I have a container of this froze and ready for an easy meal one night. |
We had meals that were not exciting, but did the intent. With being gone last weekend, then at my daughter's, I'm happy I didn't just chuck it in and get take out.
- Sunday: I brought leftover pizza from the girls weekend to my daughter's. DH had a couple chicken strips in a wrap.
- Monday: I had a hot pocket, no judgement, before bringing grandpup home with me. DH had another chicken strip and baked potato.
- Tuesday: Beef and broccoli stir fry with ramen
- Wednesday: Bacon wrapped pork loins and cheesey potatoes
- Thursday: Chicken tortellini soup
- Friday: Hot hoagies with homemade fries
- Saturday: Chili and grilled cheese
I found lots of lurking items to use up the next week. It's going to be a long work week I feel, so having ready ideas and not wing it is good. I'm still battling this cold, though the hacking has decreased a bit. Leftovers will be on the menu at least for once, likely tonight.
- Chicken strips with JoJo potatoes
- Petite steaks or steak bites with rice pilaf or baked potatoes
- Sausage, cheddar,and apple meatballs with au gratin potatoes
- Chicken noodle soup from freezer
- Tuna hotdish
- Orange chicken and rice
- Chicken, rice, broccoli, and cheese hotdish
- Breaded parmesan chicken with pasta and sauce
- Homemade spaghetti sauce, and spaghetti with garlic cheese bread
There's plenty of lunch items too if I can coax DH home, plus oatmeal, pancakes, quick bread, and muffins for breakfast with fruit. I need to eat more whole foods so oatmeal may be my lunch a few days. No complaints as I like it and rarely eat breakfast. That's the sort of plan. Another week and we turn our sites to Thanksgiving. need to get things for my roasted vegetables, sparkling lemonade, plus looking for wine deals. If There's a good price on a case of Pinot Grigio, I'll buy the case. I've got a few bottles of red already. We also have a family gathering that Saturday too and I'm bringing cheesy potatoes and a vegetable, and wine. I picked up loss leaders for green bean casserole. As you see, no shortage of food. What's your meal thoughts for the week?
On an unrelated notes, does anyone read Ciphers from Cindy, and know if she's ended this iteration of her blog? She has restarted under new blog names multiple times and I hope she's ok this time.

ReplyDeleteWe have to eat things out of the freezer, as ours are packed. We had pizza on Friday, M grilled burgers yesterday (plus roasted acorn squash - my favorite) & tonight I'm making chicken shawarma. The chicken & the naan bread are both coming out of the freezer, so progress being made.
It was a frugal blog, I got sucked into. Great job eating from freezer. Now I'd love some naan!

DeleteI'm hoping the turkey breast is thawed so I can bake it today. We will have a meal from that before I freeze it for Thanksgiving. If the ground sirloin has not spoiled, I will make taco soup. There are salads and vegetables. We will eat.

DeleteIf it's the Cindy you think, I stopped reading her when she put up a post spewing unfounded and foul vitriol about another blogger and her family. Screw her. Meals? Bleah. Power out Friday night through Thursday evening meant that even with our standby generator, we couldn't use the oven. (On a different panel.) We had a lot of slow cooker meals, as well as steaks grilled on the cooktop. (Dual fuel,so I can use the cooktop.) Neighbor and little girl were here Wednesday night, as their house was 38 degrees. We actually ordered pizza that night. Girl stayed here all day Friday until mom got home from work and power restored. We ate PB and homemade j's that day. Friday was baked salmon, last night frozen pizza. I am tired of comfort food! Tonight I am leaning towards a tuna casserole, and that's it. Maybe lasagna, burritos, fish and chips and a roast sirloin tip going forward. I DID bake one heck of a pumpkin chocolate chip bread on Friday, with plans to bake raspberry thumbprint cookies today. I also need to feed my fruitcake. I am glad I baked them when I did as they do best when allowed to be fed and aged for a good while.
ReplyDeleteI never read the spewing posts on other blogs, just that every I'll in the world is because of Joe Biden. I was more curious because her latest posts were pretty odd. My daughter lost power on Thursday - her whole village for a supposed emergency maintenance need. You know a pbs&j hits the spot sometimes.
DeleteShe has attacked many, many bloggers for no discernable reason over the years, not to mention her own daughters. She is beyond the pale and does not deserve your concern IMO.

DeleteWe had some meals last week that fed us, but weren’t noteworthy. As long as we get fed, that is the goal. I’m making dirty rice for dinner tonight and beefy Spanish rice tomorrow. After that I will have to figure it out. That soups looks delicious. It’s great to have one in the freezer for a backup. I don’t know that blog either.

DeleteI must not have hit publish before. Your meals all sound good Sam! What are JoJo potatoes? We had reconstructed leftovers twice this week and it really is a time saver. Friday night I made two pans of stuffed shells, cooked one for dinner with enough leftovers for my lunch tomorrow. Then the other pan I put straight in the freezer uncooked. It will be a comfort one night soon. Enjoy your Sunday!
ReplyDeleteJoJos are a wedge like thick potato, not quite a French fry, not a roasted potato. I don't deep fry mine though. There's the soup above, plus more chicken tortellini and chili.

DeleteYour menu sounds delicious!!! I would be huge if I ate pasta and potatoes and rice every night so will be sticking to lean meats and veggies heading into the holidays so I start where I’m happy weight wise

DeleteMy guess is she found the Reddit thread mentioned here and freaked. They have direct quote after quote from her blog, and it's really not very nice when viewed in the aggregate, imo. There is reference to someone that may be her recently leaving angry comments on the Reddit site, then deleting 'everything' shortly after. So that timeline would fit with her disappeared blog.

DeleteI have never heard of that blog. I do recall a blog by the name of Diary of a mad retiree, or something like that, and she lived in upstate New York, but ended up deleting her blog when I think her doctor brother got Covid in the very early months and died. If I recall correctly, he lived in Florida but traveled to New York for medical treatment and caught it up there. That was terrible. She seemed to be depressed and deleted blog. Just for the record, she is not me, Cindy is my nickname, and my country self has only been to New York City one time although I would like to travel to New York state and New England area and see it. DeleteOur temperatures have dropped from 75 early last week to high of 40 with real feel in the 30s this week so my menu plan follows that. Last night I made mississippi pot roast, mashed potatoes and steamed broccoli. Tonight was Spaghetti. For the rest of the week, I have planned... fish fillets with baked potatoes and corn, Chicken and cheese casserole and peas, Boneless pork ribs with julienne potatoes and green beans, Lasagna soup, and Pizza.

DeleteI read Cindi's blog as well and noticed that she was shut down. Yes, she has done this I think 3-4 times before. I think when she gets some unflattering comments it seems to make her very upset. Perhaps she's thinking why bother.
ReplyDeleteI say why bother if you're going to put stark opinions out there, people will comment differently. I know her blog posts were very much a rant against Biden, everything's his fault, and her money saving tips. Those I liked to read. I suppose she'll pop up again. I just worried health wise something might have happened.

ReplyDeleteI had a disgraceful eating day yesterday - peanut butter on toast (palm oil free!) for breakfast, chips and a pint of bitter for lunch, three crackers with cheese and two chocolate shortbread biscuits for tea. No plans here, as ever, just to eat up what veg is looking a bit shrivelled up before buying more! x

Cindy was back up for a while. Reddit posted her comment with another blog site in Jan or Feb. She had asked homemaking in the dunes to take it down on that blog. I think she tries to snarky and then she can't handle backlash.
