The Missing Menu Post

     


     I had a post scheduled to go, but must have deleted. Here's try two.  I'm still trying to eat healthy and affordably. Here was the past weeks meals.

  • Sunday: I packed snacks but ended up also getting a BLT wrap. DH had soup and leftover pizza.
  • Monday: I had a buffet, DH had a sandwich made with homemade bread DD 2 brought him.
  • Tuesday: Hamburgers, tots for DH
  • Wednesday: roasted vegetables over rice, chicken sandwich
  • Thursday: Grilled Cheese and TJ soup 
  • Friday: Pasta primavera 
  • Saturday: Dinner out with friends 
Next week will be nothing exciting. This could change by what we find for options and prices. 
  • Sunday: Sweet potato wedges and chicken tenders
  • Monday: Cheddar brats and nac and cheese
  • Tuesday: Taco Tuesday 
  • Wednesday: Stir fry chicken and vegetables with noodles 
  • Thursday: chicken broccoli rice and cheese hotdish 
  • Friday: chili or soup
  • Saturday: leftovers 
     I'm going to get Halloween candy after all. Yes, it will be chaotic but DD1 will be here. We won't get many, likely just those in the immediate neighborhood. What's going to be on your table this week?

  1. Your menu sounds great as well as what y’all ate this week. I made lasagna for the middle son so I guess leftovers before I leave this afternoon to go to work house. I bought a banana nut squash so will cook it at 350 degrees upside down in a little olive oil and roast the seeds. It will take me three days to eat it all. I guess I will eat turnip or collard greens with rice to go with it, because I am too lazy of a cook to make cornbread…. lol. I also bought two cartons of the tiny tomatoes for $5 and I eat those on my egg sandwich I make every morning. Bought bagels at Aldi for the breakfast sandwich. Bought spinach for kid and I am eating on that as well. I take just a sandwich for lunch at work and it is usually just luncheon meat with cheese or pbj sandwich, so nothing fancy. May make a tuna fish sandwich for supper one night. My meals are repetitive because I make one or two things and just eat on it the entire week. I also keep a huge jar of nuts in the car from SAMS or Walmart for snacking on if I get hungry while driving. I don’t want to stop and get expensive food at the gas station when I fill up. I forgot to buy my oatmeal cookies this week. I just have one of those every day. Cindy in the South

    1. If it was just me, I'd eat very differently- much like your menu. I'd eat a lot of hummus and veggies as meals.

  2. You have reminded me it's been a while since we've had tacos. I will have to remedy that in the next week or two. Enjoy your Sunday!!

    1. I bought chicken to make them chicken tacos. I just realized I forgot sour cream, which I love on them.

  3. After baking chicken tenders and drumsticks in the last few days along with vegetables, I baked a whole hen on Sunday night late and the breast is removed for me. Tommy will pick the rest of the meat from the carcass. Plus, I have ground pork to cook taco soup in the crockpot. And, I have ground round thawed for a meatloaf. Ground beef is ready to brown and drain so I can make our first vegetable soup with beef this year. I will freeze part of each dish I prepare.

  4. I’m making a nice roast with carrots and mushrooms and mashed potatoes for an early supper before I take B back to school. Leftovers for the guys tomorrow, since I’m heading to dinner right after work with the girls. My son requested popcorn chicken bowls for his birthday dinner. Probably do a pasta dish of some sort, soup and sandwiches. Sounds good enough to me. I’ve got a long week ahead but im sure no one will starve. JoAnn

  5. I've given up writing a menu for each day, as things change. So now I just write a list of things we could have during the coming week, the first 2 or 3 days we eat things that need using up quick.

  6. Like you, what I plan and what happens are often (usually, here) different. Doesn't matter since we eat every night, sometimes much better than other times.

    1. I was already off menu. My daughter didn't stay for dinner, so we ended up just making hoagie sandwiches, loaded with cheese thanks to a good buy on a couple submarine rolls.

  7. I made a big pot of Lima bean soup yesterday, had one bowl for dinner, one today for lunch and will eat it tonight and tomorrow- boring; not really- I had a homemade egg biscuit both mornings for breakfast. Tuesday I think I’ll make a coconut based soup. I also baked a batch of cookies for the church bake sale and only ate one that broke. I’ve started using parchment paper to bake with and it’s quite the deal changer for me. Nan

  8. Oh... the days of menu planning. I can't wait to get back to that. I'm slowing working my way back into menu planning. For example, this week, I'll be having soup and sandwiches for lunch. Dinners are not as easy to plan here, but I'm getting into a groove.

  9. I just did our "somewhat" weekly shop and what I had planned for the week was not what I bought. I got some great meat specials which led to a change in plans. I think I will give up going with a plan and just see what falls into my lap, if it's a good price and I know it will get eaten then it's good enough. And sometimes that make me be a bit more inventive with meals ....... Megan.
