Menu-Spring Restart?

   


     It didn't take long before I changed menu items, but for good reason, not waiting a few items that needed using up. We still ate from home every day. It seems like eating out no more than 2X per month is both a good way for us to keep our budget in check, but also actually enjoy the eating out experience more. DH still tends to meet a friend an additional 3-4 time per month for lunch, plus nabs  something for lunch elsewhere, but I'm rarely tempted by lunches out anymore.  

  • Sunday: Chicken and broccoli stir fry with rice rice noodles, egg rolls
  • Monday: Tuna hotdish with mixed vegetables Spinach, zucchini, and elbow macaroni bake with cheese ( this was a DH hit- no real recipe)
  • Tuesday:  Pizza- may be frozen or Take and bake Creamy chicken and vegetables over rice
  • Wednesday: Chicken parcels ( kind of chicken pot pie filling tucked in puff pastry/ crescent roll dough) and JoJo potatoes leftovers
  • Thursday: Loaded quesadillas with southwestern saladFrozen pizza, home cut sweet potato fries
  • Friday: Patty Melts with sweet potato wedges, salad Fish for DH, SW salad kit, home made chips
  • Saturday: Greek Chicken, cucumber and olive salad Card night at sister's so had pizza, snacks as dinner
     This week brings us into the month I really start to think of as spring-yet, we will likely get snow a day. I'm also expecting to have a few days here and there of wet cold rain-more days that just call out for soup and comfort foods to me, so that is what I'm leaning towards. It's also getting to the end of the basketball season, so planning intentionally to have a game night in-with all the good bar foods on Saturday. 

  • Sunday: Carnitas flavored pork roast, Seasoned rice, black bean and corn salsa/salad
  • Monday: Bean soup (make today), calzone style (stuffed) sandwich
  • Tuesday:  Tuna Hotdish (since I did not make last week), peas and carrots
  • Wednesday: Sloppy Joes, homemade French fries
  • Thursday: Greek chicken, cucumber and olive salad ( since I still haven't made it)
  • Friday: Butternut squash and mushroom ravioli
  • Saturday: Basketball watching food- Carnitas nachos, boneless wings, loaded baked potato skins, veggies and dip, vegetable pasta salsa 
     I didn't buy tortellini last week and really would like chicken tortellini soup, but will settle for bean. I could make chicken wild rice, but admittedly, I usually cheat and buy a kit and doctor it up. I switched some things to use crescent rolls for a take on a calzone as I have four tubes with April dates. Maybe I'll do a veggie appetizer for Trivia or as part of bball watching, but it makes a lot so need people. Basically, already saying this menu is subject to change.

      The grocery etc  budget is looking good, but pup needs some wet food. His preferred seems to be the go to, so often can't find. I'm still watching for a good price on ham and soon I might just need to buy, but I'll check ads today.  Give me your favorite meal you had or are planning on the comments.

    My favorite meal this week was the Italian beef subs and au jus. I could eat my weight in that.

  2. We used to eat out a lot when we were both working and the kids were younger (tiredness I guess) but in the end I don't think anyone enjoyed it anymore. Now, as you say, it's a treat!

    1. We moved in stages eating out over the years. My son liked it, middle was neutral, youngest doesn't like to eat out often. I think the noise in restaurants is more noticeable to me now.

  3. Carnitas nachos are one of my favorites! I make the carnitas in the crockpot with a pork loin, and it's simple & easy. I also love the carnitas over salad. It's a great remind to make that again.

  4. I discovered this week that my son really doesn't like chicken. I've been cooking chicken once a week for the last few years. Neither of us cares for pork so I guess I'll be cooking a lot more beef. Chicken will still be on the menu because I like it but I guess less often. :)

    The only meal I have in mind for this week is sausage and mac&cheese. We're having another week of cool weather so winter food is on the menu.

    1. It's hard to have to make different meals. It's cool here too. My soup turned out well and will taste good tonight.

  5. I think everyone (well almost everyone) goes off their food plan, because life gets in the way of a plan a lot of the time.
    I make carnitas in the crock pot, shred it and freeze it in packages that are just big enough to feed the two of us for one night. Sometimes it is great to just pull something out that only needs thawing and a quick warm up.

    1. Meal plans are guide's/ suggestions so I at least try and use what we have fully. I'll get two meals more out of the pork.

  6. I wrote about a favorite from childhood and was going to make it soon. However, we have leftovers and thawed meat we need to eat. Besides, Tommy refuses to even try it, but he hates eggs. My mother would make "salmon and eggs" for dinner. It was eggs scrambled to almost done and a can of salmon stirred in. We ate it with home-fried potatoes and gravy. Often, we would have a soup bowl with beans to go with it. I won't scramble a dozen eggs or use a whole can of salmon. I won't fry potatoes and probably won't make gravy, but I will really enjoy the eggs and salmon. Tommy can have leftovers that he loves. Have you ever had scrambled eggs and salmon?

    1. I don't like salmon at all. I have made salmon for family but doubt I'd buy canned.

  7. Sounds like some delicious meals! I need to make some sort of meal plan this week.
