No pictures yet of the kitchen, and I ask you to keep expectations low. I'll do some pictures later, as we had a little snag with the appliances. We had to wait for the dishwasher installation until tomorrow. Because the water has to be shut off if the old dishwasher is detached, it's still in place. Plus, we have more work on the table and more purging. Still, I have a new refrigerator and best of all a fully working stove and oven! We're meeting DH's family for brunch at 11:00, but then I plan to keep on with the various projects. Of course the work remains busy so I'm planning easy food, but prepared using ingredients not cooked in the microwave (though I have a leftover night scheduled) and not a take out meal on the whole menu! DD1 is planning on coming later as she isn't doing brunch partially because she has been sick and just wants to be able to sleep and rest as she can and secondly, it is a buffet that is on the pricier side at a restaurant that will probably at most have fruit and oatmeal for vegan foods. I think we'll throw burgers on the grill and have salad-nice and simple. With that, here is the menu plan for the week.
Sunday-Spaghetti with veggie noodles, garden sauce
Monday-Fajitas with rice
Monday-Fajitas with rice
Tuesday- Fried Rice with egg, roasted chicken
Wednesday- leftovers ( I have book club, DD2 has later vocal jazz, and DH always seems to be late)
Thursday-Pork loin, mashed potatoes and vegetables
Friday-Home baked pizza and salad (might be homemade but might just be take and bake)
Saturday-Grilled chicken and vegetable kabobs and rice pilaf
Of course the whim might strike us for something else, but these are all things I can make quickly, or prep the day before for easy cooking. I'm trying to make extras, particular rice and vegetables so I have better and healthier lunches. The diet is not doing that well, mostly because of too much restaurant and take out, but I am happy to be taking control back after a couple weeks of chaos.
I finally feel that I'm on a roll with my eating, but I'm about to have a bunch of trips & that's where things fall apart. I've almost mastered doing well on my standard routine, but need to be better during vacations. I'll let you know when I get that right. ;-)

I actually find I do better on vacations because I am either on the move seeing things or in a state of relaxation I don't do stupid snacking. My office desk is my downfall.

Your MD meal sounds delicious. We ended up not even really having supper-just some pop corn and fruit later.

ReplyDeleteI think the inside kitchen jobs by other people are done-now I just need to complete the purge and put things back. I am still not done with the table-needs at least 2 more oats of something.

ReplyDeleteWe are going to be in town for a while, except lake trips and I still cook at the lake, so I am going to try and come up with a multi week game plan for our meals. Son3 is doing a small tour with his band and they will be staying here for a few days so I need to get the freezer items used so I can cook in advance and freeze more stuff. When I read that it sounds oxymoronic even though it makes sense in my slightly skewed assessment of having 9 additional mouths to feed.
It was so nice putting a loaf of take and bake bread in the oven last night! Simple pleasures. I understand about emptying the freezer to fill again. I'll soon start making batches of sloppy joe's to freeze, so need to not buy any more than we will eat the next few weeks so I'm not putting more in the freezer.
Deleteeating out is murder on the diet, yes.

ReplyDeleteI have to get used to it. The burners are opposite my old stove and the temperature gauges and stuff work differently, but yes it is so nice to be back.
