A Chicken in Your Pot Menu

   


   Yesterday was such a nice day. The grandpup stayed over as daughter had to work all day, and he slept until 5:00, a full eight hours. We had a leisurely morning before I walked him, then came back for the old pup. Pup just can't walk the distance but since DH had to get to work, this was how I handled both dogs needs. I ran errands, library, farmer's market, craft and bake sale my sister's auxiliary was hosting. I also got my Covid new booster. I figured since I didn't have an extra dog alone for the next two days, this was a good day and Walgreens had openings. So far so good. I did the grocery shopping for the week too. 

I didn't think I  cooked a lot this past week, but what I did made plenty. So much that lunches were easy and last night was a clean out the refrigerator night. 

  • Sunday: Homemade Mac and cheese  
  • Monday: Meatballs and gravy over mashed potatoes
  • Tuesday:  Pork loin, veg and tots 
  • Wednesday: Tuna hotdish 
  • Thursday: Chicken Fajitas
  • Friday: Frozen pizza and boneless wings 
  • Saturday: Leftover night

     It's a Vikings game at noon today. I'm making muffins this morning along with eggs, but DH will get football fare for the game too. I bought a Chuckit ball thrower to play with the dog so will send him home good and tired. We're going out for our anniversary tonight. We'll have a couple days without helping with grandpup as he's got shots tomorrow. She's bringing him for Doggie daycare Tuesday morning.  Other meals for the week:

  • Roasted Chicken and Herb potatoes
  • Hearty chicken noodle soup 
  • Brats and tots
  • Hamburger with tomato
  • Spaghetti and marinara
  • Stroganoff over egg noodles
  • Dirty rice, beans and sausage
  • Pulled chicken sandwiches and roasted potatoes
     I bought a whole chicken to roast want to yield three meals, including the broth for soup. I've  been craving old fashion soup with lots of veggies and wide noodles. I'm not sure what dinner out will. Hopefully somewhere we don't normally go. How about your kitchen? What's the plan?

    I took a chicken out of the freezer this morning to cook tomorrow. We'll have roasted chicken with mashed potatoes and corn and then all the rest will be made into white chicken chili.

Roast beef in my slow cooker, if it still works since it's been a while since I used it but they say it's cheaper than running the oven to cook at the moment and an air fryer is off the cards right now too. What a lot you pack into your week, Sam. You're truly a gem to your family (and dogs!).

  3. I love to roast a whole chicken because it yields so many meals for one. Besides, I think chicken tastes best when roasted. As soon as I am done with the food in the fridge, I will roast a chicken too. I have a hankering for a chicken pot pie these days.

  4. Husband bought a huge pack of ground meat for 2.49/lb that needs browned up and frozen and I will pick up another one to do the same and load up the freezer. I have a pretty full Walmart cart that I’m continually adding to and might pull the trigger and pick it up tomorrow. I started getting some things I’ll need for Thanksgiving and beyond. Our celebrations are small but we still have our necessities nonetheless. Definitely tacos this week, maybe chicken tortilla soup bc I can’t wait any longer for Chick-fil-A to bring theirs back! I could go for some lazy stuffed cabbage casserole. I could also go for a nice chicken or steak salad. Last week hubby made spaghetti but used egg noodles?!?!!! Whatever, it was food and I didn’t have to make it. Also had tuna hot dish and pork with sauerkraut. I took pb&j for lunch with fruit and cheese and crackers. Today he’s making burgers on the grill while I’m at work. DD ended up coming home bc her roommate is sick and didn’t come back from break, so she was kinda lonely. After dinner we will run her back and then stop in Pittsburgh for a stroll around town on the way home. Happy Anniversary! Enjoy your dinner tonight! JoAnn

  5. Today, I will put three packages of chicken in the oven with potatoes and onion--breasts, thighs, and legs. I have about two pounds of green beans to cook. Plus, I will bake sweet potatoes. There are plenty of salad greens and tomatoes. All this should last for days! And, there will be chicken for the freezer. We don't demand much variety.

  6. Friday, I didn't want to cook, so I put a lurking bag of frozen pierogies in a casserole dish with Paul Newman's Vodka Sauce, and grated mozzarella, and baked it at 350 degrees for 30 minutes. (It wasn't bad at all, and there's enough left over for a lunch today.) Last night we had a the most delicious oven roasted beef tenderloin, a splurge, and $9.99/lb, but cheaper than it usually is. I have plenty of leftovers for cottage pie today, which is good, because I have lots of other things to do, and cooking isn't one of them. Our local grocery store had a huge meat sale over the weekend, (which is where I got the tenderloin) so our freezer is full of sirloin tip roasts ($3.59/lb) and boneless pork loin ($1.69/lb.) I also got some boneless, skinless chicken breasts and $2.49/lb. I like to go under $2/lb for those, but I don't think I'll see that again around here anytime soon. In any case, tomorrow is DH's birthday, and all I've planned is the cake to bake. I may make tuna casserole with cranberry sauce (more expensive than the meat these days) because he really likes that, and it's easy. We have to head to the title company to transfer the title of our las house tomorrow, (WA doesn't observe Columbs Day) and, while it shouldn't take long, I've dealt with these folks before, and they wear me out, so I know I won't want to cook, so tuna casserole fits the bill. Beyond that, going forward, I think we'll have baked salmon one night, some sort of pasta with ground beef (perhaps lasagna, as I came across some dirt cheap ricotta cheese, so I grabbed a few cartons and popped it in the freezer) and maybe I'll get a kid to grill some steaks. Funny thing: Friday I spent the lion's share of the day making apple butter from the apples I gleaned off the trees on our farm before the new tenant moved in. I was so exhausted afterwards, that my desire to be in the kitchen one second longer was non-existent, hence the pierogis. What's funny is that I can A LOT, (more so when we were on our farm) and I find that it's a common phenomenon among my friends who also can, to say "Screw it" and dish out peanut butter and jelly sandwiches for dinner after they've spent the day preserving food and setting it aside for posterity! (I've also been known to have DH take us out for Mexican food after a day of canning when the kids were younger!) Ah, the irony!

    1. Does anywhere still recognize Columbus Day? You were quite creative with the perogies. I'd have never thought of that. I get very tired of cooking. I desperately need a thorough clean out of every part of my kitchen.

    3. Creative? Ahahahaha! You give me too much credit. The bag fell out when I opened the garage freezer to "sightsee" as we call it, and I saw the recipe on the back of the package, so in the house it came.

  7. I’ve been slowly cleaning out my freezers- I have an extra refrigerator in the garage with a top freezer; Not much left but strawberries and broth. I roast a chicken every couple of weeks and get a lot of mileage from it. Are you still eating your leftovers for lunch? How often does your husband come home for lunch? It’s a beautiful day here- 81 and sunny. I’m headed out soon for California- lots planned and a visit with new GS. I made some cookies yesterday for Halloween treats for my clients who can eat sugar- seems like so many people are diabetic or close to it these days. Nan

  8. This weekend is Canadian Thanksgiving so I have turkey pieces in the oven, along with all the traditional sides. With just DH and I, it is easier to not cook a whole turkey. I did buy extra though so I could make turkey soup this week!

    1. Happy Thanksgiving! Two years ago all the small turkeys were bought as tables were small due to Covid. Your dinner sounds practical and delicious. Is today a holiday too?

  9. I am trying to add new meals to our menu, so two meals this week will be new to us. I have fallen into a rut and with prices so high, I need to diversify. It’s a juggling act, but your rice crust quiche recipe will get a run to make use of a glut of spinach I have. Megan

  11. Happy Anniversary, Sam! I haven't thought further than breakfast, Mushrooms Benedict in Spoons after my swim. Like Between Me and You I'll be dusting off our slow cooker this week to save fuel costs! xxx

    2. I'm very lazy with my slow cooker stuff, it tends to be curries or dhals. I really ought to experiment more! Yes, we'll be swimming all through the winter - we took out membership (50p a day) which means unlimited use of the pools, gyms, saunas and steam rooms in five of the public health centres in our borough, should save on the heating bills! x
