DH and my daughter got her car unstuck in the snow mounds. She was really looking forward to driving again and took it to her friends bachelorette day party. She brought lots of fun things home, but she needed sleep then her friends, so no pictures yet. What did we eat last week?
- Sunday: Baked pasta
- Monday: Hotdogs and Mac and cheese
- Tuesday: Turkey meatloaf and twice baked potatoes
- Wednesday: Soup from freezer, meat, cheese, crackers
- Thursday: Pulled pork sandwiches, rest of twice baked potatoes
- Friday: grilled vegetables in tomatoes over penne, parmesan chicken cutlets for DH and DS
- Saturday: We ended up not having family over due to schedules. We're meeting them later today. I made the baked beans and rice dish Belinda shared on Friday at Frugal Workshop and it is was a winner. We ate either as wraps, with chips, with or without cheese.
I'm doing an early turkey dinner today at 12:00 with a large turkey breast, mashed potatoes and gravy, sweet potato, stuffing, cranberry sauce, glazed carrots, and crescent rolls. We're doing our Christmas though DD2 and DS sort of gave presents as they unpacked, and DD1 sent her gift to her brother, and for sister is an experience. We have gifts for oldest and youngest not yet opened, plus two more for each of the three that we waited to give DD1. Later we'll meet my family for drinks and appetizers, no dinner. DS and DD2 are taking their grandma out for a late lunch Tuesday. Monday I'm taking them to a sushi place for lunch ( but I'll have something else- not a sushi fan). Dinners will be simple and easy, though I promised curry so need to make Monday or Tuesday.
Options for the week, many made ahead, after turkey dinner are the following. Those with an eye to freeze portions for DD2 to take back to school are indicated with an*.
- Chickpea masala with rice*
- Vegetarian chili* with rice and or grilled cheese sandwich as preferred
- Ham and au gratin potatoes
- Wild rice soup*
- Turkey, rice, cheese, broccoli hotdish
- Sloppy Joes with potato wedges
- Several leftover nights
Your menu sounds delicious! I made pumpkin soup, red bean coconut milk soup, and tomato soup. Cheese toast served on the side with spinach on top. I cannot tolerate anything other than soup and sandwiches when stressed. If made ahead it is so easy to heat it up quickly when I get home. Soup is such comfort food to me. I will probably eat a peanut butter sandwich for lunch every day this week bc I eat like I am five yrs old again …..😂 Cindy in the South

DeleteI don’t even remember early in the week what we ate but on my day off I cooked up a batch of thinly sliced chicken breasts seasoned perfectly and we had that in various ways through the week. I also made pasta, they had BLTs and we got pizza last night since the kids had friends over. Leftover pizza for today. I work a weird early shift tomorrow so I’ll have time to try a ham tetrazzini recipe. Taco Tuesday. Wednesday and Thursday are tbd, but will likely be simple fare. DH is heading out of town for the weekend, steelhead fishing with friends, DS took some vacation days and is traveling to NYC with friends, leaving me and DD to enjoy a girls weekend before I drop her back at college Sunday afternoon. So I definitely don’t want leftovers in the fridge with no one around to eat them. JoAnn
ReplyDeleteLoad those leftovers if you have them for your next solo week- says the person horrible at managing freezer space. The ham Tetrazzini sounds delicious.

DeleteYour meals sound great! I made a large batch of curry yesterday, and we will have it again this week. I also added a couple small containers to the freezer for lunches, because it's one of my favorite grab & go lunch options.

ReplyDeleteWe had a terrific weekend. Two more days with the travelers but DH and DD2 have to work today and tomorrow. They'll if course be here nights.

ReplyDeleteIt really is long in Minnesota. I'm trying to be optimistic though, more bundled walks, more meet uos with people. It's too easy especially working from home, to hibernate.
