Who feels like cooking, even if they didn't do much of it, after vacation? I know I do not even want to go to a grocery store and will rely on our local Kwik Trip to fill in needed gaps. ON some items it is more expensive, but others it is not so I figure it breaks even to what I would spend at the regular local grocery store.
We need eggs, bread, cheese, bananas, deli meat of some kind and from that, I can maneuver meals for the week until I decide I'm in a frame of mind to venture up the road to Aldi. Here's what we ate last week:
- Sunday: Lunch take out Panera with DD2 at a park, supper was using up bits from the refrigerator.
- Monday: DH slow cooked country style ribs for lunch with coleslaw and potato salad, for supper was a local Take and Bake Pizza
- Tuesday; We had burgers on ciabatta rolls, plus more coleslaw and potato salad (it will be a theme), supper was the leftover pizza
- Wednesday: Well, we left Sunday with another pipe leak. DH arranged a plumber for Wednesday morning. He drove back home, met the plumber and was back by 1:00. I skipped anything for breakfast and not knowing when he would be back, ate half the pilak paneer and a naan. He later has the leftover pork ribs on buns. Supper was grilled chicken, French bread, and you guessed it, more potato salad and coleslaw.
- Thursday: Lunch was chicken salad wraps and chips, and supper was chicken fajitas with cheese and onions.
- Friday: We ate lunch out, and supper was snacking on hummus, veggies, cheese etc.
- Saturday: We grabbed a pizza at Aldi when we were in town and made that for a late lunch, supper was eating up the last of the french bread, cheese, hummus along with our wine.
Now back home later today and Here's what I have to make:
- Last two leftover chicken (they are big so maybe one for the soup below), with asian salad (brought and not eaten)
- Sausage meatballs, rice and steamed veg
- Porketta, made into tacos with roasted and mixed veg, spanish rice, black beans
- Baked spaghetti pizza hotdish (the infamous last of the noodles-frozen from a couple weeks ago)
- Cheese ravioli
- Meatballs and gravy, mashed potatoes
- Homemade chicken noodle soup and biscuits
- Turkey meatloaf, baked potatoes
We are getting a huge grocery order delivered in a little while, so I'm going to make hamburgers with the fresh ground beef that is coming. I can't wait. LOL

DeleteToday is meatloaf with mashed potatoes, accompanied by homemade applesauce which I am *ABSOLUTELY* going to can today. Last night we celebrated DH's birthday with grilled steaks, and pumpkin pie. Heavy on the read meat, but, honestly, sirloin steaks and ground beef are quite cheap around here this time of year.
ReplyDeleteLast week saw us in Costco, which means I bought a rotisserie chicken, which means I have leftovers. Tomorrow will see slow cooker chicken tortilla soup, and bean dip. I also have leftover steak from last night. I was planning on making steak quesadillas for DH to enjoy while he watched football, but it appears he and youngest are going out for a post-birthday celebratory breakfast. (I've given up in that arena.) I may make them anyway--pretty sure if I turn on our gas fireplace, and place a plate in the den, the kids will come from various corners of the house to enjoy them.
You can't go wrong with quesadillas! MeatloF just seems so October, and yes to apple sauce.

ReplyDeleteI am cleaning the laundry room so I can actually get into the freezer to menu plan for the week. So much stuff wound up in here when I emptied the rooms to make a place for Mom's things. Now I need to see what I have available without going to the store this week. (Unless the upcoming food ads are exceptional and then all bets are off)
Good luck. Having left the cabin immaculate, my house feels chaotic, messy, and cluttered. Well, I have no where to go for a while so will get things tidied.

ReplyDeleteI linked it a couple Wednesdays ago, basically like a lassgna with pepperoni. I've never made it-was an attempt to use up spaghetti.
DeleteI used some Lipton dried soup mix to make hamburgers and I wanted more. Thankfully, I had not cooked more or I would have eaten them. I am going to try to make a baked spaghetti. It looks and sounds good.
ReplyDeleteThe soup mix in burgers is delicious, but DH can't have that much sodium. The chopped onions and garlic are the same thinking without the salt. I took the baked spaghetti pizza hotdish out to thaw and it will be tonight's dinner.
DeleteI just got back from vacation too- well, let's say a long Thursday/Friday weekend. My sis and I drove to Atlanta suburbs where my daughter and family just moved. I got to see the 2 grandkids and their new home. FUN! We pretty much hung around the house Covid-wise and had take out delivered. Honestly, I didn't think I ate that much but the scale is up today so it's diet time. Your week sounds nice- are you ready to work or is today still a holiday for you? No mail but I'll be working Indigenous People Day or not.
ReplyDeleteFortunately, no movement higher on my scale, but we did a lot of walking, despite too may pizzas, pub sandwiches, and delicious grilled foods and potato salads. I'm glad you got to visit your family and with your sister for a get away. I believe I recall you have pretty much been in lock down since the beginning so I hope you felt comfortable the whole long weekend.
