My Wednesday Pantry- Ranch Cracker Chicken Tenderloins

   


  I keep forgetting to buy a cannisters of bread crumbs. I know, just make them, I hear you say. I don't have a good processor that will grate them fine enough and a cannisters lasts me eons. I decided to make up an option when I both realized I didn't have bread crumbs and the crackers were getting stale. Nothing too dramatic, but here's my take.

Ranch Cracker Chicken Tenderloins 

  • Smash the heck out of crackers to dust. No worries if pieces stay big
  • Season to taste with garlic powder, onion powder, salt and pepper
  • Dredge chicken tenders in ranch dressing 
  • Put in bag with cracker crumbs and shake vigorously to coat.
  • Bake at 350°  for 35 minutes 
I served with roasted potatoes and green beans. DH was happy with this dinner, and I made extras to make chicken salad and apple wraps. Of course I'm wavering off menu plan! I also didn't take a picture, but DH really liked the final result. 

     This was a short post but blogging each day has been, no is good for me. I keep at it even with silly made up recipe posts. Like a good healthy meal, writing my blog provides me sustenance. Thank you for reading whenever you can tolerate my posts. I appreciate the community we have online.  Life is just a lot right now. The kind words from yesterday mean a lot.

  1. So sorry things are rough now. I requested a food processor last year for Christmas and actually use it a lot- hummus, nuts, cole slaw, veggies and yes, bread crumbs lol. It wasn’t an expensive one either! I bought the 3 younger grands each 2 books for Halloween and gave the 2 college boys $50 each. Oldest GS has a light schedule and is working as a waiter in a chain restaurant but he says tips aren’t that great so the cash will be appreciated. I fried up some homemade chicken tenders yesterday and ate them with a salad and rice. My salad wasn’t very good though- too much kale. I need to find a good mix of greens I like.

    1. I had one when we were first married and didn't use it much, then it eventually died. My ninja blender does most things- just not bread crumbs.

  2. This reminds me that I have bread crumbs I need to use. I keep them in the freezer, so I never see them. Tommy actually became tired of chicken, so I could use them to make chicken different. He never gets tired of chicken! But, I always have something he can eat instead. There was nothing, so I defrosted taco soup. So, I suppose I will be digging bread crumbs out of the freezer.

  3. Crackers, chips, even tortilla chips make a great coating. I'm sorry to hear things are challenging right now. I hope you're feeling better about things soon.

  4. I never make my own bread crumbs, either, but it just dawned on me that I have some bread that's pretty old so today may be the day!

    Sorry things aren't going great, but glad you always seem to look for and find the positives. My brother-in-law is going through a really tough time medically and I'm amazed by how positive my sister has been (but wonder if she's being realistic).

  6. I like the look of that recipe and even have panko in the cupboard. Worth a shot! I found I couldn't blog every day either so do what's best for you. If you feel it's becoming an "obligation" how about dropping it for a couple of days to see how that feels. I honestly don't know how people blog every day either but hats off to them!

  8. I loved smash the heck out of crackers. I am thinking there is something behind that sentence. I can just see you with a mallet smashing the bag and getting great joy out of it. Subliminal....

  9. This is such a handy recipe, and you can use it to coat any chicken pieces. I sometimes add some grated cheese to the crumbs as well. If I’m doing drumsticks I will coat in ranch, then crumb, coat in beaten egg, the coat in crumbs again. It’s a messy procedure but worth it.
    As I have said previously, you keep writing and I’ll keep reading. Megan

  10. I look forward to reading every day and try to comment when I can. I figure that’s the best way to let you know I appreciate you! I’m sorry things are troublesome right now. All you can do is muddle through and hopefully you have some friends and family to lean on. You always have us! My daughter found a chicken tender recipe years ago that called for crushed pretzels instead of breadcrumbs and she makes a lemony, garlicky butter dipping sauce for it. Delicious! But time consuming lol JoAnn
