Feeling Good Monday-Even When I'm Not

      I should feel relaxed with getting an extra day where I don't technically have to work (though I'll be logging in between 1 and 4 minimally to hit a 4:00 process time for approving payments.) With my cold and the furnace running constancy because it has been so cold, I am both congested and parched. Between my internal temperature being on full steam and  drinking so much to stay hydrated, it was a most unrestful night of sleep. We all must carry on though right. I'm on coffee now, but will switch to a ginger and lemon tea in a few hours. The high is -1 F today, but promises of double digits by Wednesday, and a weekend that might be close to above freezing is something to look ahead for. Pup's keeping me company as always. 


     It's really good though to have this extra weekend day then to  pamper myself. I'll have the leftover portion of the weird, but tasty chicken vegetable stew for lunch, and my big splurge at Aldi last week was Gyro Kit. We never have enough room in the freezer so it needs to be eaten within seven days of being in the refrigerator, so tonight will be perfect. I'll make some air fryer fries as well and I have cucumber, onion, and tomato to go with the meat and tzatziki sauce filling. Yum! I've been hungry for Greek food since Hawaii Plan shared her birthday take out dinner last weekend, and gyro's is about the closest I can get without a drive to the cities. I might normally make cookies when having a third weekend day, but with some of the cake left, no need for other sweets in the house. I got DH his PB cookies last Wednesday too-no more treats are needed. 


     I just menu planned yesterday, but already think I'm going to change the rest of the week and add soup at least one night. I could take today to do another no knead bread, but I'm sticking to the plan today and tomorrow since  we have hot dog buns that need  eating. What's nice about both that bread recipe and working from home, I can make it and use five minute breaks to do the turning of the dough steps, or try a different version where the first rise is 12-18 hours, then only needs one final rise before baking. We are fortunate to have all provisions we need for meals in the house, and I am fortunate to not have to go outside other than to get the pup a good walk. I sure hope Covid has taught all of us that normally work outside the home, that it is not  OK to go to work when sick, and not OK for employers to demand workers come in or lose pay, but to some sort of sick time to support their employees being able to take a day or two to get better. Sadly, I don't think that is happening even now.


     Besides getting my craving sort of satiated with supper, I'm going to to do a couple other self pampers. I've just heavily applies this exfoliating foot mask. It's nice to do during the day instead of overnight as I cannot stand anything on my feet when I sleep. I wear slippers or slipper socks. The direction are to heavily apply and let dry, then keep on for 8 hours, but my feet are so dry, I think I'll put another coat on after four for a double treatment. Hands are a tougher thing to treat since I'm constantly washing them all day, but I'll do a similar thing with a hand cream before heading outside, and hopefully the warmth of the mittens will help the cream soak in-then, I'll file and paint my nails, something I have not done since Christmas Day. 

     Otherwise, my day will be folding and putting laundry away, some work time, perhaps YouTube and a little cyber exploring, maybe a book. I hope your week is off to a good start today and you and yours are staying healthy.

    1. We've had before-the meat is tasty, but very processed, no mistake about that! One ore than fills me up, and we don't use as much meat as they call for, but I add tomato, cucumbers, and onion. with sides like fires, olives, hummus and more cukes, easily enough to feed five people.

  2. When the temps are negative I wouldn't worry about having room in the freezer. Heck I just stick stuff in the garage in a cooler (or even outside) if I'm going to be using it the next day. One of the advantages of winter I guess - the beers are always cold! Hope you feel better soon!

    1. I only have a couple siders right now, and not a fan, but now I think an ice cold beer sound so good and a brewery trip this weekend for a few crowlers is on my calendar.

  4. We are waiting for round 2 of the big snow. They keep changing how much we will get. We were supposed to get 3 inches this morning but got maybe 1. This afternoon and tonight they are saying 6 inches. I'll believe it when I see it. I have a new recipe in the crockpot for white chicken chili and it is making my house smell so good! Speaking of food, I am curious what you think of those gyros. Might be something that I look for next time I go to Aldi. Bill loves gyros.

    1. I hope you post your recipe. We got white chicken chili back in December as part of take out, and was not thrilled-there was no creaminess, just spicy broth. We like the gyros-but be prepared the meat is highly processed, so it is an occasional treat-once every couple months. We haven't had since right after NEW Years when our daughter was hone.

  5. I wouldn't venture outside in those temps! We had a very heavy snowfall--14" in total. It started Friday, and didn't stop until about 11 p.m. yesterday. Now, it's 38 degrees Fahrenheit, and the snow melting sounds like rain. The snow meant I was home on Sunday, so Valentine's Day dinner was a rib roast I had tucked in the freezer, with roasted carrots, green bean casserole, and mashed potatoes with gravy. For dessert, I made a white cake, and made it to four layers, frosted it with Chantilly icing with raspberry syrup (from homemade jam) between the layers. All in all, a great meal! The cake actually looked gorgeous, as well as being delicious!
    No idea what meals will occur for the rest of the week. DH brought some packs of fresh ravioli home from Costco, and there are 3 left...takes 2 to feed us all. I also have a pound of ground beef in the refrigerator. The freezer is packed with meat, but the plans will change based on weather. If the roads clear, my neighbor and I spend this week doing a yearly event, so I'm not home much. The pantry challenge, however, is back on track!

    1. I forgot i bought some fresh spinach and cheese ravioli as well, and a pack is enough for the two of us, if we have a side veg or salad. Your cake sounds much more special than my cupcakes with picks tucked in!

  6. Let us know how the gyros are, it's been a long time since I've had a good one. As cold as it is there and everywhere else it got hot here over the weekend. I was hoping we'd get a few more weeks of cold since it's so rare here. I did a home spa day last week, it was so nice. We all need to do things like that for ourselves more often!

    1. We've had these several times and are good, but proceeds. Don't be expecting restaurant quality, but adequate for a nice fix. We'll get a meal plus lunch on Thursday for the kit. I did a second coating of the mask. My feet are so rough, I will need multiple treatments before sandal weather.

  7. Greek food is a top favorite here! Yum. We just finished making chocolate cupcakes with chocolate buttercream frosting for Sam's birthday tomorrow.

    I'm getting ready to plant seeds & still need to work out. I've already cleaned the house, so at least I've got that behind me. :-)

    1. He is a good companion! I have so many places on my travel wish list and Greece is one. It must be an easier place to go to (non Covid) as I see so many UK bloggers and Vloggers with almost annual Greece trips. I wonder if that will be the same after Brexit.

  9. I read that a doctor recommends not all hot drinks. He said to alternate ice cold drinks with hot drinks. I don't know since I have not tried it. My congestion is a lot less since I had the pneumonia shot. It helps with head congestion. Have you had one of those?

  10. We just tried those Gyros about a month ago. They aren't bad and having a cucumber shopped up for some crunchiness really makes them taste fresh. I've made my own previously, but for something quick and easy, these are pretty good. Even my husband approved. We woke up to -30 degrees today and reached -2 with full sunshine. Looking forward to the heat wave this weekend. Maybe get to 32 degrees. Hope you get feeling better soon. Ranee

    1. They won't replace a Greek restayranr, but quick and easy they work. I use slices of cucumber, tomato, and onion. Yes, the weekend looks promising.

  11. The weather turned out to be not as severe as predicted but freezing rain is falling now. We closed early today thankfully, and I’m actually getting paid right now as I sit on my couch, blanket on my lap, laundry in the washer, dishes done, and answering final Jeopardy-who is August Wilson? A Pittsburgh connection! I’ve had the gyro kits before and they aren’t bad. I’ve been keeping up with my vow to take better care of myself this month and my husband even commented that I look like I lost a little weight. Hope you feel better soon, but if not you should probably consider getting a Covid test. A lot of people say it’s similar to a head cold/sinus infection. JoAnn

    I'm glad the gyros are back at Aldi. They are a quick and tasty meal, and sometimes that is good enough.

  13. I hope the gyro is good enough to buy again. That is how I always rate any prepared food. If it is good enough that I will buy it again I consider it a success.
    Pup is adorable.
    I have been trying to do some serious foot treatments, putting heavy foot cream on in the morning after I shower, then wearing thick cotton socks. It seems to be working.
