Menu Update for a Winter, I Mean Spring Week

It is down right cold outside. March came in like a lion, and went like a lion. April came in like a lion, and apparently wants to go out like one just like March. Meals need to be easy, hearty, and reheatable. It is tech week for DD2, and the play, Into the Woods, will have shows Friday, Saturday and Sunday. She has several late and long practices. I need to go grocery shopping later, and will be charging it to May as I was doing some book keeping over the weekend and wanted to end April. With Easter treats, we ended the month at $456, so no where near the under $350 challenge, but still not bad. Considering we started the month spending nearly half that in a single day and have many items that won't need to be bought for months, I'm OK.

 I'd love to see if May could be a super challenge-dare I say $300? That's crazy talk, but yet, since we will be needing to eat down the refrigerator and freezer before clearing it out, I have to be very careful to only buy what we will eat. I'm also allowing myself to use take out and deli while we pull apart and then put the kitchen back together, but am going t really challenge ourselves to keep our eating out and entertainment budget low. Considering we already have a slew of grad parties, both meals and entertainment, that should be very doable. 

  • Chicken noodle soup with extra vegetables and egg noodles
  • Take out Pizza (with coupons)
  • Deli chicken dinner-Tuesday special
  • Tacos (with coupons)
  • Sub sandwiches-Sub kit, sliced cheese and French bread plus tomatoes and greens
  • Leftovers
Not a very dynamic menu, but just wait until my kitchen is back together! Actually, as between now and the middle of  June we are so busy, we'll have a lot menus like this. hopefully though, on nights I do cook and even when we succumb to tke out, there will be leftovers to pull double duty.

  1. You did well - it's been a long month! I need to do some menu planning (yes me lol) as we are on a bit of a diet and I've got no ideas. We blew the budget in April - found some good deals I didn't want to pass up yesterday - hoping for a lower May!
