Menus and Musings-April Showers...

     


     They say April showers will bring those lovely May flowers. I'll settle for rainy days if I can get some sun at least every couple days, and would really appreciate if the snow stays away. As we really didn't get a mountain in March, historically the snowiest month, I fear April hasn't let go of winter. I have no control over that but do have say in what I make for meals. Oh did we eat this past week, plenty! I did some cooking, but also made use of leftovers and bits in the refrigerator to try and keep food waste at bay. 

  • Sunday: Carnitas flavored pork roast, Seasoned rice, black bean and corn salsa/salad
  • Monday: Bean soup , calzone style (stuffed) sandwich
  • Tuesday:  Tuna Hotdish Hamburger and mushroom (needing using up) gravy over mashed potatoes, green beans 
  • Wednesday: Sloppy Joes, homemade French fries
  • Thursday: Greek chicken, cucumber and olive salad ( since I still haven't made it)Tuna Hotdish 
  • Friday: Butternut squash and mushroom ravioli, I made DH a hamburger, I was peckish late afternoon so had cheese and pepperoni on crackers. I heated up a bit of the leftover hotdish for us both, but there's still more.
  • Saturday: Basketball watching food- Carnitas( I had froze the carnitas and didn't want to thaw the whole bag) nachos, boneless wings, loaded baked potato skins, veggies and dip, vegetable pasta salsa Chicken quesadilla- found cooked chicken in freezer, DH had a big lunch so this was plenty and he was satisfied while he watched the exciting North Carolina- Duke game
     I've got another busy week ahead. My new boss is on vacation so that means my old boss will need to have me and another supervisor fill in at a few meetings, which takes time away to actually work on projects. Perhaps one night we'll go out for dinner. I'd like to treat my daughter, but  not sure what she can eat. The dentist screwed up her dental process again, causing yet more pain and another delay. I'm so mad and sad on her behalf. She's tougher and braver than I would be in the same situation. 

     I tried to build my meal on what either we already have or the few value finds from my top off shop. I'll do a main shop before Easter weekend, but until, just replacing needed groceries. No great deals  on hams yet, but I reserved some of March's budget to put towards it.  Even if I buy at what's currently the price I've seen, I'll stay on budget. I'll buy before end of next weekend though for sure.
  • Sunday:  I'll make an egg bake for brunch with discount blueberry muffins. DH was thrilled to see the massive muffins. I've got stuff still from last night and leftovers for make your own supper. We might go to a movie later afternoon.
  • Monday:  Spaghetti Bolognese, garlic bread
  • Tuesday:  Chicken stir fry, rice egg rolls
  • Wednesday:  Homemade pizza with remainder of Bolognese
  • Thursday: Greek chicken, tomato, artichoke,and olive pasta salad
  • Friday: Roast potatoes, veggie tray bake with meatballs
  • Saturday: Hippy bowls, sweet potatoes, wild rice, broccoli with chicken if wanted
I nabbed two right away for lunch
before freezing the rest.

      You'll see stir fry mostly so I have a plan to incorporate these delicious egg rolls and make sure I don't devour in a single sitting. We have a couple women in town that make and sell egg rolls on occasion and sell at the farmer's market. I bought 12 for $20 yesterday from one who it turns out lives just down the road from me. Of course, I made two my lunch yesterday and they're delicious. These are made with care, with market fresh ingredients and homemade dipping sauce. I froze the other 10 in packs of two. Once again, the Greek chicken is on the menu. I have open artichokes and olives so need to use up for pizza and a pasta salad I thought would go well with the Greek chicken. 3rd, 4th times the charm? What's your plan for the week?
$20 for 12- they are delicious.

  1. I love making egg rolls. They freeze so well. I pulled some out of the freezer one day last week for a dinner.

    1. I haven't mastered egg rolls in a bowl yet so I can't imagine how ill formed my egg rolls would be, but I'd like to give it a try.

  2. I would absolutely be buying those egg rolls - they look fabulous! We received a second (accidental) Hello Fresh box, with the same recipes as last week, so I'm working to integrate them into our meal plan. I'm also heading back to work next week, so I need to adjust my menu plan accordingly, for later days & no mid-day prep (typically how I like to cook).

    1. I hope you didn't have to pa for the extra box if their error. Nothing wrong with a repeat if a good recipe. What a change you will have again. Hopefully less travel though since your work has made do without that for so long.

  3. Chicken fried rice is on the menu for tonight. I've eggs to use up soon so sometime this week we'll have breakfast for dinner. It's supposed to be really nice Monday and Tuesday so one night I'll grill pork chops and asparagus, with roasted potatoes on the side. Beyond that there is leftover taco meat to be used up too.

    1. I'll make an extra 1/2 cup of rice than we might need for the stir fry as I can cook up some stir fired rice for lunches this week-thanks for the idea.

  4. We used to have a Thai lady who took orders and then delivered to our work at lunchtime and the smell and taste was just wonderful. That was before covid and all the food trucks springing up. I sure hope she's still going strong!

    1. The food trucks have sure been a trend-or maybe not just a trend. I've seen a few cottage businesses like the egg roll sales pop up during Covid. A colleague started a Jewish home bakery by chance. She was baking a ton and giving it away, then people started requesting she bake for them, paid of course, and low and behold, a side business was born.

  5. I am still trying to eat down the freezer. To that end, I had 3 boneless chicken breasts thawed on Thursday. I was going to make a risotto, as that's the only way I could get that much too feed everybody. Thursday saw only DH and me at dinnertime, as kids were doing other things. Not wanting to stand in front of the stove, I baked a chicken with rice casserole--a modified Campbell's recipe. As I was cleaning up, youngest walked in the door, ate the last serving, and declared it the best chicken he had ever had. (I think he was just hungry from track practice.) On Friday I discovered some Wagyu New York strips. Having neither a volunteer to do the grilling, nor propane for the grill, I defrosted them slightly in the package in warm water, sliced, and put in the slow cooker with soy sauce, brown sugar dissolved in water, and ginger. I added a package of frozen broccoli about 30 minutes before serving. It was a hit, but if I had known 4 hungry teens/young adults would have walked in the door, followed by a 9 year-old neighbor whose mother was late coming from an appointment, as I was setting the table for the three people who were in the house at the time, I would have added a lot more broccoli. Be that as it may, I have had requests to make that again. Yesterday, I spent the afternoon with my neighbor, who insisted on buying me a late lunch, to come home to a house with only DH in it, the rest of the kids scattered--some painting their rooms in the new house, one was at the neighbor's house I had come from, and Would-Be-College-Boy heading out to a bonfire. Given the dinnertime events of the previous night, I simply threw up my hands, reheated last week's chicken pot pie for DH, and parked myself in front of the t.v with a glass of wine. When the painters came back, DH handed them him his credit card and they went out for a Mexican meal. Tonight, I am making a rib roast I had lurking in the freezer, with all the fixings. (Roast carrots, mashed potatoes, gravy.) I think Monday we will have baked tilapia, Tuesday will utilize tonight's leftovers. I have no ideas beyond that. It's spring break, so things are even more lax and unstructured than usual. For treats, I plan on making homemade peanut butter eggs at some point this week. I also had a request for Rollo turtles. I don't think anyone will starve, but I do want to see the freezer and pantry stores dwindle a bit more.

    1. I' sure you don't want to pack a freezer if you do not need to. How long at this house? IT's hard to plan for the unexpected extras but adding more veggies to stretch would be a good idea, but I'm sure you found stuff to feed all those people.

  6. I have almost 9 lbs. of chicken thawed to cook, eat/and freeze. I am still not well enough to cook all these butternut and spaghetti squashes. There are still tomatoes and cooked squash. Yellow squash will be cooked, too. So, all that will happen somehow. I hope. The squash will spoil if I don't use them.

    1. Couldn't you pierce and through the squash in at the same time as the chicken? Perhaps you don't have energy for that much. I'm sorry.

  7. Those egg rolls look fabulous! I would love to be able to make eggs rolls or stir frys at home, but Asian food is something that for the life of me never turns out when I try to cook at home. Now, Mexican or Italian food is a different story. This past week meals were fly by the seat of your pants types as we were on Spring Break and wasn't sure of what we would be doing each day. I need to sit down and make a plan for this week since we are back to work and school and there is a lot of afterschool activities and appointments this week. Maybe I should go do that now and get off the computer ;) Have a great week!

    1. Egg rolls-I haven't mastered, but I just buy sauces or mix sesame oil, ginger, and soy for my own sauce and while not authentic, is a nice change form my boring midwestern palate menu. I'm not saying my Asian inspired meals are great, but they are OK.

  9. Those egg rolls look delicious! We used to buy sausage rolls from a lady who was from the UK. They were so good. Your menu sounds delicious. I need to add bean soup to our menu soon as we really like it.

    1. Sausage rolls, Toad in a Hole, and pastys are UK dishes I'd like to learn to make. If ay of my friends are reading-send me your simple directions for any of these! I almost started a batch of pasta fagiole, but then I dropped something off at my daughters and saw how organized and prepped she was, I decided I need a top to bottom clean out of my freezer before I make more of anything that will need to be stored in the freezer.
