I don't even know why I'm bothering with a post as nothing much is going on in my kitchen. Between planning to be absent from work a couple days and Covid impact at home and work, I'm floundering. I guess this is just to share reality and give myself permission to be kitchen lazy efficient, and use conveniences I've been trying to steer away from.
Monday night frozen pizza was DH's dinner and my daughter had enough interest in eating so had a bit. I've no shame in admitting that I grabbed a slice of Casey's pizza when I stopped for gas.
Last night I used a bagged southwestern salad, cut up cucumbers and a pepper and washed some grape tomatoes to add a bit more bulk. Then I dumped chicken strips in the air fryer. Voila, Southwestern Chicken Salad. It actually hit the spot. I steamed a sweet potato for my daughter as she preferred that and I'm happy to get her something she feels like eating. She actually woke up hungry and but is avoiding the kitchen. I made her a couple small egg and cheese breakfast burritos- with hit sauce. Covid has not impacted her taste buds.
Today, no pizza and no breaded chicken strips. I'll actually cook tonight, making the spinach white sauce and spaghetti. My daughter should like it as she's getting an appetite back. DH stopped for frozen juice bars l, juice, and more canned vegetable soup. My point today is life happens and easy conveniences are meant for when there's just other priorities than real home cooking.
Good for you for posting! It's a good habit to write regularly, something anything just to keep in the habit of doing so. I often has 'nothing to say' entries in my daily journal.

DeleteI must have missed yesterday's post as I didn't realize your daughter had covid, but I'm glad to hear she's starting to feel a little better. The tiredness and lack of appetite lasted quite a long time for me (but then I'm an old fogy and had lbs to lose anyway). Don't forget to take care of yourself too. You've had a lot on your plate!
ReplyDeleteNot to make this a pro vaccine comment, but comparing healthy people to healthy people, and old fogies to old fogies, I've seen evidence and data to presume vaccination shortens the Covid symptom period and severity. I bounced back after just a couple days of crud, and I have many pounds to lose and am on the fogie side of 59.

DeleteSO I am not alone in the nothing going on in the kitchen. Even Hubby who will cook hasn't cooked... well he said he did last night, excuse me, gas station pizza for $11. But I had clean up (box now in burn trash HA HA)
