Normally, at least as I started this summer, Wednesday's has been a sort of recipe day-either things from my daughters vegan pantry, or to broaden to include things I make regularly or periodically and think others might enjoy. Today is a little twist and I've decided to share what we'll be eating on our vacation week. Since we are not doing indoor dining, and we are not sure what outdoor options might be, most meals will be prepped and eaten at the cabin. Still, thi sis vacation and we've all seen the camping, cabin rentals, Air BNB, where it becomes a vacation for all, but and I'll admit to stereotyping, but mom/wife/more domestic partner (aimed at you G and you E!) still is tied to the kitchen That was not going to be the case. We just stopped at an Aldi on route to the lake and I went in alone with a few suggestions from DH of what he might want while he stayed with the dog.
Basically we will be grilling- country style ribs, hamburgers, and chicken, eating breakfast and lunch wraps, and pairing them with both premade coleslaw and potato salad, a ready to mix green salad, fruit, and veggies. I threw in the Trader Joe's hummus, salt free salsa, olive tapenade, palak paneer, and nanna, and added to "happy hour" options with cheese, crackers, and guacamole. We also picked up a massive take and bake pizza from the gas station/C store/deli that is just down the road, which essentially was both Monday and Tuesday supper. Today well grill up all the chicken and gt several meals from it, paired wit th elast of the coleslaw and potato salad, and also served in wraps, and then thirdly, topping the premade salad.
Meals so far have been slow and lingering, cocktail in hand while grilling or getting sides. Granted with only two of us, the clean-up shouldn't be much anyway, but we've been able to put food away, wash, dry dishes, sweep the floor in less time than it would take to drive to a restaurant. I'm using a little success with the Hot Spot from my phone-but it could go any moment. I'll end there and with another picture to show how I'm spending my days. There's not much else to talk about-the kind of vacation I needed.
Sounds perfect to me. And I'm glad to hear there'll be a cocktail or two involved! I'm sure you'll both have a lovely relaxing time at the lake!
