Breakfast Menus?

     Some bloggers are so organized, they make their meal plan for breakfast, lunch and dinner. Lunch is pretty much leftovers, or PB and apples, or hummus on something, perhaps a sandwich, so I can't see ever planning  lunch. As I tend to drink half my weight in coffee before I even think about eating anything, sometimes I just eat an early lunch. I'm not really intermittently fasting any longer but have significantly reduced the unhealthy food in my diet, no fast food, rarely snack, so overall, I'm getting about what my body needs, possibly a bit less as I am still, if not very slowly, losing weight. If I moved much more I'm sure I would have a bigger weight loss, so hope this new and improved eating pattern stays for once I am working in the office again. Just walking to the printer/copier and back is 328 steps-yes I counted it, so just three trips is almost 1,000 steps. A trip or two down to the lower level conference rooms is an automatic stair climber. I make the most of my steps at home-I don't worry about making an extra trip from the laundry room to the upstairs bedrooms-get those steps in wherever I can.

     Anyway, we were talking about breakfast. DH alternates between making himself an egg burrito or egg sandwich of some sort depending on if we have bagels, English muffins, or biscuits, oatmeal, or cereal and yogurt. DD2 rarely eats breakfast at what could be considered a breakfast time. She may have oatmeal or cereal when she gets going, but honestly, not likely before 11:00 most days. She and my son are the night owls, my older daughter like me, early to bed, and early to rise. DD2 is a frequent eater, but smaller portions, grabbing fruit or a yogurt later, or if she just has lunch, she has and afternoon snack of fruit or something later. She's 19-I think she knows when she is hungry; I'm just sharing. 

     Lately I have been feeling like a little something by about 9:00 or 10:00. I love when I have leftover muffins as that's the perfect amount  for a late breakfast/mid morning snack. Same thing with the packet sized instant oatmeal, or a hard boiled egg. Enough to give me energy, but I will still eat a decent lunch, keeping me from mindless snacking later. We are down to our last six eggs after the weekend, so I have not boiled any for the week, so I hope eggs are abundant. Easter week they were limited to one per customer, but I didn't see that sign last week, though I only bought one dozen anyway. So while not a menu, here's the items I plan to have available for the week.

Special K with Red Berries
Oatmeal, both instant, and Quick cook
Oatmeal  and spice muffins (I have lots of plan yogurt to use up) but realized I'll need  oatmeal so may get today
Yogurt and granola with extra nuts
Biscuits and gravy, 
leftover biscuits for egg, cheese, and bacon or ham
Breakfast burritos
Hard boiled eggs, with a slice of toast, or yogurt, or a muffin
Peanut Butter Toast
Pancakes and syrup

     We will not go hungry in the morning. I mentioned yesterday how much fruit we are going through. I feel like we are also going through a lot of bread products and grains too. If you are now staying home, have you found your breakfast needs and wants have changed? Is anyone else drinking more coffee than they were a couple months ago like me? One of my favorite breakfasts lately-yogurt fruit,nuts and little cereal or granola on top- delicious.

  1. Ours is the same with the exception of eating out less because we are normally home all the time for work. Because I don't meal plan more than a day ahead I just have a large variety of options..or if something needs using up then no choice, we eat that. Tonight is taco night. I am, however, recording what we eat for supper and have since mid March because that way I can get ideas for future meals and know when we last had it.

    1. I'm planning, but don't hold myself to it strictly. Like you, I find it nice to have ideas on hand. looking and having meal ideas before I shop has been super helpful in not wasting.

  2. Our breakfast needs haven't really changed as much. The kids go through a ton of cereal. Bill doesn't eat breakfast. I usually keep eggs and sausage or bacon on hand. I have also added bagels and cream cheese when I get to the store.

    1. A couple weeks back bagels were three for $5, but we are now down to our last couple, so will add this week. If no leftovers for lunch, my daughter and I will often eat a bagel.

  3. I love Special K Red Berries. But, I am out. No problem. A banana figures in breakfast everyday. Today, I awoke around 9 am, did not take stomach meds until later, so had to wait an hour but waited almost two hours. It was 11 am and I had a peanut butter, Miracle Whip, and banana sandwich for brunch. I always like to munch all day on fruit and stuff. Now, I have to eat that way. After I eat a plain banana with a glass of milk, I might follow it by oats. My breakfast menu is limited by choice. Then, I might have a bowl of crowder peas for breakfast if they are looking at me.

    1. I have heard of but would never eat mayo with peanut butter. Not my thing but I won't poke fun!

      Then, you do not know people from the South. I do not eat mayo with peanut butter. I eat MIRACLE WHIP with peanut butter. I hate mayo. My daughter who moved to NYC said people were horrified she ate this in sandwiches. LOL...you probably think pineapple sandwiches are weird, too. That just leaves more for me.

  4. I've been having sausage on hand, so we had sausage and biscuits a couple of days last week. I also did cinnamon raisin toast with cream cheese and strawberry or blackberry preserves or apple butter. We did scrambled eggs and toast one day too. And many times we do leftovers for breakfast. That's great that you get so many steps to your printer!

    1. It's not a convenient location and sometimes I need to undock my laptop and bring with me in case I need something private printed. I am supposed to have a code, but it glitches on me. I love strawberry jam over cream cheese on toast, or bagels, graham crackers-mmm. Like mini cheesecakes.

  5. I went shopping this morning and there is something going on with eggs here. Aldi eggs were 70 cents a dozen last week. Today they were 280 a dozen with a 2 carton limit.

    1. I'm hearing a bit about the eggs from different places. So far I haven't seen it, but then I haven't been in a store for a week. Pork is creeping up here, unexpectedly with the plant closures and reductions. The week before Easter I bought my MIL two packages for $6.This week they are on special 2 for $7, not much less than the old price was before the sale.

  6. I have never been a breakfast eater, but will do special breakfasts on the weekends for hubs. I have finally got him intermittent fasting from dinner served about 5 o'clock until lunch a noon the next day. He has lost 16 lbs in about 6 weeks. Really cut out the carbs. He has always eaten a huge bowl of cereal and that just starts his day with a big carb overload making him hungry all day. It is nice not to be constantly buying cereal.

    1. I find I need a protein boos once I do eat, which is why the cereal or Agricola is sort of a side-more for texture.

  7. We never meal plan, we just look at what's available and what needs to be eaten soon and decide an hour before we cook it.
    Our eating habits haven't changed since lockdown except Jon's not sneaking off to the supermarket and buying snacks a few times a week!
    Breakfast is always fresh fruit and natural yogurt with a desertspoon full of mixed seeds and dried fruit 5 days a week and, at the weekend, we'll have porridge, a vegetarian sausage sandwich, wholemeal toast or crumpets.
    We don't buy breakfast cereals, we used to eat them every day but realised that when we actually measured the suggested serving size it was miniscule compared to the size of portion we were eating and that we were consuming a really high amount of sugar and salt.

    1. I've moved cereal more as a crunchy topping than the main event. I need the protein from eggs, or yogurt, nuts or peanut butter.

  8. The kids are now having a fruit smoothie (with protein powder) every day for breakfast. It started because we have a bit more time for breakfast (vs getting to school) & we wanted them to get plenty of vitamin C.

    I need to cut back my calories. I did well in March, but they've crept up in April. I'm about 150 calories over my daily average in April vs March, and it means I've lost no weight this month. In reality, that's just a snack or something small, but it matters a lot when you're 40+ trying to lose weight!

    I have kept up with the exercise every day, so that's helping.

I have good days and bad with exercise-same with snacking, but am so pleased with myself that I haven't been a kitchen wanderer.It's not much, but I am seven pounds less than early February when I first tried to lose weight with the intermittent fasting, and now have more just modified to not eat outside of planned meals and snacks.

  9. I would never plan my breakfast and/or lunch menu since I am a coffee in the morning type guy and for lunch I eat whatever is left in the fridge. It might mean a tablespoon of beans, 2 strawberries, a slice of cheese and some lettuce. It is always an odd assortment of whatever.

    1. I like to think I'm more of an option planner for all my menu planning. I have some muffins in the freezer-I think I'll take them out.

  10. I don't need to plan my breakfast because is 99% of the time same thing-oatmeal!Sometimes I eat eggs or humus or something but oatmeal is my favorite!HEalthy and delicious!

    1. Can't go wrong with oatmeal! It's my pups favorite too. he gets a little bit on top of his kibble. I make his separate so no salt or sugar at all.
