My Wednesday Pantry -Have I actually Cooked?

I've been really dialing it in lately. We've eaten a lot of baked potatoes, thanks to 99¢ bags from Kwik Trip and my microwave. We had frozen pizza one night and last night, a frozen bag of orange chicken and rice. Chili, I stretched to both leftovers and a simple macaroni meal. I used boxed mac and cheese. We have no kids, teens, or college kids in the house. Just lazy lack of motivation in the kitchen me. We only did take out once though, but mostly because that would have been effort!

I'll get my cooking mojo back, maybe after the long weekend. I have side dishes to bring both Thursday and Saturday, requiring more than opening cans or bags. That's a start. This is where I miss having a family to cook for. It might have gotten overwhelming, but there were ideas. With just two of us, we have so many leftovers. With me wanting to eat earlier than DH is often home, I'd be fine eating toast, soup, or cheese and crackers with a piece of fruit. DD1 will stay over tonight so I'm going to make spaghetti with mushrooms and sauce from the freezer made with her tomatoes. I'm looking forward to that. Beats Monday's toastie dogs and homemade fries.

Toastie Dogs - Not Weiner Wings!

** For those not familiar with toastie dogs, they're a hotdog and cheese, baked wrapped in a slice of bread. It was a school cafeteria staple of my childhood. Link to a Pinterest version.

  1. We didn't have toastie dogs growing up, but we did have "weiner wraps", which were a similar thing, but wrapped in bread dough, & then baked. The entire hot dog was covered. I've also seen them made with crescent rolls.

  2. I get the "no cooking mojo" absolutely. Being on my own I agree it's often easier when you have someone to cook for. That being said, I make everything from scratch but there's an awful lot of soup being eaten round here right now!

    1. If it was just me, I'd be following your plan. Make a batch and eat until gone.

    1. Must be a Minnesota thing. They were in every lunch menu in the state.

    1. It's hard to cook for one or two without a lot of leftovers.
