Meals for a Holiday Week(end)

I took a Benadryl last night and feel like I woke this morning actually feeling rested. The allergies did not let up the whole week and with puttering outside and in yesterday, I could feel the congestion in my nose, ears, and throat. I'll take another one tonight as well to get me through hopefully this last surge of pollen. I'm only scheduled three days this week for work with Friday being the paid holiday since July 4th falls on the Saturday. I'm taking Thursday as a vacation day. DH will have a weird schedule, with his Thursday day off, work Friday, then have Saturday and Sunday off. The college kid only has July 3rd off from the school job, but is scheduled at the restaurant in the morning. She's going to a college friends house and staying over, coming home before her 3:00 Sunday shift. This is all to lead into me having no clue again how and what to plan for meals.

I need to go grocery shopping at some point, so will procure meal ideas from my daughter of things she will be able to heat and eat on  the go. There's items for the grill at the lake, but I think the plan is still to do a fair amount of social distancing and try and spread out and not have family style buffet meals. There will be a lot of coming and going with my immediate family and we also have to figure out the dog. Fireworks will be crazy up there, particularly since all the public ones have cancelled, and he does not do well. Here's thoughts on meals for now.

Old fashion hotdogs, baked beans, coleslaw, chips, and watermelon
Hamburgers, potato salad, mixed fruit, veggies and dip
Taco bar, with rice and beans, jello salad
Spaghetti and meatballs, green salad
Submarine sandwich's, veggies and dip, fruit, chips
Chicken pasta salad, cantaloupe, dinner rolls, sliced cheese
frozen pizza, egg rolls, dumplings, pot pies

I'll make cupckaes and cookies too-easier to wnusre individula portions and less touchig, I guess but not sure of it is a big  help or not. Yes, I plan to load the freezer with ready meal items. There is likely leftovers for each meal to extend the options. For my American friends, do you plan a big gathering in normal years? Are you plans more subdued with social distancing?

P.S. My niece delivered a tiny, premture little boy, but otherwise  the news is good for mom and baby. I guess it will be a long time before we get to meet him and I'm not even sure the grandparents have been allowed into the hospital to sneak a peak. He'll be getting NICU TLC for a bit.

  1. Congrats to your niece. I hope the best for both her and the baby. Premature babies are perseverant. Wishing him a healthy, long and wonderful life.

Speaking of allergies; the linden trees outside my apartment are killing me. Even my allergy med is not sufficient.

  2. We're having salmon, sausages, chicken caesar salads (grilled chicken), burgers & hot dogs, etc.

We'll be practicing some social distancing, but have largely seen my immediate family over the past few weeks, so limiting it to that group.

Congrats on your new family member!

  3. I will light a candle for your nephew today.
I'm not sure what is happening, but my son's allergies have been horrendous this season.
We don't plan big gatherings for any holiday! Our Fourth of July used to be marked by grilled steak, some sort of vintage jello salad, and lots and lots of fireworks on our property. As they've gotten older, the kids have grown less interested in fireworks, mainly due to the mess. I remember one year, we sat on the patio in winter jackets watching DH light the fireworks. Another clear memory about that year is that I went to the local grocery store as plans for dinner changed--no way we were grilling in those cold temperatures. Turns out half the island had my same thought--the parking lot was full...something I'd never experienced living here!
I make take your plan of submarine sandwiches this Fourth of July...perhaps set out a buffet style, make your own style presentation on the counter, with the sides on the dining room table.

    1. I think submarine sandwiches make a really nice summer buffet-everyone is happy! I recall a few very cold days for fireworks as well, but often its bugs we are battling.

  4. I need a pseudoephedrine For my congestion. But, it will speed up my heart, something I don't need. I am quite sure this is house dust and dirt!

Any of those meals sound good to me. It seems there will be little cooking for all these, good for you.

On the 4th of July, I always went to a house party where the street was blocked off and a band played--the Buicks. There was an open house for their friends, booze in the street, fire dancer, and a sea of lawn chairs for the fireworks. If it were happening this year, I would not go at all. When I stayed home, I stayed home. Tommy and I may drive somewhere to watch Thunder on the Mountain. The traffic to and home will probably convince me to stay home.

At the house party, I was up and down the front steps all night. I am not in that good shape now.

Would a Thunder Shirt help your dog or would she rather be in your arms?

I doubt dipping potato salad from the same bowl will hurt anybody. But, the gathering around the bowl and other food might spread the virus. Who knows? I just intend to stay clear of everything.

  5. I am happy that your neice delivered a healthy baby albeit premature. It is tough right now with anything to do with hospitals and visitation. At least you all can facetime/look at photos and know they are ok. Happy 4th, be as safe as you all can be :)

  7. My daughter's allergies are bad at the moment, and are affecting her asthma so she's been having to use her inhaler more than usual.
I'm pleased that mum and baby are both doing well, despite his early arrival.

  8. One of our summer holiday traditions when I was growing up in Iowa and when my 3 kids were at home was to churn homemade ice cream- yummy.I'll be solo again this holiday just like Easter and Memorial Day but, hey, I'm healthy and have saved a lot of $$ since I'm getting paid and doing much less. You are a much better mom than I was with food- I never worried a bit about my college aged kids meals. If they were home, they ate what we had and if on their own, they ate from the fridge or what they purchased with their money. DH and I paid for their college and spending money was what they earned. As for Bendryl. it hypes me up- one of the behavior analysts I work with told me if I react that way, it's usually a sign of ADHD! I am definitely on the hyper side.

  9. My ex's very large family used to hire a local park/stand and have a huge gathering which was mostly pretty nice - until I couldn't get my ex to leave because he wanted to continue drinking!

    1. At the lake the drinking is pretty much all night as well, whihc wouldn't bother me, but then they are loud so late, and then in the monring, everyne awake sort of tip toes around the people with hang overs. It's quite stupid.
