My Wednesday Pantry - Soup Poll

   


  I got back by 3:30 to dogs that were happy to see me yesterday. While it was cold, it was sunny and that makes all the difference. I'm not looking forward to the morning walk in the slow morning riding sun, but both I and dog need it. I froze a good meals worth of chicken noodle soup but the weather calls for more. I'm in a soup rut. I have my stand by's, chicken noodle, tortellini, pasta fagiole, potato cheese, and corn chowder and wild rice but looking for ideas or directions. 

     If my stand by's, what's your pick? What would you suggest not on my list. Extra points for linking a recipe. I don't make wild rice, corn chowder or potato often so might be hedging that way.  What have you had recently?

  1. I only make it around the holidays, but my favorite is Italian Wedding soup, with the mini meatballs. I make mine with ground turkey. Lots of recipes for it online.

    1. I don't know if I've ever had it. It sounds tasty. I'll look for the recipes. I'd probably cheat and buy frozen meatballs.

  2. My favorite easy-peasy soup is Taco Soup. Brown two pounds of hamburger (or turkey) with a chopped onion; drain fat. Add in two cans of stewed tomatoes, one can of Rotel, two cans of pinto beans (rinsed and drained), one can of corn (drained), two cans of water, a packet of taco seasoning, a packet of Hidden Valley Ranch, and 2 t. of chili powder. Simmer for 30 minutes.

    I also have an easy recipe for sausage soup if you're interested.

  3. Forgot to add: serve with shredded cheese and Tostidos! I've also served it over elbow noodles to make it even more filling.

  4. I love soup season. My favorite of yours is potato cheese. I am having split pea tonight because I reduced my ham storage by one over the weekend. Here is a favorite.

    1. The potato cheese was a favorite of my older kids when they were young. My youngest wasn't as keen so I stopped making. Amy, do you have a current blog?

    It is so good. Even my picky kids and husband love it. In fact Bill requested it the other day as it was cold and we were getting snow showers. This is the same man, who usually does not want soup for dinner.

    1. Is the zuppa like Olive Garden's?I love that. I've tried making butternut squash soup, but tasted too sweet. Ideas?

    2. It is like the Olive Garden recipe! For butternut squash, did it call for broth & quite a bit of seasoning? I'd start there. We also blend a bit of yogurt into ours, before serving, and top with chopped green onions.

  7. My soup is supposed to be taco casserole. Brown ground pork. Add--can of rinsed and drained black beans, can of diced tomatoes, can of whole kernel corn, 8 ounces of Kraft shredded 5 cheese Italian cheese, 1/2 cup dry brown rice, and two tbsp of taco seasoning.

    I had Italian shredded cheese the first time I made this, so used it and loved it. Sometimes, I add two cans of beans and tomatoes. One can of corn is enough. I cannot handle too much taco seasonings, so only 2 Tbsp of that. Sometimes, if I don't have diced tomatoes in a can, I add any kind of tomato in a can. Tomato sauce will work. If you don't mind the carbs, add more rice.

    Feel free to change the cheese or add more rice. This is a complete meal for us. We need nothing more and everything comes from the freezer or pantry.

  8. Home from San Fran- brought back a cold and I haven’t had one for over 3 years. I’ll test for Covid of course- I’ve been a Covid virgin all this time too. I just read an email from Brown Eyed Baker- she had recipes for several stews and soups that looked amazing. I thought I might try her butternut squash recipe. She has a blog you can read too. I am thawing a container of chicken rice right now. Good news is I lost weight while on vacation and we ate well- prices are really high there except for in and out hamburgers. For 4 people and not much alcohol to drink, we had 2 $250+ dinners- one at the Wharf and the other at Sonoma. This will definitely be my splurge for some time! Nan

  10. I know I'll get thrown out of Blogland for daring to say this but I'm not all that bothered by soup, I'd rather have a bowl of dhal and a roti! xxx

    1. Every one gets their favorites and preferences. I love a good dahl just as much as soup. However, I will say, my experience with British soup, both in person and watching videos, us that the Brits puree the hell out of soup and it's a bowl of baby food texture. I think if you had a steaming bowl of day pasta fagiole, where you can see and taste each vegetables and bean you'd be more a fan.

  11. My favorite of all time soup is Sizzling Rice Soup. I've only found it at 2 Chinese restaurants ever(one outside of Philly and the other in Newport News VA-and that one is long gone). My mother and I deciphered the one from the VA restaurant but all my cookbooks are packed up in storage at the moment so I can't share. It's a tomato based soup(using sweet and sour sauce and chicken stock)with shrimp and water chestnuts(and any other veggie you want to add)and leftover rice formed into patties and baked then fried to crisp up that are placed in the soup when served. So good!

  13. You won't find a lot of people 'blitzing' their soup in Scotland (though I tend to do that when making carrot and coriander soup). My Sicilian Mother-in-Law used to make the most amazing pasta-in-brodo, chicken-flavoured, cured all ills. My go-to Scottish soup when it's really cold outside is leek and potato and my sister makes the most amazing Cullen Skink (Google's your friend) which sticks to your ribs all the way down! Love Minestrone too.

  14. Pea soup and homemade tomato - using cans of tomato juice, ends of veggies I have in freezer and siracha - blitzed! Serve with tiny grill cheese croutons or cheese tuiles.

  15. I'll be making a batch of chicken jalapeno corn chowder tonight! Onions, carrots, celery, bell pepper, minced and de-seeded jalapenos (2 is good), plus chicken, cumin and coriander, potatoes, corn and then right before serving, a can of coconut milk. You can skip the corn to make this vegan!

    I also make beef vegetable out of my leftover roast, and I just made a potato, bacon and leek soup - so yummy!

  17. Two weeks ago I made a copycat Chick-fil-A chicken tortilla soup from eatingonadime.com and this week I made a creamy potato soup from sugarspunrun.com. Both were excellent. I have a ham and bean recipe from thecozycook.com saved to try, as well as a vegetable soup from inspiredtaste.net. Another family favorite is a creamy mushroom soup from cafedelites.com. JoAnn

  18. My favorites are potato corn chowder (from one hundred dollars a month), cauliflower cheese soup from bakeatmidnite. I also will make broccoli cheese using the same recipe, sausage and gnocchi soup, tomato basil soup, and baked potato soup where you bake the potatoes before making the soup. Can you tell we love soup?

  21. My favorite soup is just a traditional vegetable beef soup made with bits and pieces of leftover veggies and beef in a tomato beef broth. The vegetables vary each time it is made. I keep a container in the freezer and bites of leftover veggies go into it until it is full enough to make a pot of soup. Since I have been collecting and freezing leftovers all summer, the pot I just made is huge. A bowl of soup and some cornbread is all we will have for dinner.
