It's Beginning to Look a lot like...Lots of Leftovers

     


     I feel like all I did was cook mass quantities of food, then eat leftovers for the last week. I didn't even host. That's the thing with holiday weeks, the food is so plentiful, but yet, you worry there won't be enough. I did well managing food waste though, using for lunches and dinners when not with others. Here we're out meals this past week.

  • Sunday: Meal at 60th birthday party
  • Monday: Toasty Dogs and potato wedges
  • Tuesday: Orange chicken and rice 
  • Wednesday: Spaghetti
  • Thursday: Thanksgiving feast. No one ate supper.
  • Friday: I had my leftovers from my birthday lunch out. DH and DD1 had leftovers. 
  • Saturday : Birthday gathering at SILs. I brought Cheese potatoes and green bean casserole. 

     DH and I may go grocery and maybe a little Christmas shopping after church. We seemed to spend a small fortune on odds and ends this past week in the store, but I'm stretched now to cook healthy meals. We spent $9.95 on less than four pounds of apples; there might have been 7 in the bag! Clementines were $7.99 for just a two pound bag. But, we need our fruit. Here's what I think might be options this week.

  • Chicken tortilla soup and crusty bread 
  • Breaded chicken cutlets and mixed vegetables with roasted potatoes 
  • Crockpot Pasta of some sort
  •  Pork loin or chops, mashed potatoes and apples
  • Stir fry, rice, and egg rolls
  • Sloppy joes and tots
  •  Goulash with green beans
     This was based on a quick look at ads. It could change a lot once we actually shop. I plan to make some muffins or quick bread today for easy breakfasts or my lunches
 Of course I'll make good use of leftovers. What's on your menu? 

     I dread the work week again, but more so for DH being back at work. He is mentally and physically exhausted from that place. He's got two weeks of vacation the end of the month, so is already counting down.

  1. Wow, your fruit prices are a LOT more expensive than ours. I bought a bag of 8 apples for 1.99 and a huge bad of clementines were 2.99.

  2. I think no matter how on top of it you are you always cook too much because heaven forbid there not be enough, right? Still, with freezers it's not such a bad thing either is it! And I feel for your husband - being exhausted before he's even started. Roll on retirement!

  3. I feel like Thanksgiving was kind of a bust around here. Lunch at my dads was nice then I ended making our dinner Thursday evening but my son left with other plans, DD wasn’t feeling well and I was still full so I only picked. We also did a pot luck all weekend at work, so I didn’t need a lunch and didn’t eat any leftovers. Except pie. I had room for that ;) I’ll make turkey soup this morning and send some with DD when I drop her back off early this afternoon. It has become routine for me to do my grocery shopping after I take her home but we probably only need a handful of things to get through the week. The plan is to use up what we have here and then do a large shop once she is home for winter break. She also brought home any open snacks and perishables from her fridge in advance of her returning home again soon so we have those to use up as well. JoAnn

  4. We ended up getting In & Out last night, as we were running late. It made me feel bad, because we had plenty of dinner options. But, it's pretty rare for us, and we'd been eating leftovers all week, so I guess we'll all survive. The good news is that In & Out is cheap! Less than $40 for dinner for all of us, and that's with Sam getting a milkshake.

    1. With teens, not too bad for take out. I'll likely pick something up at least once too this week but saving for when I'm really not feeling cooking a thing.

  6. I hear you on the price of fruit and produce in general. It is crazy. I'm trying to just buy what's on sale... So sorry your hubby is dreading work. I have tomorrow off but then back to work Tuesday for a busy week. It is what it is. Not sure yet what will be on our menu. Bill is working 2nds so it will be the kids and I. Today we are hosting family for Rebecca's 16th birthday so we will have sandwiches, chips, berries (talk about expensive but they were the bday girls request), macaroni salad and a veggie tray. I am sure we will be eating on the veggie tray throughout the week.

  7. We had fried rice this week as well, I served it with Aldi spring rolls from the freezer section and some bbq pork buns that I found lurking at the bottom of the freezer and have no idea how long that have been there. I do need to get better at marking things before I put them in rather that relying on a guesstimate depending on depth. Megan

    1. I think I've found my lurkers. We ended up just getting a few things at Kwik trip so my menu is totally going to be different.

  10. Hello Sam. I hope your week ahead isn't as bad as you're anticipating. We're eating breakfast in Spoons after swimming and will pick up a Lidl veg Waste Not box on the way home - we'll decide what to eat when we've examined the contents! xxx
