My Wednesday Pantry-Helen Soup

     


Do you ever assign recipes by people? Sunday I made a delicious potato cheese soup, recipe compliments of an old colleague named Helen. I first made this fall 1993, and my then preschoolers devoured it. It's been a staple  for nearly 30 years. It's easy to remember the recipe too, just remember 1&4, but of course, tweak as you prefer. The original recipe is:

  • 1 C diced carrots
  • 4 C diced potatoes
  • 4 C broth
  • 1 tsp ground pepper
  • 1 tsp salt 
  • 1 Cup shredded cheddar cheese

     Cook carrots, potatoes, salt, pepper in broth until soft. Remove 1/2 and either blend that portion, or use an immersion blender to the 1/2 left in pot. Combine purred with non- pureed, add cheese. Stir and serve when cheese is melted. Makes about 7 cups of soup.

    My tweaks:  I get lazy rustic with my dicing of carrots and potatoes,  include a diced onion and couple stalks of celery now. I tend to use water and buillion for broth, so I'll use one cup milk instead of all water to make a creamier soup. I'll also mix up the cheese to whatever I have, not limiting to just cheddar. I'm sure I've shared this before, but since fresh in my menu this week, repeating.

     I brought a jar to my sister, heated her up a bowl last night for her supper. She said it was the first food she's had in a week with any flavor. Needless to say, her appetite is light, so she'll get several more bowls from the jar. She was happy to be home. I visited with her as long as I could, but admittedly, needed to leave to get a Benadryl in me. We've got a schedule of help and care for her, and she's under the watchful eye of kitty-kitty, the stray that adopted her 10 years ago. As for the soup, it's the time of year where potatoes in storage might be getting soft. It's a good use them up recipe.

  1. haha! I only have one recipe, given to me by a coworker, that she named after our boss, because she liked it so much, LOL. I'm glad your sister is on the mend and has such great family to care for her.

  4. Potato soup is one of my faves, and my recipe is pretty close to your tweaked version. I do puree the entire pot of soup, and add milk for the creamier version. It is so darn good!

    Happy to hear your sister is home and continuing her recovery there.

  6. I love potatoes in anything. So happy your sister is home, that must be a relief for you. HUb's just pulled all the leaks and we are going to have leek and potato soup tonight. Yum.

  8. I like the look of that soup but I'm just wondering how it might taste with a soft goat's cheese or even a small piece of blue cheese instead of cheddar. I guess I'll have to try it and find out! And yes I name my recipes too - I have "Aunt Alma's Dip", "Windsheimer Pastry" and "Debbie's Eggplant"!

    1. You could make the base, but then just add cheese to your bowl to try different cheeses?

  9. Glad your sister is home and being cared for by family and watched over by kitty. I make potato soup but have never put cheese in it, can't say why not as it sounds delicious. I'm going to modify my recipe! Celie

  10. I was going to make potato soup, but I had no potatoes. I think I put cheese in Potato soup I made. It is good you can be there for your sister. I try to take zyrtec before encountering a cat. Benadryl puts me to sleep.

  11. That soup sounds so tasty that I just might cook it for tea tonight. It'll go down a storm with Tony and I can cook it in advance and leave enough for tomorrow too.

    2. I've just cooked a variation of your soup for tea as Tony has had four teeth out. His mouth is very tender but your soup was so tasty and soothing that I'll make it again often. I used Butternut squash instead of carrots and all the leeks came from my garden. Thanks for sharing the recipe.
