After Holiday Meal Plan

   

Always a classic.

      I've got the Easter ham in the oven and we'll bring it along with the green beans to my MILs after church. It smells so good. I pulled out a small loaf of banana bread for DH and DD2 to have before church, but I'll be happy with coffee. I anticipate lots of ham leftovers, but before I plan next week, here's how last week went.

  • Sunday:  Cheeseburger sliders on small brioche buns and salad ( DH loved this meal)
  • Monday: Greek chicken ( yeah finally made), salad
  • Tuesday: Carnitas with rice and beans
  • Wednesday: Chicken noodle soup, tuna melts
  • Thursday: mushroom stroganoff, meatloaf
  • Friday: Fish fry, but I had a Reuben
  • Saturday: Sweet potato, jambalaya rice,  leftover meatloaf for DH
     For the week ahead, it's going to be using up whatever fresh stuff we have, and cleaning out the freezer items for a fresh spring start. This sort of covers it, but literally nothing but Easter dinner is truly planned. It's weird not putting chicken on the menu, even if for appearance, but there's none left and I don't want to shop until the weekend. We do have some canned chicken.
  • Sunday:  Easter dinner, small plate appetizers and sandwiches later
  • Monday: Curry, or leftovers ( send back food with daughter)
  • Tuesday: Homemade baked Mac and cheese or tuna hotdish
  • Wednesday: Toastie dogs in crescent rolls, homemade French fries
  • Thursday: Butternut squash ravioli in mushroom sauce, with haloumi and roasted vegetables
  • Friday: DH, fish, baked potatoes
  • Saturday: Freezer/ fridge surprise/ cleaning out freezer before last April shop. I know there's soups frozen, and miscellaneous portions like a few egg rolls and homemade burritos
    We've got church then to get food and head to my MILs. I'm not sure how late we'll stay, but I know my older daughter has 5:00 plans and am sure the younger wants to see friends before they head back to their respective schools tomorrow. I hope you have a wonderful Sunday.

  4. Your meals sound delicious! Enjoy the time with your family. I made both chicken fajitas & chicken shawarma with the family, and we really enjoyed both. They were good options that allowed everyone to customize with sides, as needed.

    1. We'll cobble together yummy stuff even if I go off plan. I like casual get togethers for holiday meals.

    We only have canned chicken left here too, but plenty of other things to make. I have sweet potatoes on the menu this week. I’m going to make black beans and corn to top them with. The cheeseburger sliders sound great! I can see why your dh really liked them.

  8. Our Easter dinner was fortuitous success. DD has a job, and worked until 4 p.m., so rather than eat at 2 as we usually do, I held off until almost 5p.m. Also, she is vegetarian, so the ham wasn't going to do a thing for her, nor would a gelatin salad. So, along with the ham I served green bean casserole, and made a carrot salad, both of which were hits. We had deviled eggs, cheese, crackers and salami earlier in the day to tide the revelers over. Dessert was a choice of homemade lemon layer cake (leftover from my birthday), chocolate cream pie, or a slice from a variety cheesecake. The cheesecake was an impulse--Other Kid drove me down to see DD at her work (plant nursery) and I swung into a supermarket to pick up the only soap I can use which I was out of. There, I saw it, on special, for about the same price, (less, probably, if you factor cost to run the oven) than it would have cost me to bake the same thing! DD picked up orange juice on a whim on the way home, and we also had mimosas from our New Year's champagne which we never opened!

    1. There was nothing left than bones from two 1/2 hams weighing 18 pounds. For 15 people!
