Menu Plan/Take Home Treats

     Friday night when we got in, my college daughter was hungry. Meals on Friday were leftovers from our hotel fridge, instant oatmeal, and yogurts. We used items from the sparse breakfast offerings, no hot buffet yet, but hit or miss. She had one of their tiny prepackaged muffins after the zoo, but it was then nearly 4:00 when we ate at the airport. At 9:30 our time, she made herself pasta and jarred sauce. I'll need to use that sauce this week in my meal plan. I baked cookies yesterday and chickpea veggie masala for lunch, both of which will go back with her along with a few other raided kitchen supplies. This past week, the girls and I had Mexican, Pot Belly sandwiches, Indian, and pub food. We ate leftovers one night. Lunches were happenstance. My body is telling me to eat healthy this week.

     I asked DH what he ate all week. He finished off anything from the refrigerator that needed eating, a tub of Sam's Club chicken salad as sandwiches or alone, canned or frozen soup, eggs, oatmeal, etc. for breakfast but didn't seem to cook a real meal at all. I made a stuffed chicken dish, (spinach, cottage and mozzarella), along with roasted herb potatoes, and sauteed zuchini. He was happy for a home cooked meal. I've asked for his ideas so hopefully this week will make him happy. 

  • Sunday: Chicken noodle soup, heavy on chicken for him, with grilled turkey and cheese sandwiches (I'm starting soup early and will send some back with my daughter)
  • Monday: Homemade, baked macaroni and cheese
  • Tuesday: Tacos with all fixings
  • Wednesday: Goulash ( will use up pasta sauce, and more tomatoes)
  • Thursday:Breaded herbed chicken, mashed potatoes and gravy
  • Friday: Fish and au gratin potatoes, coleslaw
  • Saturday: Take and bake or homemade pizza

     I'll need to buy milk, bread, eggs, fish and more fresh fruit and vegetables, but not too much else, other than a pizza. I'll try and eat both smaller portions and fill up with vegetables as best I can but he deserves some comfort food of choice. Saturday could change if pizza is his works Saturday lunch. So that's my plan. It course it could go belly up and the picture below will be reality. What are you eating this week?

  2. Sounds like you had a lot of delicious meals. That is one thing I miss about traveling...someone else cooking.

  4. Food planning is difficult here because you don't know what will be available in the market from day to day, or if they have it what the prices will be. Lately I have been having a lot of default meals of frozen vegetables with brown rice. I might make curry tomorrow, but let's face it, rice and vegetables is easier. I do make fancier things when I have company, but with Covid, that has been a while!

  5. Friday night in our house is always something like pizza. Anything that's easy and doesn't need preparing! Arilx

  6. I love that pic lol. I sent it to my mom friends and work friends and we all got a kick out of it. Last week was a sh¡t show, so we either ate really well or really bad. Crumbl cookies just opened on Friday in our area too so that doesn’t help lol. I have no real plans for the week yet. I’m off Thursday and plan on making some bbq pork, pasta salad and brownies for DD’s boyfriend’s family as they are dealing with a close relative passing. Work is only getting crazier so im going to have to figure something out or we’re going to eat rotisserie chickens and McDonald’s five days a week with pizza on the weekend. Im sick of the crockpot and im never home at a decent time to cook. I’ve lost the concept of a hot meal in my life. Chicken breast is no where to be found around here which really hurts my meal planning. And things are only going to get worse. JoAnn

    1. I was fortunate to get a massive package of chicken breasts at Sam's last month and with just the two of us, it'll stretch all month. I'm sorry for your daughters bf family. Loss is hard.

    1. It's silly, but in hindsight for work lunches, not a bad idea actually. Toss a piece of fruit in the bag too, and voila.

  8. No plans as yet, in fact supper tonight will be whatever if available in the fridge as I recently returned home from a longer than expected stay at my daughter's home. I couldn't get out of the back alley due to the amount of snow that fell.

    Tomorrow may be homemade pizza, and sometime this week I want to make mashed potatoes and meatlof. I'll make extra potatoes so I can use some some frozen leftover roast beef that I minced up for a Shepherd's pie. I picked up fresh veg before I let for my daughter's so I suspect taco salads will be on the menu too. I guess I do have a partial plan...which is so unlike me. :p

    1. I was thinking homemade pizza for that sauce, but then used the mushrooms for soup. I do have cooked crumbled sausage, plenty of cheese, so could still go that route. My plans are suggestions.

  9. Love the photo!!! I went of cooking, indeed, eating, last week. All I wanted was to sit in front of the t.v. with a glass of wine, some cheese and crackers. But, the troops must east. I made cottage pie one night with leftover sirloin tip beef roast from Sunday, which got reheated the following night. Three meals from one! Then a spaghetti with a ground beef sauce on Thursday, which was baked in a Pyrex dish last night. The night I took Neighbor Girl to dance class, (Weds.) I made grilled cheese and tomato soup for all who wanted when I returned. Beyond that, I don't believe I could have cared less. Today, I made myself snap out of it. There's a bacon wrapped chicken and carrots roasting in the oven as I type this. (Pacific Time.) Tomorrow will have us using those leftovers. For the rest of the week, I've planned fish sticks (hiding in the freezer) with coleslaw and oven fries, tuna casserole, and baked fish, (tilapia) for Friday. I'll also bake a blackberry pie at some point, (berries uncovered in the freezer), and some brownies for snacks. I also made some Rollos candies today, with an Easter bag Neighbor Girl's mother brought me from work for taking care of her daughter. I am really still not at all excited about cooking/feeding the family.

    1. I enjoyed cooking this weekend after our break, but I'll be back to bored with it by next Monday. Red wine and the television sounds good to me.
