- Sunday: Chicken noodle soup, heavy on chicken for him,
with grilled turkey and cheese sandwichesNo sandwiches, but DH also ate Saturday leftovers. Sent soup with my daughter too - Monday: Homemade, baked macaroni and cheese, steamed broccoli
- Tuesday: Tacos with all fixings
- Wednesday:
Goulash ( will use up pasta sauce, and more tomatoes)Pattie melts, spinach salad - Thursday:
Breaded herbed chicken, mashed potatoes and gravyFrozen Pizza - Friday:
Fish and au gratin potatoes, coleslawPasta bake with spinach and cheese - Saturday:
Take and bake or homemade pizzacrock pot chicken and sauce, with baked potato( I went to hospital late afternoon so left everything for DH to eat when he got home)
I was pleased DH came home for lunch every day. I was tempted when I passed a Wendy's after my scan Friday, but kept driving. I owe DH a fish dinner so we'll either go out Friday, or I'll pick some up. I want to make some meals that my sister can eat, put in her freezer. She needs low fiber once she can eat beyond soft foods. I saved old take out containers so can do some individual meals nice and tidy for her. I'm still figuring out what else I can make, but Sunday and Monday plans should work for her. My initial plan, always subject to change is as follows.
- Sunday: Potato soup, red bag chicken sandwich ( portions for sister)
- Monday: Meatloaf, roast Potatoes, green beans ( portion for sister)
- Tuesday: Pasta with Bolognese
- Wednesday: Sloppy Joes and French fries
- Thursday: leftovers, or just a quick sandwich as we have to be out the door as soon as I'm done with work.
- Friday: Fish and au gratin potatoes, coleslaw, or Fish fry out
- Saturday: Greek chicken- Anne's version- pita bread, salad
I've wanted to try the Greek chicken for a while. We love gyros, and the flavors, do think it should be a hit. I'll need a few items from the store, but otherwise just top offs again. That's the new to me recipe otherwise same old, with enough for lunches.
Thanks for continued thoughts, prayers, well wishes for my sister. She was very ill and had more of a procedure yesterday, but was in good spirits last night. Covid mitigations and protocols still in place at hospital so we can't be there together to support her, so one at a time. Hug those close. Call those far away.
Your meals sound great Sam. Question for you, what is red bag chicken? I think I've seen you mention it before and I'm curious what it is.

I should remember to say Aldi Red Bag chicken. It supposedly tastes like chi fil a, but I wouldn't know. It's just a nice tasty sandwich.

I'm really making sure to manage anything fresh. I must do something with spinach so tomorrow's lunch will be a scramble I think. Word is Sis can come home tomorrow!

ReplyDeleteI have two celebratory meals planned in the coming weeks--corned beef and cabbage for St. Patrick's Day, (with a chocolate cheesecake) and whatever I decide to make for Easter dinner. I have a corned beef in the freezer, but no Guinness. I must rectify that situation! For Easter, one kid and DH want ham, DD has turned vegetarian, one boy wants salmon, and one doesn't care as long as I make peanut butter eggs. As I have a ham in the freezer purchased at some ridiculously low price last year, I am thinking we will have ham. It's not my favorite, so I can't say I make a good ham. Any tips?
I haven't made her Greek chicken, but Anne's Peruvian chicken is one of our summer favorites! I love reading her blog, but especially love when she shares recipes. In fact, our Easter dessert will probably be her Chantilly cake.

Thanks for the good thoughts. They're working! I do my ham very low and slow, 350, with glazing of 7up, lightly, then keep checking,. I cover with foil. It stays so juicy, but not overly sweet like a glaze might become. I like a real bone in, not spiral, but the spiral are so easy to serve.Now I need to find the Peruvian recipe.
DeleteI’m trying something a little different this week. I’m cooking a lot today with the intent of eating leftovers for a few days. When I cook later in the week it seems that things get lost in the fridge and as the weekend approaches we tend to be home less or grab subs or takeout. I made meat loaf, haluski and pasta salad today. We had a hearty lunch and I fed daughters boyfriend as well and packed some leftovers for him to take back to campus. I still think we’ll get some takeout Chinese later. We should be set for a few days. I’ll probably pick up a rotisserie chicken for the end of the week. My schedule is atrocious this week so simplicity is a must.

Thank you. Sunday was a good day. Another sister said it looked likely she'll be discharged Monday.
