Last week ended up being an odd week meals wise. I'm recycling some ideas for the week ahead. Here is what we ended up eating:
- Saturday: I cannot remember
- Sunday: Goulash
- Monday: Brats, Red Beans and Rice
- Tuesday: Pizza
- Wednesday: Leftovers
- Thursday: Chicken legs, mashed potatoes and macaroni and cheese (Blizzard Day-DH went and bought Bob Evans mac and cheese when he ran for bread, fruit and milk
- Friday: DH leftover chicken in a sandwich, DD2 with friends, me at DD1's
- Saturday: Chicken noodle soup, loaded with vegetables, bread maker bread
- Tonight-Show choir banquet
Household and groceries are running a bit higher than I'd like, already at $332 for the month. Considering the huge haul I did on paper, cleaning, and personal care items, I'm just going to have to be satisfied with going over. I originally thought it might be a $350 challenge month, but at this point, I just aim to stay as close to point with the $400 per month average. Here are options for this week.
- Chicken Alfredo over penne pasta
- Chicken fried rice with vegetables and a vegetable ramen dish
- Burritos, with beef, beans, corn, and salsa. Taco Rice, potato oles.
- Crock pot pasta primavera
- Pork loin, mashed potatoes and corn
- Tuna hotdish
- Leftover night
I am bringing a large egg bake to my sisters for Easter brunch and I got a good deal on sausage for $1.26 a roll and will need two. I'll still need to buy sour cream, cream of mushroom soup, cheddar cheese and a couple dozen eggs. Easter will be low key with church then brunch, and home for the bulk of the day. We have decided to pass going to my BIL and SIL's. They have hosted for the past four years, skipping last year because they were on vacation, so I ended up just having a smallish lunch for DH's mom and a cousin. While I certainly appreciate that they offer to host, she also invites her side of the family. They are lovely people, but if I am going to spend a holiday with extended family, at least I just want it to be my own.
What's cooking in your home this week? Are you hosting Easter or any Passover meals? I certainly would have thought with the late Easter, there would be lovely spring weather. At this point, I just am hoping we are not in snow boots.
I cooked a lot last week(planned overs)so there will be minimal cooking this week as we eat up and make room for the Easter ham, mac and cheese and deviled eggs(and whatever else gets fixed next Sunday)in the fridge.
ReplyDeleteWe were suppose to go to eldest's GF's parents in Jersey but that fell through so we are staying home. Not inviting the freeloaders(Hubs' relatives)over this year. We'll have a quite family meal and then I'll make them all go outside and work on the yard. lolz
I like the idea of a quiet family meal. My sister's will be nice-we have a lovely brunch, where all the sibs contribute (some of the next generation does as well, but most do not), visit a little, the kids will look for plastic eggs filled with treats and change, and we should be home by 1:00. With the last snow, we won't get any yard work done, but hopefully nice enough for a walk by the river, then more stuff at home to be done.
DeleteI will be hosting two of my kids, one grandson and my sister and her significant other. Ham (in the freezer) I have every thing else here. I'm going to make a coconut cake.
ReplyDeleteHi - I'm back and thank you for your thoughtful comment on my recent post. We recently had a big family meal so Easter is purposefully going to be quiet this year. I love me some peace and quiet as long as the weather cooperates! Your previous week's meals sounds like there was a lot of rushing on going around - especially when you can't remember what you ate lol! Course, I'm the same way - I couldn't tell you what I ate yesterday!
