My Wednesday Pantry-Musings About Food

    As I haven't been cooking much, I've little to share in the way of recipes. Instead, I'll just write about random food things. I like food. I like some food a bit too much.  Maybe if I write about it more, less will need to go into my mouth outside of proper meals. Life has just been hectic. Well, work has been hectic. Life is just starting to feel open again and I am not going to begrudge business outside of work hours, but our house and the kitchen needs some TLC.

     We eventually ate last night. I started my version of lo mein at 6:00 but was still working while cooking. It's not really a recipe but a lot of veggies cooked with cabbage, then General Tso sauce, ginger, chili flakes, with noodles tossed in. DD2 is not big on meat so DH had some precooked chicken on the side. I'd have loved an egg roll, but none to be had on hand. I put the last of a bag of waffle fries in air fryer too because the partial bag bothered me every time I opened the freezer drawer. It wasn't a budget meal, but cheaper than take out. I'm spending a fortune on groceries again but have amped up vegetables.

     For treats I've been enjoying frozen Wyler's Italian ice. Eight in a box for a $1.00 at Dollar Tree and is a refreshing end of night treat. They are only 45 calories a tubie and satisfy that little summer weather craving I have at times.

     I haven't even ventured to Aldi  this month, part of why my groceries out so high as I have shopped the local stores. I am spoiled with the price of $3.49 12 ounce bags of fair trade coffee at Aldi-comparable in either store was $7.99 as best price. I went ahead and unsplurged, and for $5.99 bought a massive cannister of Maxwell House. Now this is a brand I bought a few years ago, didn't remember at the time of purchase, and I didn't like it very much. Well, made with an extra scoop of grounds and a splash of milk, it is doing the morning trick. I'll stock up on my next Aldi run though. 

     I don't know if it will be much of an Aldi run, but more an Aldi stop on our way to the cabin. We haven't finalized the weekend yet, but  plans are a bit wonky. DH works both Saturday, and a few stupid hours on Monday. DD2 is going with friends to another cabin, which has DH annoyed. I don't know why-he's only got the one day, and well, she's 20! It's much better if when he takes a weekend off, we can all actually be there for a few days together. We were talking food though-not college kids social lives at the peril of their dad. I'll connect with my daughter on what she is bringing or wants to  stop and get. I have some baking mixes so will make a desert of some sort, and no doubt have a lot of fruit and veggies and dips. I'm trying folks! 

      I'm going to miss my sisters BBQ on Sunday, but we did see everyone at the wedding and  earlier in the month after the  park clean-up. For those in the US, who's planning any  summer kick-off events? What foods might you be making or buying?

  1. I'm heading into the weekend pretty tired, and M is going to be on a mini trip with a friend. I'm happy he's going to be able to connect, as they haven't seen each other in a few years due to COVID. As a result, our weekend will likely involve a lot of carbs, as M eats Keto, and we have plenty in the freezer that is not & needs to be eaten up.

    My goal is to make some creative freezer meals. And, rest this weekend. I haven't been sleeping much, so that's on the agenda!

    1. Getting caught up on rest is part of my pan as well. Today is rainy and about 25 degrees cooler than it has been. If it is like that all weekend, we might go to lake on Friday, get some cleaning and organizing done, and be back Sunday afternoon.

  2. Sounds like you will have a nice summer kick off! No special plans here. We're doing the ethnic take out week, one of the little secrets is ordering lunch specials instead of waiting until dinner. Most places are half the price for the same amount of food. It's actually been a cheap week for us!

  3. That's a heck of a difference between the price of coffee at ALDI and your regular shop isn't it! We have an ADLI but it's about 30 minutes from here, so I stick with LIDL if I'm being "sensible" (which I'm not always)!

    1. Once I start back to the office a couple days, I'll time my Aldi stops for passing by so no special trips to Aldi.

  4. ISn't it funny how you go and buy a large can of coffee that you drank years ago that was just fine and now after drinking better coffee's it is just like yuck? I drank that and liked it? We have our oldest and her kids coming in Friday for 5 days so things will be rocking here and I am panicking about getting the sewing done so I don't have to sew while they are here.

    1. I got spoiled with flavored beans, and now the bulk cannister stuff tastes very watered down, and if I add more grounds it gets bitter.

  5. Hope you have a wonderful weekend getaway! Even just a day away will be a nice break.
    I'm thinking of grilling burgers, hot dogs, brats, corn on cob etc, and maybe some watermelon and cantaloupe. Or maybe I'll have dh smoke a brisket, but we'll have to see what the weather will be like.

  6. We do not have anything planned for Monday. However, I am going to cook a rack of ribs as it stands now. I will start cooking like I did for Easter, cooking things for the next few days that will make a meal we want and then most of it will be leftovers for that one meal.

  7. I'm a lover of freezies (as we call them here in Canada), even though they are just frozen sugar water, basically. They feel like a sweet treat!

    My city/province has just opened up hugely and now we can dine in restaurants again, and have up to 6 people indoors visiting! I'm so excited!

    1. We call them freezies too-this particular brand is Italian Ice and they taste a little more cocktailed if that makes sense-less koolaid. Enjoy your restaurant meals.

  8. No parties for us. We are re-doing the landscaping in front of the house. DS2 & family may come out so I'll cook something. The kids are little so they'll eat chicken strips or mac & cheese or burgers. Mommy is vegetarian so salad for her and the guys will eat burgers. Not too exciting.

    1. This is less party and more getting stuff done-cleaning sleeping area in the loft of the garage after it has been closed all winter, weeding, getting dock in, so that we can enjoy the next three months.

  9. No kick off event. Got the area near the road on our planned build cleared/tree removed so the power pole can go up. Hopefully our building permit will be approved by the end of this week, but I'm not holding my breath. Meanwhile, there's still loads of culling/purging/paring down to be done.
    Meal plans still revolve around trying to clear out the freezer/pantry. Believe me when I say this is quite the task. How it got so filled up in the time since we moved here is beyond me! Dinner tonight was homemade meatballs served over mashed potatoes with gravy, and green beans. I am planning on taking some steaks out of the freezer for grilling. Cucumbers are on sale at a local store, so I will make a cucumber salad as well.

    1. Ours is less an event, more open up the parts of the cabin property that aren't year round. I agree I need a day to not think work.

  10. I've never heard of a summer kick-off, over here "kicking off" means getting into a fight, I hope the US version is something completely different! xxx

    1. Haha! Kick-off here means start of or launch-unless of course I am using it wrong for decades. I'm sure we will have some grumbling but no fights as we work this weekend.

  11. I've been really busy so am looking forward to the weekend although I'll probably be making a home visit Saturday. Our fiscal year starts 7/1 so that means all cost plans have to be ready and service authorizations sent out soon. I still enjoy working but I am contemplating cutting my caseload in half. I think I've been on this Mediterranean diet long enough that I'm really not craving any food. I did see a video on corn bread salad and it looked good-I might make that from scratch if I get together with Sis or my daughter/famiiy.

    1. That will be a change once you start hoe visits. Our fiscal year is also June 30 so June, on top of all else, is always busy.

  12. Try adding a generous "pinch" of salt to the grounds when you make your M.H. coffee. It helps with the bitterness. Ranee

  13. Not having a good taste about coffee, I am always interested to hear folks comment on coffee types. For me coffee tastes like coffee, but many fine folks tell me there is a difference. Any comment on Folger's?

    1. Folgers is about the same as Maxwell House. It's coffee, but nothing more than that.
