Meals for the Week-Maybe

   

Pizza, the home made variety might be made this week.

      It 's going to be an easy week of meals. With balancing work and play, the kid coming and going, and later time with my older daughter, I'm not doing a Julia Childs act. I've got odds and ends in the freezer to use up, planning some take out, and a fish fry on Friday to take our daughter. I will make a massive batch of veggies and chick pea masala so the kid is happy, and chicken, veggies and gravy for her dad. Other meals may include:

  • Cheese Ravioli in marinara
  • Meatballs and gravy over rice
  • Goulash
  • Hoagie sandwiches
  • Potato Cheese soup 
  • Chicken Tetrazzini
  • Homemade pizza

     Maybe all, maybe none. I'm baking today, French bread and cinnamon rolls. I guess because of this, soup is a go. Both DH and DD2 like pasta so one if those will be a for you sure too. Yesterday my daughter and I had a wander  in a river town  outside of the Twin Cities. Forgetting it was the Minnesota Education weekend, everyone flocked to any touristy area and Stillwater was no exception. The sidewalks were packed, as was everywhere we popped in. I'll share a few snaps  later, but our lunch in what we thought was going to be a typical bar and grill, was a bit more elevated. We shared a pasta dish, and had two small plates, a ricotta and fig bruschetta, and arancini. Now, I want to find a good arancini recipe and a good truffle fondue as these were served on top of,  because these were magical!  I've more purging to do today, so best get my day started.

  1. I’ve never even heard of arancini but it looks yummy. I have the bare bones of a plan. Take and bake pizza today, chicken twice this week, pork chops, tacos and something else. In a minute I’m baking a pumpkin cake for my sons birthday, then off to a work meeting (insert triple eye roll here ON A SUNDAY!!!??!?). I’ll grab a few things at Walmart since I’ll be right there. Might go visit my dad also, depends what time DD’s boyfriend leaves for school. I have a headache just thinking about today. There’s no such thing as a day off. JoAnn

  2. That all sounds so good, Sam. Especially the goulash. I will probably be doing some of the same this week, using up bits f this and that. I know I am going to be making some kind of chicken dish today, which will hopefully last tomorrow too.

    1. I keep putting it in the menu list but it's been ages since I've made goulash. I made the curry, but DH was in a mood for a pizza for football so he got Aldi version. My kid will have chickpea masala for days.

  3. I never heard of anrancini, but it looks good. Chicken will figure heavily this week, as usual. This sounds like a busy week for you.

  4. Friday we had baked salmon and roasted potatoes. Last night I made a meat loaf with mashed potatoes and gravy, and a salad on the side. Today we are under extreme wind warning which means we could lose power. While we have a standby generator, the oven is not connected to it, as it draws too much power. So, this morning I put a pork roast with sauerkraut, onion and apples in the slow cooker. I also baked an apple pie, and some pepperoni and cheddar crescents this morning. Figuring the morning had gotten away from me at that point, I also made a plate of deviled eggs. Depending on how I feel later in the day, I might make mashed potatoes to serve with the pork once it is ready. (We have a dual fuel range so I can still use the cooktop if we lose power.) Beyond that, I have no set plans for meals-it will depend on how the weather and schedules shape up. Last week saw us in Costco, so I have the remains of a rotisserie chicken which needs to be turned into a chicken pot pie. For the other days I am thinking of risotto, baked, panko chicken breasts, (I have a bag in the freezer which needs to be used)served either with baked beans, or as sandwiches, and either beef burritos or an enchilada casserole. I am also pretty sure a tuna casserole is going to appear at some point during the week. I am *still* trying to work my way through my freezer. While I feel like this build is taking forever, I know that I am going to be amazed at how quickly it came up when it's time to actually move.

  5. I think I'll make risotto for leftovers to try the arancini. Everything you're preparing sounds delicious. Fingers crossed your power stays.
