Food That's Fast

Dinner had to be pulled together quick last night, but I relied on my precooked chicken, and staples from the freezer and pantry.  The result was better than anything from a drive through window, and not much if any more time. I started the rice and let it cook while I took pup for his walk-needed to be done regardless of whether I cooked or got take out. Once back, I used two cups of diced chicken simmered in a little broth and a whole lot of curry powder, the mild variety form the grocery store. Once heated through, I added pepper, and 1/2 cup milk, and more broth-probably about 1 1/2 cups total, threw in a bag of chopped broccoli, and let it come to a boil, then turned down to a simmer, covered, and let it all heat through. I added a teaspoon of corn starch with a little more milk to add a little thickness, then  threw the last of a wilting bag of spinach greens, and covered for another 5 minute. 

The final combination was part sir fry, part curry, but very delicious, and from pantry, fridge, and freezer to table in 35 minutes.  We stuffed ourselves with 4 portions that came in under a $1.00, though DH cleaned the lot up.This is the guy that never liked the other masala or curry dishes-maybe he was just really hungry. This was Monday night. Tonight was another soccer game, communication mix-up, and we settled for frozen pizza. Can't make a winner every night.

    1. What's great is no recipe-use what spice you have and what veg you have. It couldn't have been easier. I hope you are having an incredible time.

  2. It looks tasty and I am smelling it in my mind. A great meal is one of those that comes together organically,cheaply, quickly and everybody eats without complaining.

    1. Other than finding DH is not an Indian spice (or too much spice of any kind) fan, I have it pretty easy in the meal department. While DD! is vegetarian, she is unpicky, and the other two are veggie lovers as well, so I've never had to sneak them in food.
