What's Cooking? Daughter's In Charge Edition

Another busy week ahead as the count down to the graduation ceremony, all night party, and final  prep for our kid's party begins. Meals still need to be simple, but with DD2 off form school, she can be put in charge of several things to make our evenings much smoother. DD1 offered to make dinner for us Sunday night, and since we have both a luncheon for graduates at church, and a grad party immediately following each other, appetites should be light, leaving some leftovers. DD2 is planning a trip to the big amusement park on Monday, so leftovers and a salad will be perfect, but here's a plan for the rest of the week.

  • Sunday-DD1 cooking
  • Monday-leftovers and a salad (I love the Aldi  Asian and  poppy seed salad kits)
  • Tuesday- DD2 in charge of chicken breasts in the crock pot, with  cream of mushroom soup, and sides of rice and steamed vegetables
  • Wednesday- Spaghetti and marinara with meatballs
  • Thursday-Salad and leftovers (m I have to decorate for the All Night party and DH and DD2 will be working on the yard)
  • Friday-Soup or salad and sandwiches before graduation ceremony
  • Saturday-Likely nothing to prepare as we have several grad parties
I'm trying to buy only the groceries we need so I am not cluttering space in either the pantry cupboards or fridge and freezer. I'll stop at Goodwill to drop off another donation load and then stop at Aldi on my way hone Monday, saving time and gas by not making another trip. I'll buy several of the salad kits for both dinner and lunches. I figure our grocery budget will be a tad lower in June since we have so many parties to go to, which will help our budget in hosting a party where others can hopefully enjoy a meal. It's quite circular, isn't it? What's on your plate? Are you gardeners itching to get your own produce on the table? I look forward to when the fresh stuff will appear at roadside stands and the farmers markets.

  1. An all-night party at your home? That should be interesting. Our market has been open for two months now. I am enjoying the squash. I get cucumbers for Tommy.

    1. Oh no-the All Night party is at the school, after the grad ceremony. Her open house is the following week. MM-we don't see squash for months.

  2. We've had one zucchini & a handful of strawberries. We're still trying to figure out how to keep the squirrels off of our plants!

    1. My daughter used zucchini in the pasta prima vera she made for us-it was so good. I can't wait until it is local.
