This dinner was over a week ago, but I thought I'd share anyway. There's a restaurant near my daughter's school that makes something called a hippie bowl. It has a rice and root vegetable base, then choices vary depending on the additions. The last time we were there, I had an Asian inspired bowl with cabbage, kimchee, sprouts; hers was Tex-Mex with corn, black bean, cheese, and sour cream. Both had avocado puree. It was a great idea- simple, healthier than so many choices and while they had three options, plus the option of adding meat, endless possibilities. I think the term Buddha Bowl is the same concept.
In using up stuff, plus no one suggesting something for all our tastes, I went ahead and prepped, cooked, or reheated an assortment of things. The result was fixings for hippie bowls of our own. Here's what was available for us to eat however we chose:
- Cheese rice blend
- Cous cous
- Sweet Potato
- Asian Salad Kit
- Shredded Turkey
DH sensibly and without creativity ate his as separate meal components. He ate his turkey in a deli roll, rice, sweet potato, and salad in the side. My daughter and I created our versions of the hippy bowls. Her's was doused with hot sauce, the revisited condiment I had forgotten about.
I made one of the deli rolls into garlic toast and we each had one side of the roll. It was odd, but surprisingly tasty. I used up a few more refrigerator lurkers, salad kit, cous cous, turkey, marinated stuff, and a long ago purchased sweet potato. It was the kind of meal that was abundant, but came from " there's nothing to eat" odds and ends. I'm never opposed to the odd and assorted meal components, but thanks to creative marketing, this meal can have a name. I'm so new age!
I'm still not feeling well, and took one of the saliva tests yesterday and am waiting results via email. I had one in hand ordered before Christmas. This is the kind you do while in a video call, then pack as biohazard to ship back to the lab. I'm quarantining from DH until I know for sure. At this point, I think we'll all get it, but I want to know for sure. I've got the rapid tests coming next week. Stay safe and healthy.
Your hippie bowl sounds good to me! I was just looking up some recipes to use tempeh that the pickup folks subbed for tofu, and I may try a sesame ginger bowl recipe. Tempeh is new to me so will see if we like it.

I picked up a rapid test kit at the library for my son, and thankfully his was negative and he felt better the next day. Guessing it was allergies, but better to test just in case.
My daughter uses tempeh for tacos/ taco and burrito bowls. It's nice- I prefer to blocks of tofu.
DeleteHope you are feeling better! I make a lot of "salad bowls" in the summer, which is basically a base of salad, topped with any protein topping I have. Sometimes with rice added (if available). I love it.

DeleteWe like to do a copycat KFC chicken bowl, with popcorn chicken, mashed potatoes, gravy, corn and cheese. Yesterday I made the half pork loin in the crockpot and the kids decided to make bowls with that. Hubby made bbq pork nachos with his. I didn’t get creative lol and just had a “normal” plate. Thank you for getting tested. My eyes have been opened to the absolute Covidiots that I work with. I took my lunch break in my car yesterday bc my store manager is so sick, has had at least six people around her test positive but she doesn’t think it’s Covid because she doesn’t have a fever. She has every other symptom in the book though. Even worse, our DM told her she could still come in and told her to just stay in the office and she hasn’t even done that. Yes, I’ve already had it, but I’d be the unlucky fool to get it again. I don’t know what’s more appalling-the lack of self awareness, having no concern for others or thinking that you are so important that you need to come to work like that. I literally have three other just as ridiculous stories I could tell you. To think I felt bad that my sons test came back negative and I thought it was safe to go to work when he was in fact positive. I’m sure they all sh¡t talked me when I decided to quarantine without symptoms but it was the right thing to do. Rant over. I hope you feel better soon! JoAnn
ReplyDeleteWe have no KCF's near us, but once on a show choir weekend, DH and I got away form the school for one of the meals and found a KCF and I had the bowl. It is really tasty, and could be a copy cat. You've given me ideas for the next leftover chicken meal. People make me wonder how humans have not cancelled oourselves-maybe we will still.
DeleteI like the idea of hippie bowls. I make hashes here every so often with the same purpose of cleaning up bits and pieces from the fridge.

Oh-you're singing my tune. I love a good has with eggs, but it has been years-probably since my dad was alive, since I've had it. No news on the test yet.

I think the rice and root vegetable base it what makes it "hippie" but I just love the name. My daughter and I were eyeing up new big bowl/pasta bowls at Target. I don't need more stuff, but these would be better in something other than a cereal bowl, but that's what I had.
DeleteWe don't call these meals anything. We are surprised when we find enough to eat that are leftovers. Today is the last of many items i cooked, so today I must make a new meal. I have not cooked since last Thursday, I think. Tommy asked for the "chicken and rice and soup" meal. So, that is what I will make. This will probably last three days. He insists on eating every day!

DeleteOn the show the “kitchen” they did pulled pork nachos last summer and I recreated it with pulled pork plenty of veggies, cheddar and squirts of barbecue sauce over the top. It was a huge favorite.
ReplyDeleteI have a large pork loin and I think I am going to cut it and do half for tacos, burritos, and nachos-carnitas. I love basic food updated into something with just a bit more creativity. Keeps my bordeom at bay.
DeleteHope you feel better quickly - I just got back from having a PCR test (tested negative on my at home test on Monday). My husband tested positive on Friday, my symptoms started late Saturday. We have worn masks everywhere, but my husband went to the gym last week and only took his off to shower. Who knows?
ReplyDeleteMy husband easily could be the transfer mechanism since he is at work. I hadn't been anywhere but quick stops in stores since New Years' eve, so a little late to be the source. I'm hoping negative, but I'll deal if it isn't.
