My Wednesday Pantry- Daughter Collab

      When my vegan foodie daughter is cooking up yum, I like to steal borrow her inspirations for my Wednesday posts.

     I'm just cutting and paste her steps for flavorful cilantro lime rice and black beans from her conversation with me when I saw her Instagram photo. Yes, Vix, we're both Instagram w'#$+kers. ( Oh that made me laugh when I read your post). She of course does her beans from scratch, soak the beans night before, cook with a bit of salt, slow and deliberate, and then freeze in recipe portions ready to go.

     Cook rice to fluffy (1 C water, 2 C rice). 2 big limes for juice, head of cilantro, salt, pepper to taste, a bit of lemon juice and some olive oil.

     Beans were just chili lime seasoning from Trader Joe’s, cumin, garlic, nutritional yeast and salt and pepper.

     She served the rice and beans with smashed avacados, a large dollop of salsa, and sliced green onions over it all. 

     This is a perfect example of low cost meets vegan meets palate pleasing for anyone. I can see my son and husband polishing this off with a basket of tortilla chips and a bottle or two of Dos Equis. I'll take a Margarita on the rocks. 

     In my post yesterday I shared I'm ordering a kitchen scale as my work anniversary perk. I joked about becoming Nigella. I had to find the clip from the TV show, Outnumbered where a young Karen was playing with all her stuffed animals pretending they were on cooking shows. This clip only includes the Hell's Kitchen part. If you find the rest, you'll hear all about Nigellas " tasty, masty, slurpy, lurpy" stirring.

  1. I'm a huge beans & rice fan. Yum! I'm making a rice bowl tonight for dinner (with ground turkey), & lots of peppers. The best part is a tomato crema drizzled on top.

    1. Rice bowls with sweet potato is on my menu for tomorrow. The tomato crema sounds really tasty.

  2. That cilantro/lime beans and rice does look delicious. Actually that's what I liked in Costa Rica - beans and rice was ALWAYS available for breakfast if you wanted it!

  5. That looks so good and I am going to try it. I love beans and rice in fact I will just order that when we go out to Mecxican.
