Meals to Keep Us at Home

     While we might run low on fresh fruit and vegetable, we have both in the freezer and pantry. We have milk, eggs, butter and yogurt as well. I've had poor luck getting milk to stay fresh tasting to the date on the jug, but if we wanted to avoid going out at all, we could do without. Even though I had coffee in the house, still left from the stock up after Christmas and DD1 brought me back coffee from New Zealand, our thing when she travels. I grabbed some French vanilla beans. While so much better with a spot of dairy, the vanilla is a nice change even without it. I have things that need eating up and or frozen so here's sort of what I'm thinking. Lunch's will be leftovers, sandwiches, canned or frozen soup. or as DD2 likes them, rice side dishes. I bought some to stretch variety. 

  • Pork chops, mashed potatoes and vegetables (It's larger pack, so I'll freeze half, plus there will be leftovers)
  • Chicken and rice hotdish with cheese and green beans
  • Vegetable curry with rice (DH won't eat, but it will be great for me and DD2 with lot's of lunch leftovers) and naan
  • Crockpot pasta with zucchini
  • Spaghetti and meatballs with salad
  • Tacos or taco bowls with taco rice
  • Homemade flat bread pizza with onions, olives and miscellaneous toppings
     We'll likely get a take out, though I have conflicting feelings about leaving home to pick up food and wanting to support the restaurants trying so hard to keep cash flowing. DD2 made a great effort spending a bunch of her Dining Dollars and bought over priced items in the on campus C store. One thing was a box of wild berry muffins. I made the up this morning and will go enjoy one with a fresh cup of coffee. The rain has stopped, though we had a bit of snow-all melted but it feels cold. I need a good long walk, and so does pup. He'll be filthy when we get back so a bath will be required. Enjoy your day and leave a comment on what you are up to.

  1. I'm planning to get outside for a walk & possibly yard work (if the no rain holds) & make homemade pasta with Sam. Never tried it before!

    1. My walk was cold, a bit drizzly, but felt good to get outside. We just had BLT's for lunch. I hate cooking bacon-such a mess, but tasty.

  2. Good morning! I’m sipping my morning coffee on the porch. I got it partially cleaned off the weekend but it’s the last of the really nice days here. Gonna cook burgers on the grill later with pasta salad, Cole slaw, and canned corn. Might do a little more yard work before I get a shower. I’ve been gathering things to make a Fairy Garden for years and I think today I might actually start it. I also came across a pack of Zinnia seeds. Not sure if they have any life in them but I will try starting them and see what happens. Enjoy your day! JoAnn

    1. I might make a chicken pasta salad gor other lunch options. I'm waiting on seeds as we're not out of frost weather yet.

  3. Your menu sounds yummy! I am debating whether to get take out on Thursday as it is Ben's birthday but not sure; will have to talk it over with Bill to see what he thinks. Today I just got finished watching mass that our parish live-streamed on Facebook. I need to do some cleaning up of my desk area and the living room. (It didn't get cleaned up last night before the kids went to bed). I also might take a walk today...it is super windy here (we are under a wind advisory) though so I don't know if the kids will want to go out or not. I need to fill up our bird feeder and get Rebecca to clean her room like I would do it or I WILL clean it this week and she won't be happy. LOL Hope you have a great Sunday!

  4. Well I plan to meander around the yard for awhile with a dog, then the other one until it starts raining again. After lunch I'm gonna hold up in my sewing room and work on turning out face masks to donate to the hospital. Later I'll do some ledger work/blog work as it's almost the end of March.

    1. I've stopped tracking spending. It's just not a priority now and I know I'm not being a spendthrift. It was damp and cold out but still good to get outside.

  5. Even though I would like to support our local takeouts I don't see it as an essential service. Also we are limiting our exposure to "can't live without food and medicine only" so for now we are passing. I am unsure of our own pay checks so any penny we can save is one that makes our savings to further. Today a couple loads of laundry and a long walk with Buddy. I also am supposed to trim hubby's hair....wish me luck

  6. Outside of packing a lunch for school for those who ask, the kids and DH have been on their own for lunches for a long time. I have no idea what to cook for dinner tonight. I forgot to take something out to defrost for Sunday dinner, so I may have to resort to slow cooking a frozen pork loin.
    I had wanted to get out in the flower beds today, but the weather just hasn't cooperated. Yesterday it was very windy, today it's raining. Rain or no, the dog will still need a walk. Also, at some point last night, DD decided to wash all her bedding, including her down comforter, which is now in the dryer, pushing the rest of the laundry further back. I had just pulled the sheets off our bed to wash, dragging them across my floor to the laundry room when I realized what she had done. (I woudn't have taken our bedding off if I knew she had the machines in use.) I think I may have groaned out loud! I am guessing a cat must have gotten sick on her bed.

    1. Too bad the weather is rainy or your bedding could be out on a line. Yes, fend for yoyrself leftovers or sandwiches is the plan.

  7. I'm curious, when you say you might run low on fruit and veg - is it because it's not available in the stores or because ou don't want to go out? They are definitely strange times aren't they!

    1. Not wanting to go out in public to follow the stay at home exec order. So far, haven't had issues getting produce at all and from what it sounds like, problems have been isolated.

  8. Look for Nido in Hispanic section for dried milk that is full fat, i believe. You can reeze your gallons of milk even in freezer bags or jars, any jars. Dollar Tree has/had shelf stable milk for $1. But, maybe it is not available.

    1. When I get pout again, I'll look for shelf stable I remember it vaguely that if cold, it tastes pretty much the same.

  9. So far we have not done the takeout thing mostly becasue we are dieting. We have had no problems getting fresh foods. I am a little afraid to go out as people don't seem to stay far enough away from us.

    1. That's art of my worry-the real distance. If we need to bring things to my mother-in-law, I certainly don't want to bring anything to her.

  10. It's 84 here in NE Florida and sunny outside. My poor pool needs chlorine so will just have to wait. This is the third day I've had corned beef leftovers so I'm ready for a change. Your meals sound great. I might just pop some popcorn ion the stove and have it for dinner! This is day 17 of not leaving the house except for a short drive. I try to keep a routine and dress everyday- I even put on make up yesterday LOL; the first since I quarantined myself. Have a good Sunday afternoon.

    1. Popcorn for dinner was my favorite when no kids and my husband worked overnights. We had some frozen bean soup with BLT's today and it was a nice treat.
