I decided I just want to end August without much stress especially when it comes to meals. I'm not even sure what we will have tonight-perhaps will splurge and get take out Chinese after we get organized and before we load the truck with my daughters things. Maybe I'll throw something in the crock pot. I do want to pick up snacks for the road so we do not need to stop unless we really need a rest room break. Then, the week goes back to just the two of us, with DH working past 7:00 each night. We'll need a new meal normal. It was sure nice when he was off at 5:00 and we actually could have meals at normal hours and all at the same time.
With just me now eating leftovers (which was all last week since my daughter worked longer days so brought lunch to the school), and only two of us eating dinner, I should be able to cook once, eat twice. There are fresh items that need to be used up, mostly vegetables. I love the idea of soup, but I think it will be very hot this week, as is typical for the end of August, so perhaps a pasta prima vera or veggie filled pizza. I've got several packages of taco meat froze, which will work week for burritos, taco salads, or nachos, which we can eat on our own schedule. .
I'll probably just pull something out of the freezer each day, or out of a hat. After I use up the vegetables already on hand, I am looking forward to what might be available at the roadside stands for roasting. What are you planning for the week? Has anything changed, or will it change in your household as summer ends?

Summer has pretty much ended for us, as the kids are back to school.
ReplyDeleteWe will likely have our garden for at least another 6 weeks, or longer, if the weather continues. That means more meals based around seasonal produce.
Meals around produce sounds excellent to end summer.
DeleteSummer is waning, Autumn definitely waxing here in the PNW, and that has a role in menu choices. I still have more applesauce to make, and then want to can a batch of blackberry jam, so meals will be easy until I am finished. We had a slow cooked pot roast on Friday night, which was a treat. Tonight, I'm planning a chicken/broccoli and potato bake. It's quick, it's easy, everybody likes it. (Chicken breasts pounded VERY flat in a 9x13 dish. Top with diced potatoes and broccoli. Pour 1/4 cup melted butter--I use a bit more-- or olive oil over chicken, then sprinkle a packet of Italian dressing mix--I generally don't use these and make my own, but tonight I am using a packet. Bake at 350 degrees. I imagine you could cut out the butter or oil and simply use bottled or homemade Italian dressing) Grilled steaks will feature on the menu later in the week, as will apple turnovers. I have been on a bit of a chardonnay kick lately, which is quite unusual, as I tend to only like merlots. A chardonnay is as sweet as I can bear a wine. In any case, the chardonnay makes me crave chicken and mushroom risotto, so that' going on the menu a well.

DeleteSchool kinda starts this week, with a hybrid plan in place for my youngest-for now. She’s only scheduled to have 10 in person days through the end of September. However no one really believes we’ll make it past two weeks before we have an outbreak. We already had staff test positive and while I understand privacy laws, they never disclosed which building it was in and I find that to be ridiculous. She is old enough that I don’t have to worry about her learning or child care but I’m dreading the early mornings and the overall situation. I also don’t get home from work until almost 8 most nights so dinner is usually a cobbled mess of leftovers, takeout, cereal and the crockpot. JoAnn

DeleteTonight, I am having given-to-me meatballs, huge ones that are ready to cook in their own little pan. To that I am adding a couple of new potatoes and we will have Romaine and tomato salad with carrots. So, that is far as I am planning...lol. However, I do have cooked chicken breast, Romaine, tomatoes, freshly shelled peas and squash. Then, there are leftover peas and snaps and cooked carrots. We will eat well.

DeleteI did buy the gallon of shelled peas and the squash and tomatoes. But, I have gotten so much fresh and good produce. Nothing is on its last legs when it is given to us.
DeleteSummer in my beach area is winding down but I love late summer, fall and early winter. I am cleaning, cooking for frozen easy food to put in the freezer and trying to put some summer clothes away and get some early winter clothes ready. I will be having a knee replaced and live alone so need to be as ready as I can. Making up a lot of lists!

DeleteI feel like I am in a rut with meal planning. This week we are crazy busy with back to school and Bill's work schedule so not sure what I will be making. Tonight I made loaded baked potatoes and salad as it was something different. I kind of want to make a schedule like Monday is casserole/pasta, Tuesday is mexican, wednesday is crockpot, etc, but not sure if that is practical or not. We shall see. I do know that tomorrow I think I might go back to the farm market that my mom and I went to on Thursday to get a couple more melons as they were delicious!
