Likewise, Friday is my day off and Monday is a holiday so no work. I have ample time to rid the boring breakfast menu. Here's the plan.
- Anything Muffins-using oats and bananas and anything else I might have in the freezer to use up
- French Toast-DD2's favorite and think it is time to make a big batch and put extras in the freezer
- Pancakes-I cheat and use the complete mixes. this weekend I think I will cook down the bit of jam I made over Christmas into more of a fruit syrup
- Smoothies-I have odds of assorted fresh and frozen fruit. I want to separate them in grab and throw bag to throw in the Ninja with milk and yogurt. I alos have flax and chia seeds to bolster the nutritional value.
If I get these hacks set up, we should be our of our cold cereal, instant oatmeal, and toast rut. However, those old stand bys are still appreciated when we are trying to get out the door quickly.
Thanks for the inspiration! Now if I will just get off my butt and do it! Breakfast is my nemesis. I know I should eat something, especially something protein heavy but I don't like food in my mouth in the morning. Maybe if I had something prepared that I didn't have to think about it would help.
ReplyDeletethat's why I wait until I get to my desk several hours later.
DeleteWould you be willing to make breakfast burritos for the freezer? They are delicious! They do require an upfront time investment, but freeze & reheat well. This is the recipe I've used. http://www.thekitchn.com/how-to-make-freezer-friendly-breakfast-burritos-234556
ReplyDeleteHow do you reheat so the eggs don't soggy up the burrito? I'd give it a try.
DeleteWe just microwave for 90 seconds, I think? I wrap in a paper towel in the microwave to absorb moisture. I think the veggies likely absorb some of the egg moisture as well. I didn't find the eggs to be soggy, but I'm pretty flexible with my eggs. :-)
DeleteI love muffins and I make several ahead and then pop them in the micro wave. Yum
ReplyDeleteThat is the plan for tomorrow.
DeleteRobb has a muffin recipe that he sometimes does which is delish to wake up to. But most of the time, it's the omelet for me, toast for the boy, something "non-breakfast" for Meri and let everyone else fend for themselves.
ReplyDeleteI'm fine with fending for ourselves-just would like some of which to find other than boring cereal. Lucky omelette recipients-yum.
