Here was the sort of plan and what we ended up eating:
Sunday-A potato, spinach, tomato dish that resembled Perkins scramblers, with chicken for DH, and a broccoli pasta side dish.
Monday: Hamburger strogonof with egg noodles, steamed carrots
Tuesday:
Wednesday: T
Thursday:
Friday: T
Saturday: maybe take out pizza, or make our own
For this week, since Easter was yesterday, I tried to make a little nicer meal to start the week. Here it was, plus my thoughts on the rest of the week.
Sunday: Easter Brunch/Dinner: Egg bake, ham asparagus, strawberry crescent rolls, fruit, juice. Later, for an easy supper after family Zoom Webex calls, fend for your self plus canned/frozen soup with homemade beer bread was available. I'm happy that there is tons of leftovers, a full meal, plus as it was a boneless three pound pre-sliced ham, it will be good for sandwiches. I froze half the ham.
Monday: Spaghetti and meatballs
Tuesday: Chicken parcels (I need to find my recipe but it's basically chicken pot pie filling in a crescent roll dough, mashed potato's) This might be it, or very close. Savory Crescent Chicken Squares
Wednesday: Leftovers
Thursday: Three bean chili, crackers
Friday: pizza-take out, take and bake, homemade, or frozen
Saturday: Chicken wings homemade sweet potato fries, loaded potato skins-Basically, Saturday night out, but at home!
We're doing pretty well using leftovers for lunches. DH is still going into work and taking his low sodium chicken sandwiches or wraps and fruit. Because of that, even when using chicken for supper, I'm trying to do a little differently. With yet another large shop, meals are a breeze to come up as I readily have ingredients, I'm just quite frankly, sick of making them. What's on your menu? Did you forego the traditional Easter brunch or dinner and do something different because of staying at home?
My husband won't eat ham, so we never have that for Easter. Instead, we had steak & salad. I did make hot cross buns, so those were available as well.
ReplyDeleteI don't eat it either but I like the flavoring in bean soup. My son in San Francisco had leg of lamb which I have never prepared.
DeleteI like it a Christmas and Easter, otherwise never make it for a meal. I like though, and DH does but doesnt eat it any more,a good deli ham sandwich.
DeleteThe exact reason I don't meal plan is what you said, you get to that day and just don't feel it. I only meal plan max 1 day out or more if it is a holiday meal. Today stirfry chicken and veggies, short on veggies so will be onions, peppers, the last bit of half of a carrot, a partial can of mini corn I froze the last time I made stirfry and sauce over rice. Instead of meal planning I record what we had for supper each day on my phone, that way I can get ideas down the road.
ReplyDeleteI've always been a meal planner- even when a newlywed back in the 70's I would plan for a month at time. I guess it's rare that I don't feel like eating what I planned to eat! I like leftovers though so always include those in the meal plan- I just plan a week or two at a time now.
DeleteI have help making meals, but no one seems to wan tot come up wit the meal itself-so tire do it! Tonight was supposed to be spaghetti an d meatballs, but now I guess the two are tired of pasta, so meatballs, gravy, long grain and wild rice and steamed vegetables, with the last of the beer bread it is.
Deletei really don't meal plan for the week becasue I cannot stick to it, but kind of plan by the day.

DeleteI never planned meals even when the family were all living here. Well I guess the extent of my "planning" was getting something out the freezer the night before so I always knew what I was cooking each night. Now I cook once and eat at least twice and freeze some or even eat three times. Easy enough I guess. I did have to look up "Perkins' scramblers" though. Sometimes you just need a thesaurus!
ReplyDeleteSorry-Perkins is a chain restaurant in the US. They are known for their breakfast foods and bakery-sort of American home cooking. It was one of my parents and in-laws go to places-still is for my MIL, when not at Stay at home-every Tuesday and Sunday. My sister who lost her husband has worked there for over 20 years.
