I'm a stress eater. I'm also a convenience eater. Neither is healthy and both will put those few pounds I lost right back on again. Intermittent fasting sort of hit a wall last Monday evening on my work trip, and I haven't resumed it yet. I want to start again, though today is not the best day to do so. Since today I will be at the call center when this goes public, I'm actually writing it on Saturday. My work at home days are Monday and Friday this week, so later Sunday I need to think ahead so I don't just grab handfuls of anything and everything. DH will also be home for the foreseeable future at a normal supper time, so the three of us can actually eat together if I plan this right, with DD1 joining whenever she cares to.
I started Saturday with loads of leftovers in the refrigerator. I should have had leftovers from our take out on Friday, but man, was it good, and comfort food at it's finest. Our daughter loved this spicy farfalle pasta dish in a vodka sauce with sausage and pepperoni-so delicious. I'd love a link to a good recipe for an at home vodka sauce. Does it actually have vodka in it? I'll need to buy some before liquor stores close! I digress. No leftover pasta aside, I do have tortellini soup, made when I worked from home last Wednesday that needs eating up today. I boiled eggs yesterday for some egg salad sandwiches, as we have bread to use up. Yesterday we ate up some noodles, rice, and orange chicken, and leftover frozen pizza. We had fruit, and carrot and celery sticks as well, so not all carbs. Out family had a smallish post funeral gathering at a sisters and the last of the Sloppy Joes, well frozen were finally used up.
Any shopping I do will be just replacement shopping, no stockpiling and I'll figure out what to make for meals depending on what is available. More than ever, it is essential not to have food waste, so it was imperative that we ate and will eat all the assorted leftovers. I'm trying to stretch ingredients, particularly those we tend to over eat like meat. On Thursday, DH made hamburgers for he and I and the girls had veggie burgers. I made sure he set 1/2 the pound of meat aside, and I cooked it up, wrapped it, and tossed in the freezer for a future meal. I'll use up fresh stuff first to make sure n waste or expiration, and take things from the freezer or pantry more sparingly. Options for this week are:
Cottage Pie
Hamburger stroganoff over egg noodles
Sweet potato wedges, stuffing, and chicken wings
Hot hoagies or some sort of grilled/melted sandwich with veggies and dip
Bean burritos with rice
Spaghetti and marinara with cheese on top or garlic bread and cheese
Biscuits and sausage gravy with vegetables
Cheddar broccoli soup and biscuits
Tuna cakes and rice with vegetables
Take out Pizza
Lunches will be leftovers, sandwiches , homemade lunchables, heard boiled eggs, carrot and celery sticks and ranch or hummus, and fruit. Knowing fruit and vegetables are perishable, I hope to make those my snacky foods, particularly on my work form home days. On in office days, I'll likely use the crock pot and air fryer more, and less oven and stove top. This is all stuff I can make without any stops at the store, though I probably will, as I said to replace and pick up items for donations.

I'm trying to use up my produce- deliveries still taking place. Why don't you have your college aged daughter do some meal planning and cooking for you? DD has put both grandsons in charge of meals at their home using the ingredients they have on hand. They're complaining a bit but have lots of free time even with virtual HS starting again next week. One can always google recipes using your ingredients- I just did it for an abundance of onions and I'm going to make an onion pie tomorrow.
ReplyDeleteMy daughter and I are planning together and on days I am not teleworking, being one of the sparse folks in the office, she'll do the prep. She has so much complained about the free time, more on trying to figure out how to keep close to friends. My kids are taking this very seriously, so I am glad tha tis not a battle as I'm still seeing groups of kids, teens, young adults gathering.
DeleteWe're doing a variety of meals. We did a takeout on Friday, that has stretched into lunches. M made steak yesterday, and will make the rest today. I'm also going to make a couple of crockpot meals. I'm missing a couple of ingredients, but will just work around them, because...what can you do? Not worth going out for one thing. I have a grocery delivery coming, but it was a week out for a delivery slot.
ReplyDeleteWhenever I can't make exactly what I want, I guess its a new opportunity to recreate. I'm doing planning in my head on how to keep to eating well, not snack without intent, and perhaps even keep losing a few pounds.
DeleteI did go to a local store to take advantage of a one day rock bottom meat sale. No t.p. or hand soap to be found, or the advertised bottled water. Beyond that, we are eating from what we have on hand. I took a frozen turkey breast out of the freezer yesteray, and decided I would make a fancy roast turkey dinner with nice silverware and good China one day this week. (I'd like it today for Sunday lunch, but it won't be defrosted.) The leftovers will last at least another day. As for vodka sauce, I have always used "Newman's Own." It's our favorite commercial sauce. I am sure there are recipes floating around for homemade, though. (We keep vodka on hand for a fabric/rug refresher/air freshener, and window cleaner.)
ReplyDeleteWe are seeing very little change to our day to day lives here. We enjoy staying home, and have always, even from the time I "launched" planned for a rainy day. The kids are not at all happy about the possibility of extended online learning--they would prefer books over computer screens, and nothing can replace an actual teacher. Honestly, I wonder if this will make teachers begin to realize that by relying on online/digital resources so much, they are making themselves obsolete? On the other hand, we have one teacher, who, when we were first cancelled temporarily, actually emailed her students, and PHONED those parents of students who didn't respond to ask what they thought they needed for the week! Sometimes, people can amaze you with their thoughtfulness. In fact, I'm seeing lots of that happening.
We're seeing a lot of creative models for distance learning, not all technology focused. I think of places like remote island communities, the outback (maybe dating myself in thinking on this) and they managed to educate children in small family groups. Glad you were able to take advantage of the sale. Still no TP here, but I got a couple pounds of bacon and already cooked Taco meat, which will be good for chili, burritos or burrito bowls, and easy.
DeleteWell, one thing about kids and technology is that they, as teens, become very proprietary about their devices. My kids don't really want to give me access to their online accounts. I could force it with my freshman, but until he gives me a reason to insist, I have to trust he will keep up with his work. Still, if it was a book or paper packet, I could actually easily, at a glance, tell if it was done or not. Also, I could easily read the book to figure out how to work a problem, and then show him, not click back and forth from a video to a screen, etc, until I figured it out. I am hoping this mess demonstrates just how important face to face, tactile, human and paper based instruction is to a decent education. Technology is a tool, not a substitute. But, then again, maybe I am dating myself, but I don't think I am wrong nor do the college professor with whom I have discussed this. But, if teachers wish to continue to work to rendering themselves obsolete, by the time it happens, my kids will be out of school...not sure it will make for an educated population though, and a poorly educated population is a hardship for society.
DeleteI am doing my normal with the meal planning. In other words, I am not. However, I do have food and know what is there. I need to work up these strawberries before they spoil. I shop carefully with mask, gloves, and Lysol wipes. Someday, the stores will close. I only buy things on bogo that I need, buy sales, closeout, or use a coupon. Even so, I am in and out.
