Shake Up My Meal Planning-Please

 Normally at this point in the year, the snow is low enough that we can step out on the deck and use the grill a bit. Not this year, so the crockpot will be used for the week. However, chicken and some pasta dishes get over cooked if I put it in before I leave for work. DD2 is off school this week. I'm going to put her to work a couple days if not making supper then at least prepping and getting things put in the crock. Meals Sunday were simple-leftover Chinese, soup, salads and sandwiches, tuna salad made form leftover noodles from Friday. I've got leftovers for my lunch and DD2's lunch today. 

With both my splurge shops and DH's top off shops, we are loaded with groceries so meal planning shouldn't be difficult. I spent an hour cleaning out the fridge and freezer on Sunday and a good look through the pantry so I knew what we have. Wednesday night  I'll pack some breakfast foods, sandwiches and snacks for the four hour road trip-each way on Thursday to our daughters possible college. Most likely we'll have a pizza lunch as the pizza café on campus makes delicious stone oven pizza, but hopefully just the one meal out.

I'm feeling in a rut again though, despite DD2's help. Noting the ingredients used below, I'd love you all to weigh in on alternatives. I'm out with the volleyball girls on Wednesday, but I need reheatables for DD2's lunches so don't want to plan any leftover nights. Here's combo's I came up with

  • Turkey meatballs, gravy, mashed potatoes and carrots
  • Brats, spicy rice, and corn
  • Beef, Been, and cheese burritos with rice, tomatoes, and avocados
  • Vegetable noodle spaghetti and marinara with garlic bread and salad
  • BBQ chicken, sweet potatoes, and green beans
  • Chicken and noodle hotdish topped with cheese and bread crumbs and mixed vegetables
  • Chicken tenders and French fries
Boring, but gets us through the week. If I need to stop for more fresh vegetables, I'm happy to do so. What would you make of the ingredients above? Shake up my menu, please!

  1. Cottage pie, Swedish meatballs or taco soup with ground beef. Chicken lo mein with the chicken. I use an adapted version of this recipe: https://www.allrecipes.com/recipe/233446/lo-mein-noodles/?internalSource=hub%20recipe&referringContentType=Search
    (I double the sauce, use fettucine noodles, and use sesame or peanut oil instead of vegetable oil.)
    I love reading your meal plans! We have similar kitchen habits, I think. Any word on the oven?

    1. We just can't decide if we should fix or replace-but then if we replace, do we just go ahead an move forward with the flooring and other appliances that are on the list? The funds exist-it just was not perhaps our priority on the house because we need the new door and the bathrooms are pathetic. Choices, choices.
