On Friday, DH ran to get a bite to eat at the Coborns Deli and ended up picking up an 8 pack since a piece was $150, and the sale was 8 for $5.99. Then, she had one odd piece and through that in, resulting in him stopping home and putting seven cooked pieces of fried chicken in the fridge. Why he couldn't just eat at home anyway since he obviously had time to wait a the deli counter and go home is beyond me. This was discovered after I came home with a large grocery haul on Friday ,including a pack of four chicken legs. We ate some of the chicken Friday with instant mashed potatoes, leaving enough for DH on Saturday while I was out with my sisters. The plans changed as two BIL's had Wild Hickey tickets, and another didn't want to drive up to "the cities" as he associates our town, and the last was up at his family cabin. DH decided he didn't want to hang out with a bunch of women so stayed home and watched college football.
Sunday meals were odd, but I needed to deal with the chicken I bought, though we weren't keen on chicken for another meal. I cooked, cooled , and deboned for three significant prepared packs of chicken. After the lousy Vikings game and not eating any real meals, we ate an early supper of grilled cheese on splurged bread I bought as part of my day out (Walnut wheat and raisin-so good!) and tomato soup. I spent a small fortune on Saturday with breakfast and lunch out, a wine tasting, buying tempting treats and some specialty wine and cider, and at least one gift. I consider these all in categories of entertainment, holidays, and gifts, so not a part of groceries even though the bread and cheese curds will be eaten. My rules. I have a few fresh things that have to be used up so here's my tentative menu.
- Sunday-Grilled cheese and Tomato soup
- Monday-Chicken cheese pasta hotdish with broccoli salad, garlic toast on hamburger buns
- Tuesday- I have book club so I'll get a pop and an appetizer, and will bring 1/2 home for DH and make him a hamburger
- Wednesday-I have a blogging event and DH will have to run home to take care of the dog. I'm not sure how late it will be. There should be leftover hotdish for DH and the last of the bread. I'll mix up some tuna salad that he can have to top the bread.
- Thursday- Pork loin in crock pot, mashed potatoes or Parmesan potato wedges, and salad.
- Friday- Three cheese pasta bake with remaining salad
- Saturday-Cheddar brats, mac and cheese, sautéed green beans
I forgot to get oatmeal and we'll need milk, fresh fruit and vegetables but shouldn't need anything else. Though from my plan, I have a $65 budget, of which after DH picked up a couple things yesterday, should stay under $50 adding DH's deli stop and my snacks I brought to my sisters. I was planning to buy more meat the grocery week of November 8th, but I need to get the freezer down a bit first. This plan is of course subject to change, but is easy and adaptable. I boiled 1/2 dozen eggs and still have a few frozen soup portions and cheese and turkey for sandwiches so lunch is good. Meals are not interesting lately, but I'm not feeling particularly creative. I'm aiming for our five a day and moderately not relying on fast food or ready meals. How's the menu planning in your house?

ReplyDeleteLast night we had a nice sirloin tip roast with roasted carrots, mashed red potatoes and salad. Only one slice leftover, so my plan of beef stew for tonight has to change. We may be driving the 25 miles to Costco later today, in which case dinner will be rotisserie chicken with bread. If not, I might brown some ground beef and make either ziti, or an enchilada casserole type dish. Tuesday night DD has class, and DS has an advising dinner. DH drives, so I'll probably make either tuna casserole or panko chicken breasts. (Those three aren't fans.) No idea for the rest of the nights. Perhaps salmon on Friday. Sunday I am fixing a slow cooked pork roast with sauerkraut and apples. There you have an idea of how I go about my meal planning--it seems like there's no rhyme or reason, but it works for us...sort of.
Pretty much the same as my tuna hotdish-creamy chicken base rather than a creamy mushroom base, an extra cup of chicken brother with the milk and cream of chicken soup, no mayo like I put in my tuna, and I sue whatever cheese I have left-so some cheddar, some mozzarella etc. No recipe just the starch, binder, cheese, vegetable, topping combo I use for all my hotdishes. You can't go wrong. No leftovers to make stew-must have been quite a hit! I think I'll throw some apple sin with the pork loin-great suggestion!
