With Monday being an absolute scorcher, making BLT's with cool (but getting close to their prime) greens, the last roma tomato, and the bacon that's been hanging out in the freezer. We used up the last of last Wednesday's potato salad as well. We finally had spaghetti and meatballs last night, and into the sauce went the last of the cherry tomatoes. There's a portion or two of this left for DH and DD2 for Friday as well. This was Tuesday's dinner.
Wednesday it cooled way down after Tuesday's rain. I could have windows open and didn't feel bad about using the oven so I made a couple homemade flatbread pizzas. Remember that massive 5 # bag of mozzarella bought over a month ago? I needed to get it rebagged and frozen this week, but used a good 8 ounces on the pizzas. Other toppings were some of the bacon left from Monday, the remaining olives, an onion from a bag bought several weeks ago, and some cherry tomatoes bought the week before. There are leftovers for reheating tonight. I had two large carrots and a few withering stocks of celery that needed using. It was not soup weather this week, with Monday topping out at 95 F or 35C degrees, They did get put to use in a sort of ramen/lo mein dish. I steamed both after slicing, made two packets of the ramen, with only 1/2 of one packet of seasoning, and sort of stir fried it all together in a bit of soy and ginger. Wasted vegetables avoided.

bacon from freezer
1/2 bag of meatballs
DH and DD2 are on their own for meals, and I don't even care if they get take out if they use up the leftovers. The college kid is balancing both jobs so not likley to make it to the shower. I may just pick up a sandwich or salad on my way out of town and keep life simple. I haven't decided if I am coming back tomorrow night, or stay and see if DHs comes up on Sunday, or after work. It depends how many family members stick around for the weekend.. Any good useit up cooking in your house this week?
Oh yes, we used up several things this week. It's a good feeling to use up stuff and throw away the empty containers. Looks like you did a lot of using up this week too, that's great.

Club sandwiches, if made on nice think bread/Texas Toast type is one of my favorites! Today will be more using up of stuff and seeing what leftovers can be used up.
DeleteDon't worry about not following your meal plan. In my world mine is merely a suggestion.I plan every week, then I go off plan or way off plan. It just depends on my mood or what I find hiding in the refrigerator. (or if I even feel like cooking)

Yes, merely suggestions describes my meal planning. At least there's an idea to draw from. The shower was nice-being around some of the people was really nice. I had a bit of a snag in communication with my MIL, and I spoke up this time (not when guests were there), but I don't think it will change anything after 34 years of knowing her.
DeleteEarlier in the week, I had baked some split breasts, (bone in, skin on, my favorite) which I got a long time ago for $0.99/lb. They were huge, and we had the largest one left over. I fully intended to make some chicken salad with it later on the week, but when I went to do so, I saw somebody had already gotten to it! Meal planning? Ha. It's particularly hard because "Wanna' Be College Boy" (WBCB) is on his own schedule these days, no doubt due to being at sixes an sevens due to his campus closure. He rarely joins us for meals. That in itself isn't so bad, but he has a practice of cooking, say, the cube steaks I had thawing for dinner, leaving me to come home to find my plan sabotaged. Oh, he'll ask if I'm around before he uses something. But if I'm not, he'll go with the most usual answer which is "sure, the food in this house is to be eaten." I keep telling him there has to be a light at the end of this tunnel, but he is less able to see it than I am. Ah well...remember how slowly time seem to pass when you were 19 years of age?
ReplyDeleteI'm sure with no school, and If I recall, no job outside of your house, he's feeling the pinch of restlessness pretty fierce. My 19 year old on the other hand I think may have bitten off more than she'll be able to chew the whole summer, working two jobs. I think she's going to try and work out being able to get at least one day a week where she does not have to work, but it's in her court what she decides.
DeleteNo but I do have a fridgeload of veggies that need using up. I bought a massive head of romaine lettuce (biggest one we've ever bought) from our farm market about 12 days ago. Made 3 salads and barely made a dent in it! At least it is still as fresh as when we bought it, that is the difference between local produce and store bought produce. I think BLTs are on our menu next week (me without the tomato)
ReplyDeleteAs much as I like salad, greens do need to be eaten quick so good for your produce to last so long. I remember not liking tomatoes as a child, so just the BL's were my sandwich. Now I like Avacado as well on it, delicious.
DeleteI just cleaned out my very dirty fridge, to make sure I was using up everything, that limp celery will go into a salad. The two hot dogs will be hubs lunch. No waste.

DeleteI have cooled and frozen or just frozen the four huge package of chicken tenderloins that I bought so cheap at Aldi's two weeks ago. I told Tommy I was going to make BLTs and I suppose I ought to. I have about six pounds of chopped Romaine that is involved in two meals a day. I have 4 lbs of carrots to fix for us. I only have five tomatoes left, so tomorrow we go to a Farmer's Market to get more. All our lunch and dinner plans revolve around chicken breasts, Romaine, carrots, and tomatoes.

DeleteWe got to our vacation house last night, and I pulled together tacos (meat prepped & cooked, in the cooler). Now I need to go through & evaluate what's in the freezer & pantry & come up with a menu that uses everything. I noticed we have grilled burgers in the freezer, so those will likely become lunch on Monday (my parents are joining us, as they are picking up the kids & it's M's birthday). That fills in one gap, and means I can mark lunch meat & sandwich bread off the shopping list.
