Saturday I changed up my recipe a touch from when I last made a sort of oatmeal Blondie, flapjack, granola bar thing. No oil, but peanut butter, more goodies, and I baked in a larger pan so they'd be thinner, and more portable. I wanted something to travel with for those hungry lull times and avoid expensive airport kiosks. These were a hit with the girls.
- 2 flax eggs ( 2 TBLS ground flax seed-6 TBLS water set aside until slimy)
- 3 mashed bananas
- 1/2 cup brown sugar
- 1/2 cup peanut butter
Blend all until creamy then add dry ingredients
- 1 1/4 cup flour
- 1tsp salt
- 1 tsp baking soda
- 1 cup quick oats
Blend all, then add goodies to taste
- 1/2 C vegan chocolate chips
- 1/2 C plus more craisins
- 1/2 C plus more pecans
Baked at 350 for 28 min in 9 by 13 pan.
I cut into 24, and 12 fit perfectly in a plastic deli meat tub that I keep and don't worry about forgetting. This was an afterthought post after realizing I did the annoying act of posting a food item on Instagram but no recipe or link. Remedied.
