Meal Planning-on Saturday

I don't want to disrupt our flow tomorrow, so am putting thoughts towards the meals for the week. I'm excited about our evening plans, but first, a lot of stuff to tackle in the house today. DD2's Vocal Jazz, Ladies Jazz, and the two Jazz bands are putting on two back to back concerts down at the performing arts center. We're going to show two as I am part of the desert and serving crew for show one. I helped decorate yesterday for a bit in between my home efforts. I have to pick up a couple pies, our contribution to the desert buffet. Last year it was snowed out-on April 14th! Schedules of kids, directors, and the  art center were so packed, they never rescheduled. It is a lovely event, sort of ritzy, and a true treat of wonderful music. 

I didn't realize how much I had bought in groceries last week until I started thinking about planning. We really are stocked to the gills! However, since I am on a good working streak, I want to make meals easy and intentionally plan on leftovers. Here's my thoughts for the coming week through next Sunday..

  • Leftovers from last week
  • Pizza
  • Chicken legs, mashed potatoes and corn
  • Brats, baked beans, fried potatoes
  • Red rice and beans with sausage slices (leftover brats-DD2 loves this meal), steamed vegetables
  • Chicken noodle soup, loaded with vegetables, bread maker bread
  • Chicken alfredo over penne pasta
  • Loaded nachos or burritos, with beef, beans, corn, and salsa. Taco Rice, potato oles.
  • Show choir banquet

I'll make better use of my time by peeling and cooking extra potatoes to later fry for the other two potato sides. I'll throw the chicken in the crock pot on Monday, later using a couple of the legs for the soup. I'll debone the meat from any leftover chicken for a big chicken salad for lunches. We'll also have tuna for sandwiches and other odds and end leftovers for lunches. Pizza is on the menu for tomorrow night as a splurge so we can keep getting things done around the house. I'm trying to not overdo pasta since that is the menu for the banquet. I don't know what we'll eat what nights, but I think there is decent variety. DD2's play practice schedule is  very random, so as in past weeks, need to have re-heatable meals for her. What's cooking in your house?

  1. I would love to hear that jazz event. I have a special place for jazz.
    I am always amazed at how many different menu choices I have just based on the foods on hand. I never realize how much is there until I start planning either.

  2. I would love to go to that concert! One thing I regret about DS entering dual enrollment is that he no longer sings with the chamber choir.
    That's quite a menu for having no kitchen.
    The kids are on spring break this week, so I will take that into consideration. So far, it's baked salmon tonight, a roast chicken with carrots and mashed potatoes tomorrow. Beyond that, I have no idea! I have to take inventory of the freezer. I know I have plenty of boneless, skinless chicken breasts. I've had a request for grilled steaks, but am not sure if we have any. As it's for a birthday meal, I may break down and pick some up if we don't have any.

    1. I still have the kitchen; we're just picking out items today. Since just floors and appliances, we'll only be inconvenienced a couple days.

  3. I would love to hear those groups and I envy your ability to be involved with them. Music is a big part of our lives here.

    1. Involvement is coming to an end. We can still attend but won't be the same after she graduates.

  4. Sounds great! We are having tacos, buffalo chicken sliders, & attending a potluck where I'll bring a tortellini salad. We'll eat leftovers during the week, and then we'll be in Napa on Friday, sans kids! :-)
