Don't have a poke at me for calling something I'm going to describe as a calzone. I just know of nothing else that might describe the tasty morsels we had with soup Monday night. Filled sandwich? Pan au Italian? Crescent roll stuffed with Trader Joe fillings? They hit the spot in a cold night after a long day. Sorry, we gobbled up with no pictures but here's the way I made them.
- Pinch seems of two crescent rolls together.
- Put choice of fillings on one side
- Fold over and pinch together
- Bake in a 375 degree I've for 16 minutes on a sprayed baking sheet.
Filling choices were bruschetta, artichoke's, olive tapenade, and pepperoni, all from TJ+ Mushrooms, mozzarella cheese. The crescent rolls were just the Aldi version. I'll have again for an easy meal, and yes, total cheat with premade items and bought dough. Use whatever you'd like inside.
DD2 stopped for dinner too and we watched a bit of YouTube together. She wanted to get home early though as she had been on the road at 4:30 a.m. after a weekend with friends, the drive right to her office. I sent her home with soup and there was enough for my Tuesday lunch.
Did I use the Instapot? No, I chickened out again. 1 pound of navy beans soaked overnight. Sunday I did the following to make soup.
Sauteed an onion, with a cup if both diced carrot and celery. Add the beans, four cups of water with bullion, or 4 cups veggie broth. I was light in bullion so loaded with onion powder, garlic powder, ground pepper, and but of minced garlic. I brought up to a boil, then covered and simmered for another 90 minutes. Turned off heat and left covered, cooling slowly before I put in refrigerator to reheat in Monday. It made 8 cups of soup. We each had big portions on Monday, but still had leftovers so heartily, this would feed 4-6, depending on whether a sandwich or something was served with it.
Here's my Tuesday lunch. Yum, eaten with two slices of toast and a banana.
Stuffing cheese, meat and or veggies into dough is called deliciousness.

That's a typo needing to be fixed! Well, summer will be coming and who knows how many big salads we'll all eat!
DeleteYou've inspired me! I have pre-made pie crust in the fridge that I had forgotten about - I'm thinking homemade calzones will be perfect for tonight's supper.
ReplyDeleteBean soup sounds good about now too. And there are carrots and celery in the fridge that need using up too. Hmmmm...I guess I know what I'm doing today. :)

DeleteYears ago, when they first came out, DH said he was considering giving me an InstaPot for Christmas. I told him it was a good thing he hadn't. I can't imagine that, beyond the sautee feature, I'd ever use it. And, really, the sautee feature would only save me the trouble of washing the pan I used to sautee the, say, onions, carrots and garlic for my stew. I have a pressure cooker/canner which can be used to hot water bath can, pressure can, (both of which I do) AND pressure cook, should I ever choose to do so. (I haven't). Also, I find most of the InstantPot recipes flying around on the internet rather revolting, and not very cost effective either. I have another friend who says her InstantPot has sat in her cabinet since it was given to her. Her air fryer, on the other hand...
ReplyDeleteYes, air fryer is used no less than 4 x a week. I don't even do canning beyond salsa and jam so no need for pressure cooker either.
DeleteYou cannot can in an InstantPot, but you CAN pressure cook in a boiling water/pressure canning pot. DeleteYour "calzone" sounds delicious. I always think of a calzone (pizza) as folded over pizza but with an egg in the middle! Delicious, although not my favourite pizza!

DeleteI BET THEY WERE TASTY LITTLE MORSELS! I love beans, and I have ham in the freezer I am going to take out. I think I will do a lentil soup as they cook quickly. Thanks for the dinner idea! Plus, I have chicken broth in the fridge that needs used.

DeleteWe've typically called those calzones, so I think you're on the right track. I've made them before with blue cheese & spinach, before M couldn't eat carbs, & they were a favorite & easy dinner staple. The kids made theirs with cheese & pepperoni, of course.

DeleteAs for your calzones--I make a version of those frequently, with cheese and salami. I also make chocolate crescents with chocolate chips or Nutella, and Raspberry cream cheese crescents--cream cheese beat with powdered sugar, and homemade raspberry jam.
