My Rustic Kitchen

     I'm starting this post on Saturday night as a very homemade pizza, crust and all is in the oven. I made  simple flat bread crust  but you can use whatever works for you. Canned pasta sauce, helped with sprinkles of garlic, Italian seasoning and parmesan  was placed over the par baked crust (10 minutes). On top of the sauce was some chopped fresh spinach, 4 oz of mozzarella, three tomatoes from a jar as I didn't have fresh, but sliced, they seemed to work. 1/4 onion, and 1/2 a tin of mushrooms. Here's the finished result. Very rustic, very much whatever you want to throw on. I served with home cut fries from the last three buttery yellow potato's. 



While the crust was baking, I mixed up a beer bread batter. I used this recipe.  I'm making some soup for Easter night supper and thought a good chunky bread would go nice. (Edit-ended up not making soup-it was fend for yourself) I have loads of beer lingering that if this is a success, it creates about the cheapest loaf of bread imaginable, particularly since the beer  likely won't get drank by just the two of us.  I'm sure a better beer might make a better bread, but this doesn't look too shabby.




















     



     I've never cooked so much in my life, day in and day out. I can't say I dislike it, but am getting bored with it, and the mountain of dishes that three people at home create. I know big families are probably laughing at my silliness. DD2 is learning some basics which will help her when  she is off campus and eventually on her own. A few things I'm happy I invested in, a flour sifter, good bread pans, and decent cooking sheets, have made the extra cooking easier. I can't rave enough about the air fryer. I saved the old crock from the ancient crock pot my mom had, and think it would be perfect for real baked beans. Now to find a good recipe. If you have one, please share. I don't have molasses, so it needs to be without that ingredient, but I do have maple syrup, brown sugar, ham and or bacon. Where are my New England folks?

  2. That looks awesome. I love homemade pizza and even have a stone I sometimes use. I've never cared a lot for cooking but as a SAHM I have cooked my whole adult life. I much prefer baking though. As for the beans, I made them once from scratch but actually preferred the calico beans I make in the crock pot with several cans of different beans. I sure wish I had a turkey breast- I can get so many meals out of one- but alas, none in the freezer. When they go on sale for $.99 a pound I usually buy 3 but it's been awhile. My kids all cook- I had life skills cooking class every summer when they were in HS. DS is probably the most adventuresome- hes the one who had lamb Easter. His local grocery store only let 5 people in at a time and has the sidewalk out front marked off in 6 feet increments. He told me the line was over a block long with an hour wait but it was worth it.

    1. I had a stone once but it cracked in half-it did make a nice pizza. this pizza is so cheap-maybe $4-5 tops.

  3. Your pizza looks amazing! I am liking the fact that I can actually take my time and cook for the family, however it does get tiresome when you are making all the meals. I told Bill last night it feels like all I do is feed kids, clean up kitchen, cook, clean up kitchen, cook, clean up kitchen day in and day out. LOL I told him he was in charge of dinner last night as I just needed a break. He opted to run out to get Wendy's. LOL I will admit I liked that I didn't have to cook, but my stomach did not like the grease of the fast food. LOL

    1. We've had nothing but meals at home since we got takeout nearly three weeks ago. I think I might nee to this weekend, but not fast food.

  4. That pizza looks fabulous, and I'm impressed by the bread too! I made pizza last week, but resisted temptation and didn't eat any! I still have some pounds to lose so that I feel at my most comfortable :(

    1. I ate too many servings of the bread. I did buy batteries when I shopped for my MIL to replace the ones in the scale. I'n feeling heavier after the weekend.

    It does call for molasses but I'd think you could leave it out and just up your brown sugar amount since brown sugar is just cane sugar with molasses added.
    And make sure your beans are cooked tender before adding the sauce since tomato products(here it's ketchup)keep beans from becoming any more tender once it's added.
    I also add a little baking soda to reduce the gas effect. ;-)

  7. Your pizza looks great and that beer bread, I might even try my hand at that. I too am getting tired of all the meals although we usually cook at home 95% of the time now its all the bloody time with no breaks from the dreaded dishes. I don't mind the cooking part and clean as I go but there is still always so much cleanup

    1. Even with the dishwasher, which now is run daily instead of every three days, it is still a chore.

  8. We are cooking SO MUCH as well. We plan double meals and leftovers, and it's still a lot of work, a lot of dishes, a lot of cleaning, a lot of prep, a lot of planning.

    1. I got used to cooking for two with just a bit of leftovers for lunch, I don't seem to have more than a portion-except from Easter. I'm not getting two meals out of cooking.

  9. The bread is beautiful!
    I love cooking and I am getting tired of it too. Or maybe I am just getting tired of being here all day, day in and day out. Not sure which it is but there are a million things in the house I COULD do and a million things I neglect each day. Maybe today I will mix it up and run by Krispy Kreme since their drive through is open and the HOT light is on.

  10. I genuinely like cooking, and love baking. What I *don't* like is the process of deciding what to fix based on what we have on hand, what we had last night--who enjoyed it, who didn't care for it, what we have planned for the day, what time will we all be home, etc. What I also loathe is picky eating. As my kids are now older, they now either eat or don't, and have nobody to blame but themselves if they go hungry. Since I'm the one who cooks, I get to decide what we have and when we eat. If they want something different, they can fix it themselves. (And pay for it, too.) When they were younger, though, I was ruthless about picky eating. I never, EVER forced a kid to eat anything he disliked. Eat what you want, leave what you don't, mind your manners. Desserts had nothing to do with dinner--a kid could leave a plate full of spaghetti, but still be allowed to eat the cream puffs at dessert. Once they'd been excused, during clean up I'd ask a non or light eater if they were feeling poorly, or didn't care for the food, and nudge them to fix themselves a snack if they wanted. Complaining about the meal at the table, however, was treated harshly, VERY HARSHLY. That got the offender a straight shot to bed for the night, with nothing until the next morning. Pity the kid who griped at lunch--he found himself in bed at noon with nothing but water from the bathroom until morning. As they got older, any who griped were forced to cancel all plans for the next day in order to cook dinner. By nixing the complaining, the chore of cooking became loads easier. Plus, my kids learned to take an active part in making menu suggestions, adding to the grocery list and preparing meals. The cleanup, however? Aarrrrgh. To that end, there have been days when I've announced that it was up to somebody else to get dinner on the table, because I was having a day off. While the kids are somewhat capable in the kitchen, my DH is decidedly not, so those days usually mean pizza or him taking the kids to a favorite Mexican place, and bringing back something for me.

  11. I do like to cook a lot. What bothers me is standing so long to do anything. Tommy does not do anything at all. However, he will chop carrots or do stuff that I ask him to do that he can do sitting in his recliner...lol.

  12. Your food looks great and you are right cooking from scratch does make a mess and a lot of dishes. When I cook hubs favorite meal of fried chicken with mashed potatoes it looks like a tornado went through the kitchen. I love to cook but really hate to clean up.

    1. Fried chicken-that might be a new dish for me to try and cook! I never make fried-just baked. I don't even know if the deli is doing friend chicken. Maybe my next venture out will include chicken.
