Menu as the Calendar Changes Again

     I knew the week would be simple other than Thanksgiving and was it ever. We had leftovers a few nights and cooked very little. 
Here's what we ate:

  • Sunday- Assorted leftovers
  • Monday- Sloppy Joes from freezer and boxed Mac and cheese
  • Tuesday- Chicken Lo  Mean/ Stir fry 
  • Wednesday-Cheese ravioli
  • Thursday-Thanksgiving Dinner, nibbles
  • Friday- leftovers
  • Saturday- Spaghetti with plain sauce or Bolognese
     Today, I'm making a big veggie masala to send back with my daughter. She did not bring her containers back and my stock is getting lean. I'm going to do a big breakfast late morning as well before she leaves, pancakes, bacon, and eggs. We'll see her the next two weeks, her concert on campus and then her traveling one the following week in Minneapolis. I'll likely bring her more food next weekend. For us, here's my possibilities.
  • Cottage pie
  • Stuffing and turkey hotdish
  • Pizza burgers
  • Boneless Chicken wings, fruit 
  • Bean, rice and cheese burritos
  • Fried rice and egg rolls/dumplings
  • Tuna Tetrazzini
     This is more meals than we need as we'll be out of town part of the week. I'm not planning on any grocery shopping until next week Monday so intentionally want to plan leftovers to pull out of the freezer Sunday night. I haven't stayed in a hotel since March 2020. I'm curious what, if anything, they'll do for the full breakfast offered. The website for hotel didn't state any modifications. Likely no recipe to share on Wednesday, but since that starts December, you all have your favorites anyway. Have a good Sunday.

  1. My husband stayed in a hotel last weekend for the first time since 2019. He took his own sheet, blanket and pillow. He said the breakfast was minimal but every place is different.

    1. I'm thinking it will be grab and go. That actually is better for me since I can't eat for several hours after baking. I can do grab and go and that can be snacks on the way home. We'll likely take the kid for an early lunch before we head out. She'll have one more concert to perform that afternoon.

    1. A great use of leftover pasta sauce. Basically what we call open faced sandwich made on hamburger buns- layer sauce, any toppings you have in hand, and cheese, and bake. They were a school favorite in my childhood plus family fave on both DH and my side coincidentally. I am using the leftover sauce from last night, olive tapenade, some onion, turkey pepperoni, and mozzarella. I don't have hamburger buns do will make in leftover crusty Italian bread. Use it up meal, but delicious.

  4. I wondered what pizza burgers were, too. I just put the sauce with meat on bread and put cheese on top and eat it, but never named it. I took this to school and heated it in the teacher's lounge. I called it spaghetti sandwich then. I put lots of sauce on a piece of toast, topped it with cheese and another slice of toast. Putting it in a Tupperware container with a lid made it an easily lunch.

    1. Yes, quite easy. I think because it is made on hamburger buns we all just call it pizza burgers in Minnesota.
