I need for the week in a 15 minute store visit

    4. Probably spend the most time looking for nay new products in the freezer section, but I love that it has simplified my shopping and for the most part, the quality of our meals has stayed the same.

  6. Your meals sound really good Sam. Now that Son3 and DIL3 are gone back home I am cooking less and less, because we just aren't eating as much, or as much variety.

    1. I know what you mean. Even though my youngest didn't eat much, we still had three more meals a day added to the shop. She was a huge fruit eater-so hoping she is still getting lots of fresh fruit at school every day. She ate at least a banana and an apple every day, plus other fruit like clementines, or grapes if I had them on hand.
