I didn't menu plan but made menu options. Work kicked my butt Tuesday to Friday, but happy to have three days off- with others having tomorrow off too. Hopefully that means my email will not explode. Here's what we ate.
- Sunday: A single cool day so I through stuff for pasta fagiole soup in the crockpot. DH had a grilled cheese too. Loads of leftovers were eaten through the week.
- Monday: Cheese and bean enchiladas, rice and corn
- Tuesday: Fettuccine with tomato sauce
- Wednesday: General TSO chicken, ramen, mushrooms and broccoli
- Thursday: spicy rice and potato tacos
- Friday: ate out
- Saturday: people were at different gatherings. I made doubles of some things for the Lake in Sunday. Broccoli salad, chips and dip, and brownies, Rice Krispy treats, seasoned popcorn. Everything was delicious!!!
With a new fiscal year, things start with a bang at work. I don't know what we'll have what day but options will include:
- Taco night- again! Maybe fajita's instead
- Hamburgers, old fashion hotdogs
- Rice hotdish
- Grilled chicken sandwiches
- Stir fry
- Homemade Mac and cheese
- Spaghetti and meatballs
- Sweet potato hippy bowls
I could stray from this list as well. I've whined enough about cooking apathy, but I'll ask the girls to help too. It's the ideas that get us all stuck. What's on your plan? For US readers, are you doing anything for the 4th?

ReplyDeleteSunday I am making a meatloaf I have meant to make for three days. Tommy will chop and cook two packages of ground beef. I will cook a sheet pan of vegetables to eat for several days. On Monday, I will have hamburgers, slaw and homemade baked beans.
I do have the sparklers, our big $1 splurge on fireworks. The fireworks started on Saturday night but were only soft booms in the distance.
The kids had sparklers at my sister's. Pup hates the booms.
DeleteWe're staying home the next two days and grilling and relaxing. We have a pretty good view from our backyard of the fireworks so no need to go anywhere.

ReplyDeleteI love to cook but I share your cooking apathy. Deciding what to make is where my apathy resides, more so than the actual cooking.
My salads were hits. I think more salads are in order as they'll take a couple days to eat. We'll just go basic. I'm trying to relax.
DeleteWe're planning lots of garden related items - steak with chimichurri sauce, caprese salad, grilled vegetables, burgers & hot dogs, salads, watermelon/feta/mint salad, blueberry/strawberry cake, etc.

DeleteHubby is hauling for the Amish on Monday. In exchange the one is coming over to help finishing cutting the slab wood for the wood stove. I will make ribs, use canned coleslaw and probably salad as the lettuce is going to start bolting on us. We can see fireworks from two different places from our home
ReplyDeleteWe had firewood delivered yesterday to the cabin. We share the cost. It's purely entertaining camo fires, not heat, but it was expensive.
DeleteYour lake trips always sound so fabulous! To me, there is nothing I enjoy more than chilling on a shaded lake in a lawn chair, looking at it, and maybe occasionally taking a swimming dip. I consider lake trips to be the best vacations ever! Yes, we have the Gulf and it is beautiful, but the beach can be kind of stark, and I get sunburned easily. Give me lake shaded trees any day! ReplyDeleteI relaxed a lot. My cousin in laws kids are a fun age and took a liking to me. I got soaked with cuddles after they swam.
DeleteWe have tons of food right now. My son brought a lot home from a grad party that he went to, we cooked out yesterday and hubby bought a boatload of Chinese on Friday. I have some deli roast beef i need to freeze for a future quick meal. I’m not cooking a thing til that gets eaten down. I was off Saturday and Sunday but work the 4th. Double time and half and we’ll be dead, so that’s fine with me tbh. Not sure what we’re doing today. There’s a cute arts festival nearby, but daughter also asked me to go fishing with her ( she fishes, we bask in the sun and eat snacks) but husband just asked if we wanted to go into the city, which would be fun since it’s Anthrocon. Something Pittsburgh is pretty unique for-Furries! People who dress up in fur suit have their convention here yearly but this is the first since Covid. They wear their costumes all over town and for whatever reason, Pittsburgh just embraces them. So many options! JoAnn

DeleteTonight is cottage pie with leftover roast and gravy from a slow cooker pot roast last week. We grilled some nice petite sirloin steaks on Friday, and I planned to use the leftovers in quesadillas later this week, but the leftover steak mysteriously disappeared. Our final grading happens Tuesday, at which point we can get occupancy for the new place, and the move will happen incrementally--until movers come for the furniture. And, as far as that when that will happen, I have no idea, as I can't schedule them until we have our occupancy permit. All this to say, I have no idea what I will be preparing for meals beyond tonight! I'm sure baked salmon, meatloaf, baked chicken and pasta with ground beef will find their was on to our plates, as those are things I have in the freezer! Enjoy your long weekend!

DeleteMy plans for the 4th include doing laundry and more laundry from our beach vacation this past week. We got back home around 10:30 last night. I slept until 930 this morning. Have done an Aldi run for milk, produce, etc. Tonight I'm making ham and cheese sliders and roasted green beans and fruit. Tomorrow Bill is working so I'll do hamburgers, macaroni salad and maybe French fries for the kids and I. Other than that I have no plans.
