Meal Wrap up And Onward

     


      No one can complain if no food in the house, but we all can complain about preparing it. I did a big shop, though will still need fresh food and will keep in with the loss leaders if found. I just can't think inflation or I'll get bummed like everyone, and concentrate on eating as well as we can with simple ingredients. I won't bother showing the plan. It was merely suggestions anyway. Here's what we ate. I didn't include alternatives my daughter ate unless it was the bulk of our meal. She also was suffering with mouth pain, so are very little beyond soft food. 

  • Sunday: Curry, DH leftover burger
  • Monday -   Orange chicken and rice 
  • Tuesday- DH wasn't home so we had girls dinner, bits of leftovers, fruit, whatever we found. 
  • Wednesday-Pasta fagiole soup 
  • Thursday- street tacos 
  • Friday- shell pasta hotdish or shell macaroni and mock cheese (squash sauce). I had a chicken taco and cake at grad party.
  • Saturday-air fryer fries, sandwiches, nibbles at sister's 
     This week, I'm feeling uninspired again to figure day to day so just going with a list of multiple possibilities. 
  • Chicken and spinach Tortellini in white sauce
  • Spaghetti with Zucchini
  • Chicken ranch wraps and potato wedges
  • Cottage Pie
  • Black bean and sweet potato loaded nachos
  • Chicken lo mein
  • Homemade pizza 
  • Cheddar bratwursts, cucumber salad, tuna salad
  • Patty melts and potato salad
    I think it'll be a true scorcher week. Thunderstorms over night, then hot and humid days. Heavy food might not work and there's loads in my suggestions, literally. Maybe I'll think ahead and just prep for big salads everyday. Ideas? 
     Where not specified, there veggies on the side. I bought more popcorn for snacks, but also veggie straws, and some snack crackers. I'll make some hummus this week too. Let's face it- some nights will be girls dinner.

  1. It all sounds delicious, Sam. I need to make some hummus for this week too. I’m making lemon pepper chicken for dinner tonight, rice will make a good side dish with it. I also have Mac and cheese on the menu this week and bought some velvetta for that to make it extra creamy.

    1. He doesn't say it, but I think DH is getting tired of rice, but the three of us prefer to other sides. Now, he'd be very nice excited for your Mac and cheese.

  2. Your meals sound delicious. I am drowning in zucchini so that is going to be on the menu multiple times this week.
    It's rainy and cool today but is supposed to be a scorcher here this week as well so we'll definitely be eating lighter.

    2. It is a good problem and no I've never tried to freeze it. I think it would come out mushy. Loaves of zucchini bread to freeze are my back up. lol

  3. I can’t remember the last real meal I cooked. I did spend $130 yesterday and have gone back to the basics in my plans for the week. I want to make halushki, pasta salad and Buffalo chicken dip to have on hand. I bought a rotisserie chicken for a chicken and veggie meal, ham potatoes and green beans in the crockpot, tuna noodle casserole. Meals that will last a few days but also things to graze on. I work M-F this week and after Monday it’s up into the 90’s again. Might throw some frozen pizzas in tonight with extra toppings. We also have fundraiser subs to eat and I picked up Sam’s Club broccoli cheddar soup which is an excellent Panera dupe. Loaded baked potatoes are a nice option too. Whatever it is, I need to watch my portions. I’ve been eating way too good lately ;) JoAnn

    1. I too need to back off portions. Hot weather has me skip meals then over compensate. I like back to basic meals. You have a busy work week.

  4. I get the too hot to cook and wanting lighter meals.
    We are in the dog days of summer. It is hot, very humid and kind of miserable here. Now is the time for me to start doing what my grandmother did and do my "big" cooking one morning a week so everything can be refrigerated, warmed and reheated as needed.
    I am also very thankful TheHub likes salad dinners.

    1. I'm throwing chicken in the crockpot today to use all week in various meals. Salads and wraps just might be showing up more than my list shows.

  5. We are planning for a couple of salads (as sides) this week. M needs protein, given his eating restrictions. We're having caprese, which is chopped garden tomatoes, fresh mozzarella, diced basil, olive oil, salt & pepper, balsamic as optional. We'll also have Greek salad - crumbled feta, chopped tomatoes & cucumbers, olive oil, salt, pepper and some fresh garden herbs. With both, you could have optional protein that you could add.

    1. I'll check that I have your ingredients as they sound good. I haven't shipped out of town and not good options for fresh mozzarella that isn't as much as a mortgage, but that really sounds good.

  6. Sing it sister! So many times I look at the fridge and larder full up with ingredients but feels too lazy/hot/tired to do the time to prepare. This is when I am tempted to call Pei Wei or something like it.
