While I wrote about joy yesterday, it was a bit of a downer post. So let's add some real joy today and talk a bit about cookies. Last Friday I made a batch, 3 dozen to be exact, ofoatmeal peanut butter cookies. Knowing we all eat a few and then they often then don't all get eaten, I popped half in the freezer. Well, those puppies were pulled out on Monday morning as we had already eaten through the first 18. There's only one, Minnesota nice as we are, cookie left. They were so good and DD2 will be making a batch this week. I know they were a cookie, but with both the oatmeal and the PB, I'll call them a bit healthier. Oh, let me go with that. I glance at recipes when I bake, not a true follower, but I did google a few to confirm what I thought was a good ration of butter to PB, and flour to oats. Here is what I ended up doing.
1/2 cup (stick) of soft butter
1/2 cup and a bit more PB
1/2 cup brown sugar
1/2 cup crystal sugar
1 healthy tsp vanilla
Cream together then add 1 egg
Add 1 1/2 cup four blended with
1 tsp salt and
1 tsp baking soda
then
1 1/2 cups quick cooking oatmeal (what I have)
Stir all together for dough, and chill in fridge for at least an hour. Cookies always seem to bake better with chilled dough. Plop in balls roughly and inch and 1/2 in diameter, spread just a touch, but I like mine more rustic/not flat. Bake at 350 degree over (sorry not sure the UK version) for about 11 minutes, but peek at 10 in case your oven runs hu so you don't over bake.
I did have a stick of vegan butter and could have used a flax seed egg, but DD1 said she is cutting down on sugar so didn't want any dropped off for her. If you crave a bit of chocolate and have some, through in a cup or more of chocolate chips. I made a vegan version last fall with some vegetable oil, more peanut butter, and no four-just oats and they were good, but not melt n your mouth like theses. I highly recommend if you are a PB lover.
I've been baking too and still have flour left. Here's a tip- save some of the dough (you can even form it into balls) freeze it and then you can have warm freshly baked cookies again when you take it out. I'm thinking you froze the already baked cookies. I've always cooked from scratch so the cooking is not getting to me yet but I sure would like to plant some flowers (I haven't left the house since March 12th except to drive around the neighborhood twice). I'm supposed to get carrots in my produce delivery tomorrow so I'm planning on making carrot cupcakes- I have the ingredients including cream cheese for the frosting. Yay. My cream is about to run out though and I might have to ask someone to buy me some although I do have evaporated milk. I'm not leaving the house until at least mid-May.
ReplyDeletePerhaps I might do that, but then I'd have to get the cookie sheets out again. I just rewarm quick in the microwave.
DeleteI like a crisp cookie so that doesn't work for me. I just printed out a recipe for Disneyland PB cookies that I'm going to make- they have PB chips in them too and I happen to have a bag. I woke up extra early this AM to thunder- guess it started when I was in a light sleep because usually it doesn't bother me. Going to be a longggg day today.

DeleteI didn't think your yesterday's post was a downer. You made a great point about this situation hopefully pointing out the inadequacies in our society. I hope we don't forget. Also, I perfectly understand how stressful trying to oversee schoolwork is when the internet won't cooperate. That "discussion" was probably covered on every house on my lane this week.

Baking is sort of a hobby of mine, as I have a huge sweet tooth. I am enjoying trying to find recipes to incorporate what I have on hand. A recent favorite has been a pineapple sour cream pie. Youngest requested a peanut butter sheet cake for today. We have always had lots of peanut butter on hand. (No, not the natural kind either.) My kids will eat the last of anything, but have a nasty habit of putting, say, the empty container of sour cream back in the refrigerator, so when I go to take inventory, I foolishly think we have some left.
I have a very petty pet peave. Leaving the plastic cover over sour cream, yogurt, etc. once opened It drives me bonkers. I don't generally get empty things put back. They will just leave on the counter-equally annoying.
