Meals Before Christmas

     


     I could be on chocolate hangover, but I was smart and didn't feel a need to taste test the lot from the kitchen. Other than walking the dog, neither DD2 or I left the house. It was another good Saturday lead to Christmas. She's in a vegging mood, but needs it. I had no reason to leave and got a ton more treats ready. I need to do the chocolate dipping, but have help today.  Results:

  • Filling made for: Oreo truffle, Nutter Butter truffle, Mounds bar truffles
  • Puppy Chow
  • Peanut butter fudge 
  • Peanut Blossoms w/ pb cups 

I'll try Rosette's Wednesday when I have no competing distractions. It'll be quite a tray of chocolate overload. 

     We did eat real food. My daughter was in the mood for egg burritos and I happily provided. She ate leftover wild rice soup at some point. I had made a a couple frozen Chicken breasts in the crockpot, asked DH to stop for tots and buns, and turned them into shredded BBQ chicken. Last week:

  • Sunday-Pork chops, baked apples, green beans, and parmesan rice
  • Monday-Lasagna
  • Tuesday- Burrito) bowl with beef, rice, black beans, cheese, corn and tomato
  • Wednesday- leftover lasagna
  • Thursday- More assorted leftovers (DH spent lunch through Happy Hour into evening with friends)
  • Friday- Wild Rice soup
  • Saturday- shredded chicken BBQ sandwich and tator tots

     There's plenty soup and sandwich fillings for today and I'm getting room for holiday foods. The girls and I will be shopping while DH watches football.  Here's the possible meals for the week.

  • Take out pizza (Vikings game Monday night so probably for the game)
  • Spaghetti and garlic bread 
  • Fish and baked potatoes 
  • Stir fry and rice 
  • Chicken and vegetable stew 
  • Christmas Eve feast 
  • Christmas Day feast 
  • Leftovers 

     There's easy and favorites for my people. I think when we exchange our family gifts, it'll be casual, no sit down dinner as we'll likely get lunches out and about this week. Maybe I'll pick up Chinese food for that. DH is off work until the 27th and I've got Wednesday to Monday off, then a couple more days off next week. I'm not spending it doing more cooking. I hope whatever's on your menu, it doesn't leave you trapped in the kitchen.

    Nutter Butter truffle mounds sounds really good. And your menu for the week looks good too. :)

    I like not having to leave the house, those are some of our best days.

  2. I bake quite a bit for our family and friends, but I really don't have much of a sweet tooth. Savory food is my favorite. So New Year's Eve is always a large array of finger foods and appetizers. My favorite kind of meal. We usually do the same for Christmas Eve but this year I am making lamb burgers. I have been craving them for a while. The price of lamb is crazy but I figured if we ate out it would be double so it was easy to justify.

    1. Special food make the holidays. I just spent an atrocious amount in smoked salmon. I'm an appetizer person too.

  3. I relied heavily on the crockpot last week but nothing spectacular. I’m going to dinner for my work Christmas party. It’s a place I’ve never been to called Olives and Peppers. I think I’ll get the chicken piccata. Son is going to the Steelers game, hubby took tonight off so we’ll all be in and out today so no point in making a meal. I need to finalize the dinner menu for here and my dads and decide what we’ll be eating in the meantime. I’ve definitely had too much sugar this weekend, snacking on cookies and caramel corn. Im craving something savory. JoAnn

    1. DD2 and I just snacked in tortilla chips. Yes, too much snacking for me. The restaurant your going to sounds delicious.

  4. I wish I were a better planner, but I tend to simply pull something out of the freezer either the night before or the morning of, when deciding what we're having for dinner. Example, I baked buns and cinnamon buns yesterday so I've got a package of ground beef for sloppy joes defrosting for this evening. I'd already decided on breakfast for dinner yesterday.

    My goodness your chocolates sound delightful. Have fun dipping!

  5. It can be nice to have a cooking binge can't it - but it has to be when you feel like it and not forced. Enjoy your time off with your DH and DD - I bet you could do with the rest!
